POTATO AND PEPPER SAUSAGE BAKE

Potato and Pepper Sausage Bake image

When my family smells this dish baking in the oven, they know they are in for a treat! If you like spice, add a pinch of red pepper flakes or switch the mild Italian sausage to hot Italian sausage. -Ashli Claytor, Chesapeake, Virginia

Sausage, Peppers, Onions, and Potato Bake image

This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

JEANNES'S BAKED SAUSAGE WITH PEPPERS & POTATOES

Jeannes's Baked Sausage With Peppers & Potatoes image

Great dish for a party, or easy meal for the family. About 20 years ago I came up with recipe while we working at our hot dog stand. Then we were catering and this was requested often. Have french bread handy, some people will make a sandwich. Make sure to pierce the sausage, the juices add such good flavor to the potatoes and veggies. And then just enjoy.
