This Pizza Soup is like an ultra-cheesy supreme pizza in a bowl! A delicious and hearty way to enjoy all those pizza flavors without the crust.

Number Of Ingredients 16

1 (16 oz) package Italian sausage (mild, medium, or hot)
1 green bell pepper (diced)
1/2 large yellow onion (diced)
1 (8 oz) container mushrooms (diced)
2 teaspoons Italian seasoning
2 teaspoons garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt (plus more to taste (I used 1 teaspoon))
1/2 teaspoon pepper
4 cups chicken broth
1 (14.5 oz) can diced tomatoes
1 (14 oz) jar pizza sauce
1 (6 oz) package pepperonis (quartered)
1/2 cup finely grated parmesan
Shredded cheese (for serving (I used a pizza cheese blend: mozzarella, provolone, parmesan, asiago, fontina, and romano))

Steps:

  • Heat a large stockpot over medium heat.
  • Once hot, add in Italian sausage, bell pepper, onion, mushrooms, Italian seasoning, garlic powder, dried oregano, dried basil, salt, and pepper.
  • Cook, breaking up the meat as you go, until the sausage is no longer pink.
  • Stir in the chicken broth, scraping up any brown bits, then stir in the diced tomatoes, pizza sauce, pepperoni, and parmesan.
  • Bring to a simmer, stirring occasionally to prevent the cheese from sticking to the bottom.
  • Cover, reduce heat to low, and simmer for 15 minutes.
  • Taste and re-season, if necessary.
  • Ladle into bowls, then top each bowl of soup with a generous amount of shredded cheese and enjoy!

2 cans (14-1/2 ounces each) diced tomatoes
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
2-1/2 cups water
1 package (3-1/2 ounces) sliced pepperoni, quartered
1 medium sweet red pepper, chopped
1 medium green pepper, chopped
1 cup sliced fresh mushrooms
2 garlic cloves, minced
1/2 teaspoon rubbed sage
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Salt and pepper to taste
10 slices French bread, toasted
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • In a Dutch oven, bring the tomatoes, soup and water to a boil. Reduce heat; cover and simmer for 15 minutes. Mash with a potato masher. Add the pepperoni, red and green peppers, mushrooms, garlic, sage, basil, oregano, salt and pepper. Cover and simmer for 10 minutes or until vegetables are tender. , Ladle into ovenproof bowls. Top each with a slice of bread and sprinkle with cheese. Broil 4 in. from the heat until cheese is melted and bubbly.

2 tablespoons olive oil
1 medium onion, chopped
1 green pepper, chopped
1 clove garlic, minced
1 teaspoon dried oregano
2 teaspoons dried basil
1/2 cup uncooked rice
1 cup diced or crushed tomatoes
4 cups chicken broth
1 -2 ounce thinly sliced pepperoni
1/2 cup shredded provolone cheese or 1/2 cup mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Heat olive oil in a large saucepan.
  • Saute the onion and green pepper until softened.
  • Stir in the garlic and cook for a minute.
  • Add the oregano, basil, rice, tomatoes and broth, and bring to a boil.
  • Turn down heat and place cover on saucepan.
  • Simmer for 20 minutes or until rice is tender.
  • Stir in the pepperoni, and sprinkle with the cheese.
  • Continue cooking for another minute or two.
  • Serve, and add an extra sprinkling of Parmesan cheese, if desired.

PEPPERONI PIZZA SOUP

3 3/4 ounces thinly sliced pepperoni
16 medium white button mushrooms, sliced
3 cloves garlic, finely chopped
1 small red onion, sliced 1/8-inch thick
1 teaspoon dried oregano
Kosher salt
6 cups low-sodium chicken broth or stock
One 32-ounce jar marinara sauce
1/4 cup grated Parmesan, plus more for serving
4 slices sourdough whole wheat bread, halved
1 tablespoon olive oil
1 1/2 cups shredded mozzarella
1/4 cup torn fresh basil leaves, for serving, optional

Steps:

  • Add the pepperoni to a soup pot over medium-high heat and cook, stirring occasionally, until the pepperoni render their fat and get crispy, 3 to 4 minutes. Remove the pepperoni with a slotted spoon and drain on paper towels. Set aside.
  • Lower the heat to medium; add the mushrooms, garlic, onions, oregano and 1 teaspoon salt. Cook, stirring, until the vegetables soften and the mushrooms release their liquid, 6 to 7 minutes. Add the broth, marinara sauce and Parmesan; cover the pot and bring to a boil. Reduce the heat to medium and cook, about 15 minutes.
  • Position an oven rack in the center of the oven and preheat the broiler to medium-high. Put the bread on a baking sheet. Brush the bread with the oil and sprinkle with 1/4 teaspoon salt. Broil the bread until crisp and brown, 1 to 2 minutes. Flip the bread and sprinkle with 1 cup mozzarella. Broil until the mozzarella melts and is brown and bubbly, about 2 minutes.
  • Ladle the soup into 8 serving bowls. Sprinkle each bowl with the remaining 1/2 cup mozzarella, then top each with a bread half, melted-cheese-side up, and some of the pepperoni. Sprinkle with some Parmesan and basil if desired.

One of the members of my cooking and recipes group made this great soup for one of our events... I was pleasantly surprised when I tasted this, and it actually tasted like pizza! It is REALLY GOOD!

2 (14 ounce) cans Italian-style tomatoes
2 cups beef broth
1 onion, thinly sliced
1 red peppers or 1 green pepper, seeded and chopped
1 cup mushroom, sliced
1/2 lb smoked link sausage, thinly sliced
1 teaspoon fresh oregano, chopped
1 cup shredded mozzarella cheese or 1 cup cheddar cheese

Steps:

  • In a crock pot, combine tomatoes, broth, onion, pepper, mushrooms, sausage and oregano.
  • Cover, and cook on low for 7-8 hours.
  • When done, spoon into individual bowls.
  • Top with cheese.
