An old Southern recipe passed down through my grandmother. You can vary the flavor of gelatin used in order to get a specific color for any holiday, e.g. lime for St. Patrick's day. You can top this cake with berries, sprinkles, or any topping of your choice.

1 (15.25 ounce) package yellow cake mix
1 cup water
3 eggs
⅓ cup vegetable oil
¼ cup cold water
1 (3 ounce) package strawberry-flavored gelatin mix (such as Jell-O®)
¼ cup boiling water
1 (8 ounce) container whipped topping (such as Cool Whip®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Combine cake mix, water, eggs, and oil in a large bowl; beat with an electric mixer on low speed until moistened. Increase speed to medium and beat for 2 minutes. Pour batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 24 to 29 minutes. Let cool completely, at least 30 minutes.
  • Pour cold water into a bowl. Sprinkle gelatin mix on top. Let stand until softened, about 1 minute. Add boiling water and stir constantly until granules are completely dissolved.
  • Poke holes all over the cake using a fork. Pour gelatin mix into the holes. Refrigerate cake until gelatin is set, up to 6 hours.
  • Spread whipped topping over cake.

Jello Poke Cake with Butter Cream Cheese Frosting image

The cake is the standard jello poke cake, you can use white or yellow cake mix and any flavor of jello to make it in the flavor of your choice. The frosting I use is included in the link below too. These is a great summer cake or to serve when kids are around- simple and delicious!

1 box white or yellow cake mix
1- 3 oz. box jello gelatin, any flavor, regular or sugar free

Steps:

  • 1. Preheat oven as directed on cake mix box. Follow directions for making a 9X13 cake including all ingredients called for on the box. Bake cake as instructed.
  • 2. About 5 minutes before the cake is done, in a small bowl, mix jello powder and 1 1/4 cup hot water. Stir until dissolved. NOTE: You do not use the amount of water called for to make regular jello.
  • 3. When cake is done, let it cool 5 minutes. Poke the cake with a fork or a kebab pole all over the top of the cake going down to the bottom of the pan. Make sure you get the edges and corners.
  • 4. Using a tablespoon, slowly drip the dissolved hot jello over the cake, taking care to get all of the holes. Cool cale completely and put in refrigerator to continue to cool and set- about 4 hours.
  • 5. I use this frosting on my poke cakes. I sometimes match the flavor but you can mix it up to make it match holiday colors, shower color or birthday party colors. This sensational strawberry poke cake only takes 15 minutes of prep and six ingredients to make. A tender-crumbed white cake is poked and filled with strawberry Jell-O™ so each slice boasts a vibrant interior. Top with fluffy frosting and fresh strawberries for a dessert that's truly ready to party.

1 box Betty Crocker™ Super Moist™ white cake mix
Water, oil and egg whites called for on cake mix box
1 cup boiling water
1 box (4-serving size) Jell-O™ strawberry-flavored gelatin
1 container (12 oz) Betty Crocker™ Whipped fluffy white frosting
1 tube (0.68 oz) Betty Crocker™ red decorating gel
12 fresh strawberries, cut in half

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray. In large bowl, beat cake mix, water, oil and egg whites with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 28 to 32 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 20 minutes.
  • Meanwhile, in medium bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Poke cake every inch with handle of wooden spoon or tines of meat fork halfway into cake. Carefully pour strawberry gelatin evenly over top of cake. Cool completely, about 1 hour.
  • Spread frosting over top of cake. Drizzle red decorating gel over frosting. Cut into 4 rows by 3 rows. Garnish each piece of cake with strawberries.
