JIFFY PINEAPPLE CAKE
Old recipe that I've had for years and you can't find it on the Jiffy site anymore! Delicious & light! One of my family favorites!

Steps:
- Preheat oven to 350.
- Spray 13x9 inch pan non-stick spray.
- In medium bowl, combine Cake mix, water and egg.
- Pour mix into 13x9 pan and bake for 15-18 minutes(cake is supposed to be thin so don't panic!).
- Cook cake in pan.
- In medium bowl beat softened cream cheese.
- Add pudding mix and milk to cream cheese.
- Beat until well mixed and thick.
- Spread cream cheese mixture evenly over cooled cake.
- Spread drained pineapple over cream cheese mixture
- Spread cool whip over pineapple layer.
- Refrigerate and serve!

This was a recipe request. My mother used to make this when I was a kid. It's a simple, quick cake to throw together, and as LDJ pointed out, it's good with chocolate frosting or fruit.

- Heat oven to 350°. Blend all ingredients, beat for 2 minutes.
- Pour into lightly greased 8" pan.

- 1. Mix cake per box directions, Place in 13x9 pan and bake for 10 to 15 minutes depending on your oven. Let cool. Soften cheese, Add milk and mix, Add pudding and beat til mixed. Pour over cool cake. Add pineapple to top of pudding and cover with cool whip. Sprinkle with nuts. refrigerate.

- Preheat oven to 350 degrees.
- Mix together the cake mix, pudding, nutmeg and cinnamon.
- Add eggs, oil and water to this mixture.
- Mix on medium speed for 1 minute.
- Add the pineapple, carrots, pecans and coconut.
- Blend well.
- Pour into a greased 9 inch round cake pan.
- Bake 25 to 30 minutes, until tooth pick inserted in the center comes out clean.

- 1. Preheat oven to 350 degrees F. Spray a 9 x 13 baking pan with non stick cooking spray. Combine all ingredients in a bowl, and mix until well blended on med high of hand mixer.
- 2. Pour in prepared cake can and bake for 30 - 35 minutes or until pick inserted in center of cake comes out clean.
- 3. Serve with whipped cream or ice cream.

Steps:
- heat oven to 350°F
- Grease and flour a 10 cup bundt pan.
- For filling: combine cream cheese, sugar and lemon juice.
- Beat till smooth and stir in coconut blend well.
- Set aside.
- With mixer, beat all cake ingredients together on medium for 4 minutes.
- Pour cake batter into pan.
- Spoon filling on top, be careful not to touch sides of pan with the filling.
- Bake 50-55 minutes, till top springs back when touched.
- Cool till just warm. remove from pan and cool completely.
- Glaze: blend all ingredients well, spoon over cake and serve.

BLACK WALNUT JIFFY CAKE
Steps:
- Preheat oven to 350°F. and butter and flour a 10 x 4-inch (4-quart) tube pan.
- Coarsely chop walnuts. In a large bowl with an electric mixer cream butter with sugar until light and fluffy. On low speed add flour, salt, and walnuts, beating until combined well, and beat in lemon extract and vanilla. Add eggs 1 at a time, beating well after each addition, and beat batter on high speed 5 minutes. Pour batter into tube pan and bake in middle of oven 1 1/4 hours. Cool cake in pan on a rack 30 minutes. Turn cake out onto rack and cool completely.
