"Determined to come up with a brunch dish that didn't keep me in the kitchen all morning, I created this casserole made with everyone's favorite ingredients," relates Jenny Flake of Gilbert, Arizona. "Preparation is minimal, and then it goes right into the oven, so you can spend more time with the ones you love." Simply serve with a fruit salad for a hearty weekend breakfast guests will love.

1 tube (16.3 ounces) large refrigerated buttermilk biscuits
12 large eggs
1 cup whole milk
1 cup chopped fresh tomatoes
1/2 cup chopped green onions
1 can (4 ounces) chopped green chilies
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon salt-free garlic seasoning blend
1 package (2.1 ounces) ready-to-serve fully cooked bacon, diced
2 cups shredded cheddar cheese

Steps:

  • Separate biscuits. Cut each biscuit into fourths; arrange in a greased 13x9-in. baking dish. , In a large bowl, whisk the eggs, milk, tomatoes, onions, chilies, salt, pepper and seasoning blend. Pour over biscuits. Sprinkle with bacon and cheese. , Bake, uncovered, at 350° for 40-45 minutes or until a thermometer reads 160°.

This recipe came about when I had all the ingredients for a great breakfast but didn't want to cook everything separately. Threw it into a casserole dish and voila! This is by far the best breakfast casserole I've ever had. It's wonderful when having "breakfast for dinner!"

1 teaspoon butter, or as needed
1 (16 ounce) package bacon
1 (16 ounce) can refrigerated biscuit dough
8 frozen hash brown patties, or to taste
8 eggs
¾ cup milk
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Butter a 9x13-inch baking dish and set aside.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy but not fully browned, 6 to 8 minutes. Drain bacon slices on paper towels.
  • Slice biscuits lengthwise and place on the bottom of the baking dish, sealing the dough to cover the bottom completely. Top with hash brown patties. Layer bacon over the hash browns.
  • Whisk eggs and milk together, then pour over the casserole. Top with Cheddar cheese.
  • Bake in the preheated oven until top is bubbling and bacon is crispy, 30 to 35 minutes. Let cool for 10 minutes before serving.

1 pound bulk breakfast sausage
¼ cup all-purpose flour
2 ¼ cups milk
1 teaspoon kosher salt, divided
½ teaspoon ground black pepper, divided
1 tablespoon butter, softened
6 large eggs
1 (16.3 ounce) can refrigerated biscuit dough
3 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom and sides of a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Add sausage and cook, crumbling with the back of a spoon, until browned, 5 to 7 minutes.
  • Reduce heat to medium and sprinkle flour evenly over sausage. Cook, stirring constantly, for 1 minute. Add milk and stir, scraping any browned bits from the bottom of the pan. Cook, stirring often, about 7 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Remove from heat.
  • Crack eggs into the prepared baking dish and whisk in remaining salt and pepper until well blended. Cut each biscuit in quarters and arrange in a single layer over eggs. Sprinkle 1 1/2 cups Cheddar cheese over the biscuits. Pour sausage gravy over the cheese and spread evenly. Top with remaining cheese.
  • Bake in the preheated oven until golden and bubbly, 25 to 30 minutes. Let stand for 5 minutes before serving.

This recipe has evolved over the years and is our family favorite. Easy and very tasty. . .better yet, it all cooks in one dish! I have designed this to feed 3 (with a side of fruit salad), so you may need to double the recipe if you have a big family (or if you want leftovers which are devine).

1/2 lb breakfast sausage
1 cup sharp cheddar cheese, shredded
4 eggs
1/2 cup sour cream
1/2 tablespoon Dijon mustard
1 tablespoon dried onion flakes
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
4 large refrigerated biscuits (from a can, uncooked)

Steps:

  • Preheat over to 350 degrees and grease a 1 quart dish.
  • Brown your sausage and drain the grease.
  • Mix sour cream, mustard and sausage. Place on bottom of baking dish.
  • Put layer of cheese over top.
  • Scramble the eggs and add onion flakes, salt and pepper. Pour over the cheese.
  • Sprinkle with paprika.
  • Bake 25 minutes (and make sure eggs are cooked).
  • Remove from oven, increase temp to 375 degrees, place biscuits over top of the eggs, return to over and baken an additional 7 minutes or until biscuits are done to your liking.
