Japanese Fruit Pie. Oh mercy. This pie. This old fashioned, simple, incredibly delicious pie...it wants you to take a bite.

1/2 cup raisins
1 cup boiling water
1/2 cup butter (at room temp (unsalted or salted, whatever you have))
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1/2 cup pecans (chopped)
1/2 cup sweetened shredded coconut
9 inch pie crust (unbaked (you don't need deep dish, regular is fine))

Steps:

  • Preheat oven to 350. Place raisins in a small bowl and cover with boiling water, set aside for five minutes and then drain.
  • Cream together the butter and sugar in a large mixing bowl with an electric mixer until fluffy. Add eggs and beat again until well incorporated, 1-2 minutes.
  • Add all other ingredients and stir by hand until well incorporated. Pour into pie shell.
  • Bake 35-40 minutes, or until set in the center. Allow to cool completely and then cover and refrigerate several hours before serving.

1 recipe pastry for a 9 inch double crust pie
4 tablespoons quick-cooking tapioca
⅛ teaspoon salt
1 cup white sugar
4 cups pitted cherries
¼ teaspoon almond extract
½ teaspoon vanilla extract
1 ½ tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Place bottom crust in pie pan. Set top crust aside, covered.
  • In a large mixing bowl combine tapioca, salt, sugar, cherries, and extracts. Let stand 15 minutes. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges and cut vents in top. Place pie on a foil-lined cookie sheet--in case of drips!
  • Bake for 50 minutes in the preheated oven, until golden brown. Let cool for several hours before slicing.

½ cup slivered almonds
½ cup light brown sugar
⅓ cup rolled oats
⅓ cup all-purpose flour
¾ teaspoon salt
6 tablespoons cold, unsalted butter, cut into pieces
2 pounds cherries, pitted
½ lemon, juiced
⅓ cup white sugar, or more to taste
¼ cup cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Roll out pie crust and lay into a 9-inch pie pan.
  • Combine almonds, brown sugar, oats, flour, and salt in a large bowl. Work butter into the almond mixture with your fingers, breaking up any large pieces, until incorporated completely. Cover and chill for 15 minutes.
  • Combine cherries, lemon juice, white sugar, and cornstarch. Stir until well coated and no dry lumps remain, 3 to 4 minutes.

3 cups cherries, pitted
¾ cup white sugar
3 tablespoons cornstarch
¼ teaspoon almond extract
2 tablespoons salted butter, cut into bits

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Place bottom pie crust into a 9-inch pie pan; made pricks along the bottom with a fork.
  • Bake in the preheated oven until pie crust is lightly browned, about 8 minutes. Remove crust from oven and cool for 5 minutes.

6 tablespoons butter, cubed
4 ounces reduced-fat cream cheese
2/3 cup heavy whipping cream
1/4 cup all-purpose flour
1/4 cup cornstarch
6 large egg yolks, room temperature
2 teaspoons vanilla extract
1-1/2 to 2 teaspoons grated lemon zest
12 large egg whites, room temperature
3/4 cup sugar
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon cayenne pepper, optional
2 cups fresh or frozen pitted tart cherries
1/2 cup water
1 tablespoon butter
Confectioners' sugar

Steps:

  • Preheat oven to 325°. Place a 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan. Line bottom and inside of pan with parchment; set aside., In a small saucepan, cook and stir butter and cream cheese over medium heat until melted. Remove from heat; whisk in cream until smooth. Let cool completely., Sift flour and cornstarch together twice; place in a large bowl. In a small bowl, whisk egg yolks, vanilla, zest and cooled cream cheese mixture until smooth. Add to flour mixture; beat until well blended., In a large bowl with clean beaters, beat egg whites on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until soft glossy peaks form. Fold a fourth of the whites into batter, then fold in remaining whites. Gently transfer to prepared pan. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan., Bake for 25 minutes. Reduce oven setting to 280°. Bake until top is puffed, springs back when lightly touched and center appears set, 55-65 minutes longer., Meanwhile, for topping, in a small saucepan, mix sugar, cornstarch and if desired cayenne. Whisk in water until smooth. Add cherries; cook and stir over medium heat until thickened and bubbly, about 5 minutes. Remove from heat; whisk in butter. Cool completely., Remove springform pan from water bath. Loosen sides from pan with a knife; remove foil. Remove rim from pan; remove paper. Serve cheesecake warm with confectioners' sugar and cherry topping. Refrigerate leftovers.

1 teaspoon vanilla extract
1 tablespoon distilled white vinegar
½ cup chopped pecans
½ cup shredded coconut
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium mixing bowl combine eggs, butter or margarine, sugar, vanilla extract, and vinegar. Beat until smooth. Stir in pecans, coconut, and raisins. Pour mixture into pastry shell.

I created this recipe, inspired by the thought of those beautiful pink blossoms. It's very sweet and, at the same time tart. It travels well and is great for potlucks and...

1 unbaked deep dish pie shell
1 1/2 stick salted butter
1 1/2 c granulated sugar
5 oz sweetened dried tart cherries, lightly chopped or halved
3/4 c pecan pieces
3/4 c sweetened flaked coconut
3 large eggs, beaten

Steps:

  • 1. Gather and prep ingredients.
  • 2. Place pie shell on a rimmed baking sheet; set aside.
  • 3. Place oven rack in middle position; preheat oven to 300ºF.
  • 4. In a medium saucepan, melt butter over medium-low heat.
  • 5. Shut burner off and remove from heat.
  • 6. To the butter, add sugar, cherries, pecans and coconut; mix thoroughly.
  • 7. Add beaten eggs; mix very thoroughly.
  • 8. Pour into pie shell and smooth.
  • 9. Bake at 300ºF for 1 hour and 10-15 minutes, turning at halfway point, until pie is very lightly browned over entire top and no longer very jiggly in center.
  • 10. Remove from oven; allow to cool at room temperature for at least 1 hour before refrigerating for at least 1 additional hour to set.
  • 11. Refrigerate leftovers. Travels well.
