This is a great summer meal that's light but full of flavor. I made this mild to keep it kid-friendly. If you want to turn up the heat, increase the cayenne to 1/2 teaspoon, and add a jalapeno pepper (seeded & finely diced) to the salsa. Serve with coconut rice.

JERK CHICKEN
4 chicken breasts, boneless and skinless
2 1/2 tsp dried thyme
1/4 tsp cayenne pepper
3/4 tsp allspice, ground
1 1/2 tsp sugar
1/2 tsp salt
1/2 tsp ground pepper
2 Tbsp olive oil
4 Tbsp apple cider vinegar
juice of 1/2 a lime
SALSA
1 cucumber, peeled, seeded, and chopped
1 mango, peeled and chopped
1 small sweet onion, chopped
1 medium sweet red pepper, seeded, chopped
1 c frozen corn, thawed
1/2 bunch cilantro, chopped
juice of 1/2 a lime
salt to taste

Steps:

  • 1. Combine cucumber, mango, onion, red pepper, corn, and cilantro in bowl. Squeeze with lime and salt to taste. Chill until ready to serve. ( Make this several hours ahead for best flavor)
  • 2. Put chicken breasts in between two sheets of plastic wrap. Using a meat mallet, pound out to about 1/4 inch thick.
  • 3. In a large Ziploc bag, add chicken, thyme, cayenne, allspice, sugar, salt, pepper, olive oil, vinegar, and lime juice. Squeeze bag and "massage" marinade into meat, coating evenly. Refrigerate for 2 to 3 hours.
  • 4. Grill chicken on medium low heat- 5 to 8 minutes on each side or until no longer pink. NOTE : Instead of grilling, you could bake the chicken breasts at 375 degrees for 25 minutes.

2 lbs chicken breasts
1 teaspoon olive oil
1 lime, juice and zest of
2 1/2 ounces minced red onions
2 -3 garlic cloves
1 tablespoon grated gingerroot
1/3 cup minced fresh parsley or 1/3 cup minced fresh cilantro
1/2 tablespoon fresh thyme leave
1/2 teaspoon grated nutmeg
1/4 teaspoon hot red pepper flakes
1/4 teaspoon scotch bonnet pepper, minced (optional)
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon cumin
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1 lb diced fresh papaya (two cups)
1 mango, peeled cored and diced
1/2 cup diced red pepper

Steps:

  • Mix the Spice Mixture in a mini food processor pulsing to a chunky mixture. Or finely chop all together.
  • Coat chicken with 1 1/2 tablespoons of mixture rubbing in and marinade for 1/2-1 hour in refrigerator.
  • Add the rest of the spice mixture to the salsa ingredients. Chill.
  • Heat grill to medium high.
  • Rub the chicken with the oil.
  • Place on hot grill and cook 4-5 minutes pre side till done. Depending on how thick the breasts are. May be pan fried or broiled as well.
  • Plate chicken and top generously with salsa.
  • Serve with rice or on a bed of salad greens.

1/2 lemon, juice of
4 teaspoons caribbean jerk seasoning
2 tablespoons light soy sauce
1 tablespoon honey
pineapple chunk, diced
1/2 red pepper, diced

1/2 lemon, juice of
1 teaspoon cilantro, chopped

Steps:

  • Pre-heat the oven to 425°F
  • Score the flesh of the chicken and place in a shallow dish.
  • Mix together the remaining ingredients and pour over the chicken.
  • Cover and refrigerate. Leave to marinade for at least 30 minutes.

3 green onions, chopped
4 large garlic cloves, chopped
1 small onion, chopped
4 to 5 fresh Scotch bonnet or habanero chiles, stemmed and seeded
1/4 cup fresh lime juice
2 tablespoons soy sauce
3 tablespoons olive oil
1 1/2 tablespoons salt
1 tablespoon brown sugar
1 tablespoon fresh thyme leaves
2 teaspoons ground allspice
2 teaspoons black pepper
3/4 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
FOR CHICKEN
4 chicken breast halves with skin and bones (3 pounds), halved crosswise
2 1/2 to 3 pounds chicken thighs and drumsticks
Papaya Salsa (recipe follows)
Special equipment: Gas or charcoal grill (optional)

Steps:

  • MAKE MARINADE
  • Blend all marinade ingredients in a blender until smooth.
  • MARINATE AND GRILL CHICKEN
  • Divide the chicken pieces and marinade in 2 sealable plastic bags. Seal the bags, pressing out excess air, then turn bags over several times to distribute marinade. Put bags of chicken in a shallow pan and marinate, chilled, turning once or twice, for 1 day.
  • Let chicken stand at room temperature 1 hour before cooking.
  • COOK CHICKEN USING CHARCOAL GRILL
  • Open the vents on the bottom of the grill and on the lid. Light a large chimney of charcoal briquettes (about 100) and pour them evenly over one side of a bottom rack (you will have a double or triple layer of charcoal).
  • When the charcoal turns grayish white and you can hold your hand 5 inches above the rack for 3 to 4 seconds, sear the chicken in batches on a lightly oiled rack over the coals until well browned on all sides, about 3 minutes per batch. Move the chicken as seared to the side of the grill with no coals underneath, then cook, covered with the lid, until cooked through, 25 to 30 minutes more.
  • Serve the chicken with the papaya salsa.
  • COOK CHICKEN USING GAS GRILL
  • Preheat the burners on high, then adjust heat to moderate. Cook chicken until well browned on all sides, 15 to 20 minutes. Adjust the heat to low and cook chicken, covered with lid, until cooked through, about 25 minutes more.
  • Serve the chicken with papaya salsa.
  • COOK CHICKEN USING AN OVEN
  • If you can't grill, you can roast the chicken in two large shallow (1-inch-deep) baking pans in the upper and lower thirds of a 400°F oven, switching the position of the pans halfway through the roasting, 40 to 45 minutes total.

2 tablespoons allspice berries
1 tablespoon thyme leaves
2 tablespoons desiccated coconut
4 garlic cloves
2 jalapeno peppers, halved and stems removed (use Scotch bonnets or habaneros if you really want to heat things up)
6 scallions, roughly chopped
1 tablespoon black peppercorns
1 1/2 teaspoons sea salt
1/2 teaspoon grated nutmeg
1/2 teaspoon cinnamon
1 piece fresh ginger, 2-inches, thickly sliced
2 large limes, juice of
6 large boneless skinless chicken breasts
8 canned peach halves (very well dried with paper towels and diced)
2 limes, juice of
2 teaspoons honey (can use more if you like more sweetness)
1 tablespoon rum
3 tablespoons diced red bell peppers (same size dice as the peaches)
1 tablespoon chopped fresh cilantro
1 small garlic clove, finely minced

Steps:

  • CHICKEN:.
  • Put allspice, thyme, coconut, garlic, chiles, scallions, peppercorns, salt, nutmeg, cinnamon, ginger and lime juice in a blender or food processor and grind to a rough paste.
  • Put chicken in a baking dish, add seasoning paste and coat chicken well, using a spoon to turn and rub it.
  • Cover and marinate, refrigerated, for at least 6 hours, preferably overnight.
  • Heat oven to 350 degrees and bring chicken to room temperature. Turn chicken once more in marinade to coat well, then put baking dish in the oven, uncovered. Bake for 40 mins or up 1 hour, until well browned and juices run clear (start checking at 40 mins, you don't want it overcooked and dry and smaller pieces will take less time). Put dish under the broiler for just a minute or so to char chicken slightly. Remove and serve with the peach salsa (and coconut rice, if desired).
  • PEACH SALSA:.
  • Combine all ingredients and refrigerate until serving time.
  • The flavor is best if the salsa is refrigerated for 6 hours or overnight.

3/4 teaspoon ground cinnamon
3/4 teaspoon ground allspice
1/2 teaspoon garlic salt
1/4 teaspoon dried thyme

2 tablespoons fresh lime juice, divided
1 lb boneless skinless chicken thighs, about 6 thighs

Steps:

  • Preheat grill to medium heat.
  • Combine cinnamon, allspice, garlic salt, thyme, 1/4 teaspoon of salt, black pepper, cayenne pepper and 1 tablespoon of lime juice on a plate; mix to a paste. Brush both sides of chicken with seasoning paste; set aside for 10 minutes to allow flavors to blend.
  • Meanwhile, combine mango, shallot, jalapeno, cilantro, remaining tablespoon of lime juice and 1/8 teaspoon of salt in a bowl.
