Also known as 'yasai yakisoba,' this is a healthy and quick dish with stir-fried noodles, vegetables, and a savory sauce. The recipe can be easily doubled, but this is really best for one person.

3 ounces dried soba noodles
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon mirin (Japanese sweet wine)
1 tablespoon olive oil
½ green bell pepper, chopped
¼ onion, sliced
½ cup fresh green beans, trimmed and cut into 1 1/2-inch pieces
1 cup baby spinach leaves

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Drop in soba noodles and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Drain.
  • Meanwhile, combine soy sauce, oyster sauce, and mirin in a small bowl. Set aside.
  • Heat olive oil in a skillet over medium-high heat. Add bell pepper, onion, and green beans and saute until softened but still crisp, 2 to 3 minutes. Add soba noodles and toss with the cooked vegetables. Mix in soy sauce mixture and cook for an additional 1 to 2 minutes. Add baby spinach and cook until desired doneness, 2 to 3 minutes. Serve in a bowl.

1 package (12 ounces) uncooked Japanese soba noodles or whole wheat spaghetti
2 tablespoons sesame oil
2 cups fresh small broccoli florets
1 medium onion, halved and thinly sliced
3 cups frozen shelled edamame, thawed
2 large carrots, cut into ribbons with a vegetable peeler
4 garlic cloves, minced
1 cup reduced-fat Asian toasted sesame salad dressing
1/4 teaspoon pepper
Sesame seeds, toasted, optional

Steps:

  • In a 6 qt. stockpot, cook noodles according to package directions; drain and return to pan., Meanwhile, in a large skillet, heat oil over medium heat. Add broccoli and onion; cook and stir until crisp-tender, 4-6 minutes. Add edamame and carrots; cook and stir until tender, 6-8 minutes. Add garlic; cook 1 minute longer. Add vegetable mixture, dressing and pepper to noodles; toss to combine. Sprinkle with sesame seeds if desired.

1/4 cup soy sauce
1T brown sugar
1T chopped ginger
1T chopped garlic
20 shiitake mushrooms
10-11 oz soba noodles
1 lb silken tofu
half sheet nori
green onions
sesame seeds
Chili powder or togarashi

Steps:

  • 1. make the broth Place soy sauce, 1 tablespoon each brown sugar, chopped ginger and chopped garlic, plus 1 cup water, in a pot over high heat. Next, divide 20 shiitake mushrooms into stems and caps. When soy mixture is at a boil, add caps, reduce heat and simmer 10 minutes. Remove caps; reserve. Add stems plus 5 cups water, bring to boil, reduce heat and simmer covered, 30 minutes. Discard stems. 2. cook the soba Bring a pot of salted water to a boil (if the soba noodles have salt as an ingredient, omit it from the water), add a 10- to 11-ounce package of soba, reduce to a simmer, and cook until the noodles are firm but with no crunch (similar to al dente pasta), about 3 to 6 minutes. Drain and rinse well with cold water, then divide soba into four bowls. Use a twirling motion with tongs to form soba into nest shapes. 3. spoon in tofu and mushrooms The Japanese prefer silken tofu, which has a custard-like texture. Drain a 1-pound container of silken tofu, place in bowl, heat in microwave on high for 1 minute, then scoop out with a tablespoon, dividing equally among bowls. 4 (8 ounce) packages buckwheat soba noodles
2 tablespoons vegetable oil
1 pound pork tenderloin, cut against the grain in thin strips
2 cups carrots, cut into julienne strips
1 medium onion, cut into julienne strips
1 tablespoon freshly grated ginger
3 cloves garlic, minced
½ head napa cabbage, shredded
⅔ cup yakisoba sauce
salt and ground black pepper to taste
4 tablespoons pickled red ginger (beni shoga), or to taste
4 tablespoons kizami nori (dried flaked aonori seaweed), or to taste

Steps:

  • Bring a large pot of water to a boil. Cook soba in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 5 to 8 minutes. Drain noodles and rinse with cold water. Set aside.
  • Heat oil in a wok over medium heat. Add pork and stir-fry with a pinch of salt and pepper, about 5 minutes. Transfer meat to a plate, reserving oil in wok. Add carrots, onion, ginger, and garlic to the wok and stir-fry for 3 to 4 minutes.
  • Add cabbage to the wok and stir-fry briefly, about 1 minute. Add drained soba noodles. Pour in 1/2 the yakisoba sauce and stir-fry until noodles and vegetables are covered with sauce, about 3 minutes. Return pork to the wok. Add additional sauce as desired. Remove from heat.
  • Garnish yakisoba with kizami nori and a small pile of beni shoga just before serving.
