This Salad is a refreshing complement to any meal, and it's attractive on the table. Whenever I'm asked to bring a dish to a potluck dinner, I prepare this salad. I often make it for friends and neighbors, too. It's always much appreciated. -Elisabeth Garrison, Elmer, New Jersey

Number Of Ingredients 8

1 medium cucumber
1 package (3 ounces) lime gelatin
1 teaspoon salt
1/2 cup boiling water
1 cup mayonnaise
1 cup 4% cottage cheese
1 small onion, grated
Optional: Sliced cucumbers and fresh parsley

Steps:

  • Peel and halve cucumber; remove the seeds. Shred and pat dry; set aside. In a bowl, combine gelatin and salt with boiling water; stir until dissolved. Add mayonnaise and cottage cheese; mix well. Stir in the onion and shredded cucumber. Pour into an oiled 5-cup mold. Refrigerate until firm. Unmold onto a serving platter. Garnish with cucumbers and parsley if desired.

This creamy, dreamy Cottage Cheese Jello Salad is one of my favorite treats once the weather turns warm in the spring and summer. It's perfect for potlucks, backyard barbecues, and family reunions!

3 ounces jello, any flavor
15 ounces crushed pineapple, drained
16 ounces cottage cheese
8 ounces Cool Whip, thawed

Steps:

  • Combine cottage cheese, pineapple, and gelatin in a bowl, stirring well.
  • Fold the Cool Whip in with the other ingredients until combined. Try not to overmix and deflate the Cool Whip.
  • Transfer to a clean serving bowl, then cover and refrigerate for 1 hour before serving.

TIP: If you like it more fruity, use less cool whip. If you like it more creamy, use more cool whip. Also, you can "holiday" it up or customize it just by changing flavors. For Christmas, use green jello and add cherries. For Halloween, use orange jello and add mandarin oranges, etc.

My Grandma always made this salad for family get-togethers and it was (and still is) my favorite. Since she has passed on, it is now up to me to bring the Green Salad. Luckily, my daughter loves this salad as much as I do!

2 pkg lime jello
1/2 c white sugar
1 1/2 c water, boiling
2 c mayonnaise
2 c cottage cheese
2 c cucumber, peeled, seeded and diced

  • 1. Mix jello and sugar with boiling water. Stir for 2 minutes to dissolve jello and sugar.
  • 2. Whisk in mayonnaise until combined. Chill until slightly set.
  • 3. Stir in cottage cheese and cucumbers. Chill until completely set.

1 large cucumber
1/2 small white onions
1 pt cottage cheese, small curd
1 pkg lime jello
1/2 c hot water
1 Tbsp white vinegar
1/2 c mayonnaise
1/2 c pecans, in pieces

  • 1. Peel and grind cucumber, onion , drain excess liquid, put cottage cheese through sieve and drain excess liquid; dissolve the jello in hot water and the vinegar and mayonnaise to the jello mixture, add the cucumber mixture, and cottage cheese and stir together, add pecans and fold into mixture, chill and serve.

2 cups boiling water
1 3/4 cups cold water
3 cucumbers
2 (8 ounce) packages cream cheese

Steps:

  • Peel the cucumbers and cut into small cubes.
  • Cut the cream cheese into small cubes.
  • Put the cucmber and cream cheese cubes in a serving dish (I usually use a 9x13 glass baking dish).
  • Dissolve the Jello mix in the boiling water.
  • Stir in the cold water.
  • Pour the Jello over the cucumber and cream cheese.
  • Refrigerate until Jello is set (3-4 hours).
