KEY LIME PIE - COPYCAT RECIPE FROM PAPPADEAUX RESTAURANT
I love the Key Lime Pie from Pappadeaux seafood restauraunt and found the recipe at http://www.copykat.com/. I used a 10 inch springform pan and it worked beautifully.

Steps:
- In a bowl, combine crumbs, brown sugar and melted butter. Press mixture 1/4 - 1/2 inch thick on bottom and sides of 10x2 inch pan. In another bowl,mix condensed milk, egg yolks and lime juice. on low speed of mixer until well blender. It should be creamy color and slightly thickened - about 2 minutes.
- Pour into prepared pan and bake in 350 degree over 18-24 minutes (pressing surface lightly with finger should leave a mark) Remove from oven and let cool. Refrigerate 6-8 hours before serving. Remove sides from springform pan. Garnish with whipped cream and fresh lime slices.
- The butter amount is 1/4 cup plus 1 Tablespoon.

JIMMY BUFFET'S KEY LIME PIE
Got this recipe from a top secret source! It is the best Key Lime pie I've ever tasted.

Steps:
- 1. Separate six eggs and set egg whites aside for another recipe. Put the six egg yolks into a mixing bowl
- 2. Add the 2 cups of sweetened condensed milk (this will amount to one and a half cans)
- 3. Mix milk and eggs on high with mixer.
- 4. Add 2/3 cup of Key lime juice and mix with mixer again until thick
- 5. Pour mixture into pie crust. (You can also fill 12 mini graham cracker pie crusts)
- 6. Bake on middle rack of oven for 20 minutes at 325 degrees
- 7. Remove from oven and cool for an hour then refrigerate until ready to serve
- 8. Add Whipped topping to pie slices when serving. You can also put a slice of a Key Lime on top of the pie as a garnish.
