JELLY FILLED DONUTS

1 cup whole milk
3/4 ounce (4 1/2 teaspoons) instant yeast
1/4 cup sugar, plus more for coating
1 1/2 teaspoons salt
1/4 teaspoon mace
2 tablespoons nonfat powdered milk
1 large egg
2 cups all-purpose flour
1 cup bread flour
Oil, for coating bowl
Vegetable shortening, for frying
1 1/2 cups raspberry, strawberry, blueberry or your favorite jelly for filling doughnut
3 tablespoons unsalted butter, room temperature

Steps:

  • Set a small saucepan over low heat and add 1/4 cup of the milk. Heat the milk long enough to remove the chill and raise the temperature just slightly so that it is just warm. Place the yeast in a small bowl with 1 tablespoon of the sugar and pour the heated milk over the yeast. Stir the milk into the yeast and allow it to bloom for 5 to 10 minutes. In a stand mixer fitted with a whip attachment, combine the remaining 3 tablespoons of sugar, butter, salt, mace, and powdered milk and mix until just well combined. Do not overmix. Add the egg and mix gently. Add the remaining 3/4 cup of milk and mix briefly. Add the flours and yeast mixture and mix to form a smooth dough, about 6 to 8 minutes at second speed.
  • Transfer dough to a lightly oiled bowl and cover with plastic wrap or a damp kitchen towel. Set aside to rise in a warm, draft free place until doubled in size, 1 to 1 1/2 hours.
  • Place the dough on a lightly floured work surface. Sprinkle the dough lightly with flour and, using a rolling pin, roll to a thickness of 1/2-inch. Let dough sit undisturbed for 5 minutes to allow the dough to relax. Using a biscuit cutter or the rim of a glass, cut doughnuts into rounds about 3 inches in diameter.
  • Add enough solid vegetable shortening to a large saucepan or deep-fryer to come halfway up the sides of the pan when melted. Heat over medium heat to a temperature of 350 degrees F. Fry the doughnuts, a few at a time so as to not overcrowd, turning once midway through the cooking, 2 to 2 1/2 minutes per side. Drain on a paper towel-lined plate. While donuts are still warm, place them in a paper bag with some sugar and shake to coat. Transfer the cooked doughnuts to a cookie rack set over a sheet pan to cool.
  • When cool, place the jelly in a pastry bag fitted with a plain tip and, using the tip, poke a small hole in the side of the doughnuts and fill the centers with 2 tablespoons of the jam. Serve.

1 3/4 cups unbleached all-purpose flour, plus more for dusting
1 3/4 cups bread flour
2/3 cup warm water
1/3 cup whole milk
2 1/4 teaspoons instant dry yeast (one 1/4-ounce package)
1 large egg plus 1 large yolk, room temperature
1/3 cup granulated sugar
2 teaspoons kosher salt
4 tablespoons unsalted butter, room temperature, cut into pieces
Vegetable-oil cooking spray
Vegetable, peanut, or safflower oil, for frying (about 8 cups)
Strawberry or grape jelly or jam, for filling
Confectioners' sugar, for dusting

Steps:

  • Whisk together flours. Combine water and milk in the bowl of an electric mixer fitted with the dough-hook attachment, then sprinkle yeast over top. Stir in 1 cup flour mixture. Cover with plastic wrap; let stand in a warm place until bubbling and doubled in volume, about 1 hour. Add egg and yolk, granulated sugar, salt, and remaining flour mixture. Beat on medium speed 3 minutes. Continue beating while adding butter, a few pieces at a time, beating to combine after each addition. When all butter has been added, keep beating until a shiny, sticky dough forms around hook, about 4 minutes more. Scrape down sides of bowl.
  • Cover dough with plastic wrap. Let stand in a warm place until almost doubled in volume, about 1 hour. Refrigerate at least 8 hours and up to 24.
  • Cut out 9 three-inch squares of parchment. Spray a baking sheet with oil; arrange parchment squares in a single layer. Spray parchment. Transfer dough to a lightly floured baking sheet; pat out 1/2 inch thick. Using a floured 2 3/4-inch round cutter, cut out about 9 rounds. Transfer to parchment squares. Drape with oil-sprayed plastic wrap and let stand in a warm spot until slightly more than doubled in bulk and very soft, about 1 hour.
  • Meanwhile, pour oil into a large, deep, heavy pot, such as a Dutch oven, until it reaches 2 inches up side, leaving about 2 1/2 inches headroom. Clip a deep- fry thermometer to pot and heat oil over medium to 350 degrees to 360 degrees. Working in batches of 3 so as not to crowd pot, carefully use parchment to transfer donuts to hot oil and cook, flipping a few times, until puffed and golden brown all over, 2 to 3 minutes total for donuts (1 1/2 to 2 minutes for holes), maintaining oil temperature between 350 degrees and 360 degrees at all times. Transfer donuts to a wire rack set in a rimmed baking sheet; let cool completely.
  • Fill a pastry bag fitted with a coupler and a Bismarck piping tip (such as Ateco #231) with jelly. Fill each donut with about 2 teaspoons jelly (it should puff slightly in center). Dust with confectioners' sugar.

Very quick and easy to make recipe, can be dairy or pareve. Special thanks to my mom, this was her recipe that we always made and enjoyed as children, and I still love it today.

1 (1/4 ounce) package active dry yeast or 1/2 ounce fresh yeast
2 tablespoons warm water
1 teaspoon sugar
2 cups flour
1/2 teaspoon salt
2 tablespoons butter or 1 ounce margarine
1 egg, beaten
1/4 cup warm water (approximately) or 1/4 cup milk (approximately)
oil (for frying)
9 teaspoons fruit jelly, for filling (your choice of flavor)
confectioners' sugar

Steps:

  • Mix the yeast, 2 tablespoons warm water and sugar in a small bowl, and leave to stand till bubbly.
  • Sift the flour and salt into a bowl.
  • Rub the butter or margarine into the flour (the kids will LOVE doing this).
  • Make a well in the flour mixture (I always skip this part) and add the yeast mixture, the beaten egg and just enough of the warm milk/water to make a soft dough.
  • Beat well and kneed for 5 minutes on a floured board.
  • Divide into 12 pieces (If you prefer an American vs. dainty British size, divide into 9).
  • Kneed each piece and place apart on a greased and floured tin (or a sheet of foil, or your mixing bowl!).
  • Brush with water and place in (or cover with) a greased plastic bag.
  • Leave until they have doubled in size (about 45 minutes to an hour) (perfect timing to light, and sit by, the menorah).
  • Fry in oil that is not too hot 350F-360F, (huh? I don't own a kitchen thermometer! But it's hot enough when a TINY droplet of water skims across the surface. I use enough oil to cover 1/3 of the sufganiyot) turning over once to brown both sides, about 3 minutes.
  • Drain on absorbent paper.
  • When cool enough to handle, but not to cool, insert the jelly in the middle. I use one teaspoon (5 ml) and put it in with a syringe. (You can alternatively use the handle of a spoon to make a hole in the side of the doughnut and spoon in the jelly, or put the jelly in a little baggie, make a hole in the corner and squeeze it into the hole.).
  • Sprinkle on confectioners sugar. (and go return the store-bought doughnuts. They just won't pass muster after you taste these!).

The traditional Chanukah jelly donut, made without gluten. So yummy! These can be made without sugar - If you omit the sugar, add 1/4 cup of the flour mix. The flour mix is made of 3 cups white rice flour, 3 cups brown rice flour, 2 cups potato starch (not flour) and 1 cup tapioca starch.

2 eggs, beaten
2 cups buttermilk
1/4 cup butter, melted
5 cups gluten-free rice flour mix (see note)
1 cup sugar
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons salt
2 teaspoons xanthan gum
1 teaspoon nutmeg
1/2 teaspoon cinnamon
1 beaten egg, set aside
1/2 cup sugar, set aside in a bowl
seedless raspberry jelly or strawberry jelly

Steps:

  • Beat 2 eggs, buttermilk, and melted butter in a large bowl with a whisk.
  • Combine dry ingredients in a separate bowl. Fold slowly into the wet ingredients, mixing by hand with a wooden spoon. When the ingredients are mostly combined, use your hands to knead a few times to make sure the ingredients are fully incorporated.
  • Let the dough rest for 15 minutes. Sprinkle extra rice flour mix on your countertop or a large cutting board. Roll out dough to 1/4 inch thick. If dough is sticky, work in more rice flour blend.
  • Heat 2 inches of canola oil until very hot (375 degrees F).
  • Use a glass, biscuit cutter or jar with approximately 3-inch diameter to cut disks out of the dough. Place 1/2 teaspoon of jelly in the center of one disk. Brush the beaten egg you've set aside around the outer edge of the dough. Place a second disk of dough on top, and use your fingers to crimp the edges until they are sealed. Repeat until you've used up all the dough. Remaining dough scraps can be rolled into balls ("donut holes") and fried.
  • Carefully place sufganiyot in hot oil with a slotted spatula. Cook until very brown on one side. If necessary, turn the donut over and brown on the second side. Remove from oil and place on a plate lined with two layers of paper towel or brown paper. While warm, roll sufganiyot in the bowl of sugar to coat.
  • Serve while warm.

(2) 7.5oz containers refrigerated buttermilk biscuits (10 biscuits each)
1/4 c strawberry jam or the filling of your choice
2 c vegetable oil
1/4 c confectioners' sugar

Steps:

  • 1. Lay out all the biscuits. Using your fingers, flatten slightly. Place an equal amount of jam in the center of half the biscuits,then top each with remaining biscuits. Pinch edges together to seal well. In a large deep skillet over medium-low heat,heat oil until hot but not smoking.

Special equipment: You will need a 2-inch round cutter. If you don't have one, you can use a drinking glass of the same size. You will also need a candy/fat thermometer, as well as a 12- to 18-inch pastry bag fitted with a 1/4-inch round tip to fill the donuts with jam or jelly. STRAWBERRY JELLY FILLED BISCUIT DONUTS

Done in under 30 minutes, these Strawberry Jelly Filled Biscuit Donuts are a fun and super easy breakfast that everyone loves!

2 cups vegetable oil
16.3 ounce can refrigerated biscuits
12 ounces strawberry jelly (jam, or preserves)
1 cup powdered sugar
1 tablespoon strawberry jelly (jam, or preserves)
1-2 tablespoons heavy cream or water

Steps:

  • Line a baking sheet with paper towels, then place a cooling rack over the paper towels. Set aside.
  • Heat the oil in a medium pot over medium heat.
  • Using your hands and working around the edges, gently shape each biscuit into an oval or egg shape.
  • Carefully lower 2-3 formed biscuits into the hot oil and allow to fry for 2-3 minutes.
  • When the underside of each biscuit is golden brown, use a pair of tongs to gently flip them over and fry the uncooked sides until golden brown (again, 2-3 minutes).
  • Use a pair of tongs or a large slotted spoon to remove the biscuits from the hot oil, then place them on the prepared cooling rack to drain and cool. Continue working in batches of 2-3 biscuits until all of your donuts are finished frying.
  • When the donuts have cooled completely, fit a piping bag with a bismark tip or cream piping nozzle, and fill the bag with the strawberry jelly.
  • Insert the piping tip into one edge of each donut and squeeze gently to fill the donuts with jelly.
  • To make the glaze, sift the powdered sugar into a medium sized bowl. Add the additional tablespoon of jelly and the heavy cream to the powdered sugar, then whisk together until smooth.
  • Dunk one flat side of a donut into the glaze, then allow any excess glaze to drain off. Repeat until each donut is glazed..
  • Return the glazed, filled donuts to the cooling rack. Allow the glaze to firm slightly, then serve.
