BUFFALO CHIP COOKIES

One of the cookies I made for Christmas this year, though it didn't look much like a typical Christmas cookie! They were fantastic and I received many compliments!

Number Of Ingredients 14

1 cup shortening
1 cup butter or 1 cup margarine, softened
2 cups sugar
2 cups firmly packed brown sugar
4 large eggs
2 teaspoons vanilla extract
4 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 cups oats, uncooked
2 cups corn flakes cereal
1 cup chopped pecans
1 cup flaked coconut
12 ounces semi-sweet chocolate chips (2 cups)

Steps:

  • Beat shortening and butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well.
  • Add eggs, one at a time, beating after each addition.
  • Add vanilla, mixing well.
  • Combine flour, baking powder, and baking soda; gradually add oats and remaining ingredients.
  • Stirring well after each addition.
  • Drop dough by tablespoonfuls 2 inches apart, onto ungreased baking sheets.
  • Bake at 350° for 10 minutes or until lightly browned.
  • Remove cookies to wire racks to cool.
  • Cookies may be frozen in airtight containers up to 3 months.

This recipe was from my niece. It is absolutely one of my all time favorites!!

Number Of Ingredients 14

1 lb margarine (softened)
2 c sugar
2 c brown sugar
4 large eggs
1 tsp salt
4 c plain flour
2 tsp baking soda
2 tsp baking powder
2 tsp vanilla
2 c corn flakes
1 c shredded coconut
2 c oatmeal
1- 12 oz pkg. milk chocolate chips
1 c chopped pecans (optional)

Steps:

  • 1. 1st make sure you have a huge mixing bowl!!Cream margarine with sugars, adding eggs. Add vanilla, baking soda, baking powder and mix. Add flour and mix.Add the corn flakes, coconut, oatmeal, chocolate chips & pecan and mix well. It will be a very stiff mixture.
  • 2. use and ice cream scoop and put onto cookie sheet. You will probably only get 6 on a cookie sheet.. Bake 10- 12 minutes @ 350 degrees.

4 cups flour
1 cup pecans, chopped
2 cups uncooked oatmeal
3 cups corn flakes, lightly crushed
1 cup coconut
2 cups brown sugar
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons vanilla
1 (6 ounce) package semi-sweet chocolate chips
1 (6 ounce) package milk chocolate chips
1 (6 ounce) package butterscotch chips

Steps:

  • Blend butter, eggs, sugars and vanilla in a large mixing bowl.
  • In another bowl mix together flour, baking powder, and baking soda; then blend these into the egg/sugar mixture.
  • One at a time, add the oatmeal, cornflakes, nuts, coconut, and chips, stirring frequently to make sure all are blended.
  • Chill in refrigerator for 2 hours.
  • Preheat oven to 350 degrees.
  • Drop by tablespoons onto ungreased cookie sheet.
  • Bake for 10-12 minutes.
