Kids these days can't get enough chicken nuggets! So here is another nugget recipe and this sauce is absolutely to die for!

Number Of Ingredients 13

4 boneless chicken breast, cut size for nuggets
2 c flour
1 Tbsp black pepper (optional)
2 tsp garlic salt
2 eggs
1 c pickle juice
2 Tbsp milk
oil for deep frying
JAN SAUCE
1 c mayonnaise
1/2 c powdered sugar
2 Tbsp apple cider vinegar
8 dash(es) tobasco (or more to taste) i like more!

Steps:

  • 1. Cut chicken up in nuggets size portions. Let the nuggets marinate in the pickle juice mixture for 20-30 minutes.
  • 2. Beat egg, milk and pickle juice together in a medium size bowl.
  • 3. On a large plate toss together flour, garlic salt, and black pepper.
  • 4. Coat marinated chicken in the flour mixture until covered and fry until brown.
  • 5. JAN SAUCE: Combine all ingredients until smooth.

1 (17 -34 ounce) can canned sauerkraut, drained
6 slices bacon
1 small onion

Steps:

  • Fry bacon until just about crisp.
  • Place on a paper towel to drain fat.
  • Discard fat from frying pan except for about 1 tablespoon.
  • Chop onion into 1 inch pieces.
  • Place in pan and saute until translucent.
  • Place on same paper towel to drain fat.
  • In a large pot, place sauerkraut,1 or 2 cans of water, bacon and onion.
  • Cook sauerkraut at least one half hour.
  • Add salt and pepper to taste.
  • Serve.
  • Tastes better the next day.
  • Optional- You can cook a link (1 pound) of fresh Polish sausage for added flavor and use the meat as part of your meal.

1 cup unsalted butter, at room temperature
2 tablespoons sriracha sauce, or to taste
1 tablespoon honey
5 cloves garlic, minced
¼ teaspoon salt
1 pinch ground black pepper

Steps:

  • Stir butter, sriracha sauce, honey, garlic, salt, and pepper with a rubber spatula in a bowl until smeared and blended together.
  • Scoop butter mixture onto a large piece of plastic wrap. Roll up into a log; twist ends of the plastic together to tighten up the log. Refrigerate until thoroughly chilled, about 1 hour. Slice into 1/4-inch pats and place on a chilled plate.

JAN'S SUPER SAUCE

This is a recipe made by a very special friend of ours. Although my version never seems to be quite the same (or quite as good), it's still my favorite quick meat sauce. Exceptional with pasta. Leftovers make a great "Italian" sloppy joe on garlic bread. I make two batches and freeze the sauce for a busy night.

1 medium onion, chopped
2 tablespoons garlic, chopped (jarred or fresh)
3 Italian sausages, casing removed and crumbled
1 lb ground beef
2 (24 ounce) jars prego chunky garden combination pasta sauce
1 (14 ounce) can diced tomatoes (optional)
1 cup parmesan cheese, grated
flour (optional)

Steps:

  • Saute the onion until tender, add the garlic and cook for a couple minutes in a large pot. Remove and set aside.
  • Brown the sausage and ground beef until fully cooked. Drain and return the meats and onion/garlic mixture back in the pot.
  • Add the sauce and cheese and simmer for 30-45 minutes.
  • If a thicker sauce is desired, mix a little flour w/ water and add to sauce, simmer another five minutes.

Quick, easy and definitely delicious. Spicy sausage and creamy cavatelli is tossed with tangy broccoli rabe in a delicate chicken and wine sauce. I also use gnocchi in place of the cavatelli on occasion.

2 pounds ricotta cavatelli
1 pound broccoli rabe, chopped
1 tablespoon butter
1 tablespoon olive oil
1 pound Italian sausage, removing from casings and cut into bite-size pieces
1 large onion, diced
10 ounces roasted red peppers, cut into 1-inch strips
1 tablespoon chopped garlic
2 tablespoons concentrated chicken stock (such as Knorr®)
½ cup dry white wine
½ cup water
1 ½ teaspoons cornstarch
1 pinch salt and ground black pepper to taste
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook cavatelli in the boiling water, stirring occasionally until tender yet firm to the bite, 9 to 11 minutes. Drain.
  • Fill the same pot with salted water and bring to a boil. Add broccoli rabe; cook until tender, 7 to 10 minutes. Drain.
  • Heat butter and olive oil in a large skillet over medium heat. Add sausage and onion; cook and stir until sausage is no longer pink, 5 to 7 minutes. Stir in broccoli rabe, roasted red peppers, and garlic. Cook until flavors combine, about 5 minutes.
  • Dissolve chicken stock with white wine and water in a small bowl. Whisk in cornstarch. Pour chicken stock mixture into the skillet. Season with salt and pepper. Bring sauce to a simmer until slightly thickened, 3 to 5 minutes. Remove from heat.
  • Pour sauce over cooked cavatelli and top with Parmesan cheese. Toss lightly and serve.

I love this spicy BBQ sauce. It has a slight burn on the lips! To adjust the heat, add more or less cayenne.

2 cooked chicken breasts (skin and bones removed), sliced into strips

Steps:

  • Pour 1/4 cup broth into a large pan with a lid; bring to a simmer. Add peppers and onions. Simmer until softened, about 3 minutes. Add black beans and simmer for an additional 2 minutes. 1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon unsalted butter
1 tablespoon olive oil
2 shallots, minced
2 tomatoes, peeled, seeded and diced
1/2 cup chicken broth (or 1/2 white wine)
3 tablespoons capers, drained
1 1/2 lemon, juice and zest of
1/2 lemon, thinly sliced
6 artichoke hearts, cut in bite size pieces (I use frozen but you may use jared in water artichokes)
3 tablespoons parmesan cheese
1/4 cup fresh parsley
8 ounces linguine

Steps:

  • Between 2 pieces of plastic wrap, flatten chicken breasts to 1/4 inch thickness.
  • Mix together salt,pepper and flour.
  • Dredge chicken in flour mixture,shake off excess flour and set aside.
  • Heat oil in large skillet-saute chicken til lightly browned,set aside and keep warm.
  • In drippings, add shallots,cook til wilted.
  • Add broth or wine,tomato,artichokes,capers and lemon slices,zest and juice. Cook on medium high heat for 5 minutes.
  • Return chicken to pan and cook sauce til thickened. Add butter and allow to gently melt into sauce.
  • Meanwhile, cook linguine til al dente.

I developed this recipe several years ago when my three children were young. They are all on their own now, and make my spaghetti recipe regularly. Everyone who's ever tried it loves it! Very yummy! Serve with grated Parmesan cheese if desired.

1 pound Italian sausage links
1 pound ground turkey
1 onion, chopped
