- In a small bowl, place sour cream, lime zest and juice, chili powder, and chopped scallions. Season with salt and pepper; mix to combine. Transfer to serving dish, and garnish with sliced scallions, if desired. Serve with jicama sticks.

JICAMA AND CILANTRO DIP
Jicama is a mildly sweet and nutty root vegetable with a pleasant crunch. It's most often used raw in crudite platters or salads and slaws.

Steps:
- In a food processor, place cilantro, 1/2 cup sour cream, 1 tablespoon lime juice, and sugar; season with salt and pepper. Process until smooth, 3 minutes. Transfer to a bowl, and stir in remaining sour cream. Add more lime juice, and garnish with cilantro leaves, if desired. Serve with jicama sticks.

JICAMA WITH CILANTRO AND GREEN BELL PEPPER DIP
Steps:
- Puree all ingredients except jicama in processor until smooth. Transfer to bowl. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill.) Serve with jicama.
JICAMA SPINACH DIP
I love spinach dip. The crunch of water chestnuts is good but there is just something about them I do not care for. Also, too much spinach I do not like, so I altered a few things from others I have made and found one I just love! It is not too spinach-y. I love the crunch from the jicama and red bell pepper. Took this to a party and it was a hit! I served in round sourdough bread bowl with variety of bread, crackers, and veggies. Enjoy!

I love jicama dipped in creamy vegetable dip, and thought Why Not just make the crispy jicama part of the creamy dip? It is So Good this way and couldn't be easier. Serve the dip with fresh veggie spears or spread on crackers. Oh Yum!

This is a yummy, different spinach dip. The jicama adds just the right crunch. From the Best American Recipes cookbook series. Preparation and cook time are one, and includes the whopping fifteen seconds to blanch the spinach. :)

Steps:
- Drop the spinach in a large pot of boiling salted water for about 15 seconds to blanch it.
- Remove, and plunge into a large bowl of ice water.
- Drain the spinach, and squeeze out as much water as you can.
- Finely chop the spinach.
- In a medium bowl, combine the cream cheese and sour cream.
- Fold in the onion and jicama, and stir in the chopped spinach.
- Season with salt and pepper.
- Serve at room temperature with rye bread or crackers.
