FRUIT AND BROCCOLI BUFFET SALAD

½ cup grapeseed oil
⅓ cup granulated sugar
3 tablespoons cider vinegar
2 tablespoons fresh lime juice
1 tablespoon grated lime zest
1 clove garlic, minced
½ teaspoon salt
½ teaspoon poppy seeds
½ teaspoon paprika
½ teaspoon dry mustard
½ cup pecans
2 oranges, peeled and sectioned
2 ½ cups bite-size broccoli florets
1 red apple, chopped
1 cup grapes, halved

Steps:

  • Beat grapeseed oil, sugar, cider vinegar, lime juice, lime zest, garlic, salt, poppy seeds, paprika, and mustard together in a bowl with a whisk until smooth and creamy.
  • Heat a small skillet over medium heat. Toast pecans in hot skillet, stirring frequently, until fragrant, 4 to 5 minutes.; spread onto a cutting board to cool completely before chopping.
  • Toss orange sections, broccoli, apple, and grapes together in a bowl. Drizzle dressing over salad and toss gently to coat. Cover bowl with plastic wrap and refrigerate until chilled, 2 to 6 hours.
  • Sprinkle chopped pecans over salad.

Had this at a cousins baby shower,had to get the recipe from my Aunt. Great for BBQ's & potlucks too! My sister doubles the dressing.

1/8-1/4 cup sugar (to your taste)
1 tablespoon vinegar
1/2 cup Miracle Whip or 1/2 cup mayonnaise
1/2 lb bacon, fried & chopped
1 cup cheddar cheese, grated
2 small broccoli, heads raw cut into bite sized pieces
1 onion, chopped (red or white)

Steps:

  • In small mixing bowl combine sugar,vinegar & miracle whip,stir well.
  • (depending on the size or amount of your broccoli you can double the dressing).
  • In large mixing bowl combine bacon,cheese, broccoli,and onion.
  • Pour first mixture over second and stir until coated.
  • Refrigerate.
  • This gets better the longer it sits.
  • You may double the dressing and use to your taste.

2 heads fresh broccoli
1 red onion
½ pound bacon
¾ cup raisins
¾ cup sliced almonds
1 cup mayonnaise
½ cup white sugar
2 tablespoons white wine vinegar

Steps:

  • Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
  • Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
  • To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

3 -4 large fresh peaches
1 tablespoon lemon juice
1/2 pint fresh blueberries
1 (8 ounce) jar maraschino cherries, drained
1 cup green grapes or 3 kiwi fruits

Steps:

  • Place peeled, pitted and sliced peaches in a bowl.
  • Sprinkle with lemon juice and stir to coat. This is to help prevent browning. If the salad is to be served immediately, you can skip the lemon juice.
  • Wash and pat dry blueberries and add to peaches.
  • Drain the maraschino cherries and add to bowl.
  • Wash and pat dry green grapes. You can add these whole or sliced lengthwise, depending on the size of the grapes. If you prefer, you can peel and slice the kiwi fruit and use those instead of the grapes.
  • Mix well and serve within an hour or so. No need for dressing!

1/2 cup lime juice
1/2 cup water
1/2 cup sugar
1 large banana, sliced diagonally
1 pint blueberries, divided
2 large nectarines, sliced
1 pint strawberry, hulled and halved
1 cup watermelon balls
1 cup seedless grapes, green
1 kiwi, peeled and sliced
dark sweet cherry, with stems (to garnish)

Steps:

  • In bowl, stir lime juice, water and sugar until sugar dissolves. Add sliced bananas and set aside.
  • In large serving bowl, preferably glass, layer blueberries (reserve 1/2 cup for garnish), nectarines, strawberries, banana, watermelon and grapes.
  • Garnish with reserved 1/2 cup blueberries, the kiwi and dark black cherries.
  • Pour lime-sugar syrup over fruit, cover loosely and chill before serving.
  • If listed fruits are not available, substitute as desired.
