Steps:
- Combine the jello powder, sugar, egg white, and vanilla in a pot. Stir with a whisk on low heat.
- Slowly pour in the boiling water and mix. Turn the heat to medium and stir.
- Turn the heat up to high and continue to whisk for 5 minutes.
- Allow the frosting to cool. Shut off the stove once the frosting is creamy and thick. Let the frosting cool and chill in the fridge for about 30 minutes.
- Chill the frosting in the fridge until ready to use
- Serve. Use the frosting to top off cakes, cupcakes, brownies, sweet breads, and other desserts by using a large butter knife, spatula, or frosting pipe. Enjoy!
JELL-O MERINGUE COOKIES
These fluffy, cloudlike cookies get their pink hue and berry taste from strawberry flavor JELL-O Gelatin mix. (But feel free to use your fave flavor!)

- Heat oven to 225ºF.
- Beat egg whites and cream of tartar in small bowl with mixer on high speed 5 min. or until soft peaks form. Gradually add sugar, 1 Tbsp. at a time, beating until stiff peaks form. Gently stir in dry gelatin mix until blended.
- Drop heaping teaspoonfuls of egg white mixture into 72 mounds on parchment-covered baking sheets.
- Bake 50 min. Turn oven off. Prop oven door open slightly; let cookies stand in oven 1 hour or until completely cooled.

DO NOT USE PLASTIC and make sure your glass or metal bowl is clean of any grease or oil. Turn the mixer on HIGH and immediately add the half cup of BOILING water. Whip on high for five minutes.

- Place egg whites, sugar, and cream of tartar in the heatproof bowl of an electric mixer. Set over a saucepan with simmering water. Whisk constantly until sugar is dissolved and whites are warm to the touch, 3 to 4 minutes.
- Transfer bowl to electric mixer fitted with the whisk attachment, and beat, starting on low speed, gradually increasing to high, until stiff, glossy peaks form, 5 to 7 minutes. Add vanilla, and mix until combined. Use immediately.

- Preheat oven to 350 degrees. Line 2 1/2 standard 12-cup cupcake pans with paper liners; set aside.
- Into a medium bowl, sift together flours, baking powder, and salt; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, 3 to 4 minutes, scraping down the sides of the bowl as needed. Beat in eggs, one at a time, and then beat in vanilla. With the mixer on low speed, add the flour mixture in three parts, alternating with the milk and beginning and ending with the flour; beat until combined after each addition. Fold in strawberries.
- Divide the batter evenly among the prepared cups so that each is about two-thirds full, about 2 ounces each. Bake, rotating the pans halfway through, until the cupcakes are golden brown and a cake tester inserted in the centers comes out clean, about 20 minutes. Transfer pans to a wire rack to cool for 5 minutes. Remove cupcakes from pan and cool completely on wire racks.
- Make Strawberry Meringue Buttercream and spread or pipe about 1/2 cup frosting on top of each cupcake. Garnish with strawberries, cut into halves, quarters, or left whole, depending on the size.
JELLO MERINGUES
I've always wondered if one could flavor the popular meringue cookies with jello, but I never had the nerve to try it. Then I was given this recipe for the very thing! I cannot wait to try these.

- Preheat the oven to 225 degrees F. Move rack to center of the oven. Line cookie sheets with aluminum foil.
- Beat the egg whites and cream of tartar until foamy. Add the jello powder 2 tablespoons at a time while continuing to beat. The meringue should form stiff peaks.
- Drop mixture onto lined cookie sheets and bake in preheated oven 1 hour. Turn oven off and allow meringues to stand in unopened oven at least an hour.
- Store in tightly sealed containers.
- NOTE: If you prefer, substitute regular sugar for the jello.
- Chopped drained maraschino cherries, mini-chocolate chips or chopped nuts may be mixed into the batter.
