This recipe comes from my mum (not sure where she got it) She makes it every time she goes to a party, it is always a big hit. She recently made it when she was overseas for some friends and they were very sceptical at first but after trying, loved it and asked for the recipe. It sounds like a lot of cream, but doesn't taste so creamy when it is frozen.

500 ml thickening cream
1 packet paradise cottage hazelnut cookie (or similar no cream filled)
liquor, of your choice for dunking biscuits (I use Tia Maria)
100 g of grated chocolate (I use Cadbury flake)

Steps:

  • Lie approximately 40cm aliminum foil on a flat surface (enough to fully cover the log you will make) Whip the cream until thick Place a thick strip of the thickened cream in the middle of the aliminum foil Dunk the edges of a biscuit in the liquor, cover both sides of the biscuit with the thickened cream Place the biscuit standing upright into one end of the cream strip Repeat with the next biscuit but only covering one side with cream Press the biscuit into the cream of the first biscuit so the cream covered side is facing out.
  • Repeat this process until there are no biscuits left.
  • You will have a biscuit, cream, biscuit sandwich effect With the remaining cream, cover the entire log in cream.
  • Grate the chocolate and cover the entire log Now wrap the log in the aliminum foil and place into the freezer until ready to be used.

These are a very "moresome" bikky:) I used to sell these at the local markets, and they always sold out first. Very easy to make, and to really show off, you can throw a handful of chopped macadamia nuts in, gives them an extra crunch!!! PLEASE NOTE, THESE ARE NOTHING LIKE AMERICAN CHOC CHIP COOKIES, WHICH ARE SOFT AND CHEWY. I have also added coco powder to the mix and used white chips, looks good, but the white chips stay very hard.

250 g butter
3/4 cup sugar
200 g condensed milk (1/2 can)
2 1/2 cups self raising flour
3/4 cup chocolate chips
3/4 cup chopped macadamia nuts (optional)

Steps:

  • Cream together the butter and sugar.
  • Add the condensed milk and keep beating for 2 minutes.
  • Fold through the flour, then the choc chips. The mixture will be tacky.
  • Place teaspoons full on your baking tray (either greased or baking pepper).
  • Flatten slightly with a floured fork.
  • Bake at ABOUT (all stoves are different) 160°C for about 15 minutes, or till golden.
  • Leave on trays for 3 minutes, then cool on wire racks.

2/3 cup sugar
1 cup margarine, softened
2 teaspoons vanilla
2 teaspoons rum extract
1 large egg
3 cups flour
1/4 teaspoon vanilla
1 teaspoon nutmeg
2 cups powdered sugar
3 tablespoons margarine, softened
3/4 teaspoon rum extract
2 -3 tablespoons half-and-half

Steps:

  • In large bowl, combine sugar, 1 cup margarine, 2 tsps vanilla, 2 tsps rum extract, and egg, beat till light and fluffy --
  • lightly spoon flour into measuring cup.level off add flour and 1 tsp nutmeg --
  • mix well.cover dough with plastic wrap and chill 1 hour --
  • preheat oven to 350* --
  • divide dough into 12 pieces.shape into long rope, shape each piece of dough into 1/2" diameter and 15" long -- cut into 3" lenths --
  • place on ungreased cookie sheet.bake at 350* for 12-15 minutes. or light golden brown.
  • place on racks to cool.
  • in a small bowl, spread on tops and sides of cookies -- if desired mark frosting with tines of fork.to resemble bark --
  • sprinkle with nutmeg -- let stand until frosting is set.
