TURKEY TACO BAKE
This dish is a great way to use up leftover turkey from Thanksgiving or Christmas. This hearty Mexican-style casserole is chock-full of popular south-of-the-border ingredients including corn chips, salsa, Monterey Jack cheese and refried beans. TACO TURKEY BURGERS
These burgers are a great alternative to beef, are super easy to throw together, and freeze extremely well! I make 2 batches at a time and freeze them for quick lunches/dinners. Convenient tip: Arnold Sandwich Thins also come 8 in a pack and can be frozen, so you'll have just enough for your burgers!

MEXICAN-INSPIRED TURKEY BURGERS
We love burgers on the grill, but turkey burgers can be bland and beef burgers can be fatty. To create these burgers, I used a spice combination from a taco recipe and then tinkered with cheeses and different toppings. -Heather Byers, Pittsburgh, Pennsylvania
