This hearty Mexican-style casserole is chock-full of popular south-of-the-border ingredients including corn chips, salsa, Monterey Jack cheese and refried beans. 2 cups coarsely crushed corn chips
1 can (16 ounces) refried beans
2 cups shredded Monterey Jack cheese, divided
1 cup salsa
2 cups shredded cooked turkey
1 teaspoon taco seasoning
1 green onion, sliced
1 medium tomato, chopped

Steps:

  • Place corn chips in a greased shallow 2-1/2-qt. baking dish. Place the refried beans in a small saucepan; cook and stir over medium heat until heated through. Remove from the heat; stir in 1 cup cheese and salsa. Spread over chips. , In a large bowl, combine turkey and taco seasoning; sprinkle over bean mixture. Top with remaining cheese. Sprinkle with onion. , Bake, uncovered, at 400° for 20-25 minutes or until cheese is melted. Sprinkle with tomato.

These burgers are a great alternative to beef, are super easy to throw together, and freeze extremely well! I make 2 batches at a time and freeze them for quick lunches/dinners. Convenient tip: Arnold Sandwich Thins also come 8 in a pack and can be frozen, so you'll have just enough for your burgers!

Number Of Ingredients 5

20 ounces ground turkey breast
1 (1 1/4 ounce) packet taco seasoning
1 (4 ounce) can diced green chilies (or diced jalapenos if you like spicy!)
1/4 cup whole wheat bread crumbs
1 egg, lightly beaten

Steps:

  • Add all ingredients to a large bowl and combine with a fork (don't over mix).
  • Scoop out turkey mixture by rough 1/3 cup onto wax paper lined cookie sheet, adjust as needed. You should end up with 8 equal mounds.
  • Form each mound into a patty.
  • Cook in a skillet over medium heat or grill, approximately 4 minutes on each side or until cooked through (completely opaque in center).
  • Serve with your favorite toppings on an Arnold Sandwich thin.
  • FREEZING DIRECTIONS: with patties equally spaced on cookie sheet, place into freezer for about an hour.
  • Once solid, place each burger in its own zip lock bag.
  • Place all burgers in a gallon zip lock bag or air tight container and store in the freezer.
  • Place frozen patties in refrigerator to thaw overnight or during the day, or sit out on the counter an hour or so before dinner (they thaw pretty quickly).
  • Cook as directed above.

1/2 cup salsa, divided
1/4 cup shredded reduced-fat cheddar cheese
3 teaspoons paprika
1 teaspoon dried oregano
1 teaspoon ground cumin
3/4 teaspoon sugar
3/4 teaspoon garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound extra-lean ground turkey
1/4 cup reduced-fat sour cream
4 hamburger buns, split
1/2 cup torn curly endive
1 medium tomato, chopped

Steps:

  • In a large bowl, combine 1/4 cup salsa, cheese, paprika, oregano, cumin, sugar, garlic powder, thyme, salt and cayenne. Crumble turkey over mixture and mix well. Shape into four burgers., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear., In a small bowl, combine sour cream and remaining salsa. 1 pound ground turkey
2 tablespoons grated onion
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
4 slices Monterey Jack cheese
4 potato buns
Blue corn tortilla chips, for serving
Pickled jalapenos, for serving
Pico de gallo, for serving
Guacamole, for serving

Steps:

  • Add the turkey, onion, chili powder, garlic power, salt, coriander, cumin and pepper to a bowl and stir until combined. Shape the mixture into 4 burgers and refrigerate for 30 minutes.
  • Heat the oil in a cast-iron skillet over medium-high heat. Add the burgers and cook for about 5 minutes; flip and cook until the internal temperature registers 165 degrees F, another 4 to 5 minutes, topping the burgers with the cheese in the last 2 minutes.
  • Transfer the burgers to the buns and top with tortilla chips, pickled jalapenos, pico de gallo and guacamole.
