1 prepared pie crust
1 teaspoon unsalted butter or 1 teaspoon margarine
1/2 cup onion, chopped
2 cups swiss cheese, shredded
6 slices lean bacon, cooked and crumbled
2 tablespoons flour
3 large eggs
1 cup 1% low-fat milk
1/4 teaspoon salt
1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 400 degrees. Line a 9 inch quiche dish with the pastry and flute the edges. Fill with dry beans and bake for 15 minutes or until light brown. Discard the beans and cool on a rack.
  • Meanwhile, in a 6 inch nonstick skillet, melt the butter over moderately high heat. Add the onion and saute for 5 minutes or until soft and then transfer to a medium size bowl. Toss with the cheese, bacon and flour. Spread in the pie crust.
  • In the same bowl, whisk the eggs with the milk, salt and nutmeg. Pour over the pie mixture and bake, uncovered for 35 minutes or until the center is set.

Quiche sounds so fancy and complicated but it's really simple to make. I love the fact that you can "make it your own" by changing one or two ingredients. The best part is that it can be made for breakfast lunch or dinner. Never any complaints at my house. That's for sure!

1 refrigerated pie crust (pillsbury)
1/2 lb ground breakfast sausage
1 Tbsp olive oil
1 c chopped veggies
5 large eggs
1 c half and half
1 pinch red pepper flakes
1/4 tsp dried ground mustard
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp ground thyme
1-2 pinch salt and pepper
1 1/4 c shredded cheddar cheese

Steps:

  • 1. Preheat oven according to pie crust instructions. Unroll pie crust and gently press into a pie plate crimping the edges using your fingers. Poke crust with a fork and bake the crust for approximately 5 minutes just to get it started.
  • 2. Meanwhile brown sausage in a medium skillet, drain on paper towel cool slightly. *I often use leftover chicken, roast beef, bacon bits, diced ham, sausage or a combination of two.
  • 3. While sausage is cooling use the same skillet to add 1 T olive oil & saute 1 - 1 1/2C mixed veggies diced in uniform pieces. I used 1/4 diced onion, 1/4 diced yellow bell pepper, 3 T. sliced mushrooms, 1/2 small zucchini diced. Let cool slightly. *any combination works: Chicken & broccoli or ground beef, onion, black olive w/salsa are some favorites*
  • 4. In a small mixing bowl combine eggs, half & half, red pepper flakes, mustard, garlic & onion powder, thyme, worcestershire sauce, salt & pepper and whisk really well. *using half & half (my favorite) or heavy cream makes this dish rich and decadent. Using milk just lightens this up a bit.
  • 5. Layer into pie shell browned meat, veggies, 1/2 of the shredded cheese & gently pour egg mixture over everything. Cover crust with foil and remove last 10 minutes of baking time.
  • 6. Bake at 375 degrees for 40 minutes until middle is done. *I place the quiche on a large cookie sheet to avoid boil over/spills in my oven.
  • 7. Remove from oven and top with remaining cheese and let stand for 10 minutes before serving. This is really good served room temperature too.

1/2 can(s) spinach drained set aside
1/2 roll of jimmy dean sausage cut into patties and fried then hand crumbled
1/4 c flour
1/2 pkg country gravy
4 0z or1/2 c whipped heavy cream
1 1/2 c water for making the gravy
1 potatoe diced and fried until 1/2 done then microwaved for 2 min
3 eggs beaten
1/2 small onion diced fried with potatoes
1 package country bisquits dough
1/2 c cheddar and mozzarela cheeses grated

Steps:

  • 1. Preheat oven to 400 degrees. And prepare all of your ingredients as indicated.
  • 2. Now for the gravy: In a jar add the 1/2 packet of Country Gravy and the 1/4 cup of flour. Add Cream and water and give it a shake until mixed. You will only use about 1/2 of the total amount of this for the recipe. When the recipe is cooked you can always make the remainder of gravy mix in the jar and pour over each serving.
  • 3. In a 1 1/2 quart casserole dish with a lid: Line the bottom with chunks of biscuit dough. Then crumble the Jimmy Dean Sausage over the biscuits.
  • 4. Check your potatoes and make sure they are tender and put them over the sausage. Then Beat 3 eggs and pour it over the potatoes.
  • 5. Add a layer of Cheese and then lay the remaining biscuits on top of the casserole. Pour 1/2 of the gravy mixture all over the casserole.
  • 6. Bake at 400 degrees for 35-45 minutes. Make sure that the eggs have cooked and are not runny. Do not mistake the melted cheese & gravy for runny eggs.
  • 7. Serve on a bed of canned spinach that is warm.

1 cup(s) yellow onions
1 1/2 cup(s) mushrooms, fresh
1/2 cup(s) cherry tomatoes
4 stalk(s) broccoli florets
8 slice(s) bacon
8 medium eggs
8 ounce(s) heavy cream
1 cup(s) gruyere cheese
1 package(s) pie crust shell
1/2 teaspoon(s) salt

Steps:

  • Preheat oven to 350 degrees. Place pie crust on the counter to cool while you prepare the ingredients.
  • Place bacon on grill pan or cookie sheet lined with parchment paper, and bake for 15 minutes. Remove from oven and place bacon strips on paper towels to cool and soak up the excess grease.
  • Dice all ingredients, including bacon once cooled.
  • Whisk eggs and heavy cream together in a large bowl. Do not over beat or use a hand mixer.
  • Add the remaining ingredients plus salt, and mix well.
  • Pour mixture into the pie crust, and place on the middle rack of the oven. Bake at 350 degrees for 45-60 minutes or until the center of the quiche has set. Note that the quiche will continue to cook when you remove it from the oven.
  • Let stand for 15 minutes before cutting. Serve warm or at room temperature.
