UNCLE BILL'S SIMPLE JERUSALEM ARTICHOKES

I grow my own Jerusalem Artichokes and this year they grew well and are in abundance. Also very clean with small nodules on the main potato-like root.

1 lb jerusalem artichoke
2 tablespoons extra virgin olive oil
2 tablespoons butter
2 large garlic cloves, finely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons chopped fresh parsley

Steps:

  • Scrub or peel artichokes.
  • Slice each artichoke to 1/4 inch thick slices.
  • In a Wok or frying pan, heat olive oil and butter on medium-high heat.
  • Add sliced artichokes, garlic, salt, pepper and parsley; stir well to coat artichokes.
  • Stir-fry for about 4 minutes, stirring often.
  • Do not overcook artichokes, they should be slightly crunchy.
  • Serve immediately.

This is a nice side dish for brunch. If you want more flavor add some Hoisin sauce, play with this basic recipe

Number Of Ingredients 10

1 cup jerusalem artichoke, peeled,cut into 3/4" chunks and cover with cold water
1 jalapeno pepper, chopped
1/4 cup red pepper, chopped
1/4 cup yellow pepper, chopped
1/4 cup orange bell pepper, chopped
1 stalk celery, sliced
6 medium mushrooms, cleaned & cut in half
3 cloves garlic, peeled and thinly sliced
salt & pepper
vegetable oil cooking spray (I use lite olive oil in a spray bottle)

Steps:

  • Spray skillet with oil, over medium heat start to cook the mushrooms and garlic.
  • When they are just beginning to cook turn up the heat add all the other ingredients and stir fry for 5 minutes.
  • Serve.

JERUSALEM ARTICHOKES WITH TARRAGON

2 pounds Jerusalem artichokes
3 tablespoons extra-virgin olive oil
1 clove garlic, minced
Coarse salt and freshly ground pepper to taste
2 tablespoons fresh tarragon leaves

Steps:

  • Scrape the artichokes, leaving some of the skin on. Parboil, putting the bigger pieces into the water first, then the smaller pieces. Let them boil for two minutes, then drain.
  • Slice the artichokes when they are cool enough to handle. In a large frying pan (preferably cast iron) heat the olive oil and saute the artichokes so that they are lightly brown. Add the garlic and cook until it becomes barely golden (do not allow it to burn).
  • Sprinkle the artichokes with tarragon and serve.

1 pound Jerusalem artichokes, 8 to 10
3 tablespoons olive oil
1 tablespoon finely minced garlic
1 cup drained, imported tomatoes
2 tablespoons finely chopped parsley
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • Using a small regular or swivel-bladed paring knife, peel the artichokes. Cut them into quarter-inch thick slices. There should be about three cups.
  • Heat the oil in a saucepan and add the artichoke slices. Cook, stirring and tossing in the oil, about two minutes. Add the garlic and cook, stirring and tossing, about 30 seconds. Add the tomatoes, parsley, salt and pepper to taste. Stir and cover. Cook about eight to 10 minutes and serve.
