JAMBALAYA GRITS CASSEROLE

This casserole is fabulous and full of so much flavor. At first glance, we thought this would be great for brunch or as a side dish. But once we tried it, we realized it would be hearty enough to be a meal by itself too. Rotel tomatoes give a little punch of spice. The grits are creamy and the sausage gives a nice smoky flavor....

1 onion, chopped
1/2 bell pepper, chopped
1 stalk(s) celery, chopped
salt, black pepper, red pepper to taste
1 Tbsp garlic, minced
1 can(s) Rotel tomatoes, 10 oz.
1 c diced ham
1 lb diced smoke sausage
1/2 lb peeled cooked shrimp
6 c milk
2 c quick cooking grits
1 c cheddar cheese, shredded
1/4 c sliced green onions (for garnish)

Steps:

  • 1. Saute onions, bell pepper, celery, Rotel and minced garlic until soft.
  • 2. Add sausage and shrimp. Saute until most of the natural juices are gone.
  • 3. Add milk.
  • 4. Add salt, pepper, and red pepper.
  • 5. Add grits.
  • 6. Cook on medium heat and stir until thick and creamy.
  • 7. Pour into buttered 9x13 casserole dish.
  • 8. Bake at 350 degrees for 20 minutes.
  • 9. Remove from oven. Top with grated cheese. Set back in oven until cheese melts (about 5 minutes).
  • 10. Then remove from oven and sprinkle with green onions.

Got the idea from my boss at work. Couldn't get the recipe, but I came up with my own.

Number Of Ingredients 15

2 c uncooked regular grits
16 oz water
2 c whipping cream
1 can(s) cheddar cheese soup
1 can(s) rotel tomatoes, drained
1 c whole kernel corn, drained
1 jalapeno pepper, minced
1 1/2 tsp salt
1 1/2 tsp louisiana hot sauce
1/4 tsp black pepper
1 c frozen seasoning mix
1 lb smoke sausage, diced
1 tsp garlic
1 stick butter
1 Tbsp olive oil

Steps:

  • 1. Heat olive oil and butter. Add the seasoning mix, jalapeno, black pepper, and salt. Cook about 4 minutes until vegetables become soft.
  • 2. Add sausage and cook about 2 minutes. Add garlic, hot sauce, and Rotel.
  • 3. Place in crock pot on low.
  • 4. Whisk broth, whipping cream, and cheddar cheese soup. Add corn and stir in grits. Combine with ingredients in the crock pot and cook on low for 4 1/2 hours. Stir after 3 hours. Serve warm.

1T olive oil
1c chopped onions
1/2 c chopped green pepper
1/2 c chopped celery
1 1/2 tsp salt
1/8 tsp pepper
1/2 tsp cayenne
1/4 lb andouille or other smoked sausage, cut into 1/4" thick slices
1/4 c ham, diced small
1 T chopped garlic
1/2 c peeled, seeded and chopped vine ripe tomato
6 c milk
2 c quick cooking grits
1/2 lb med shrimp
1/4 c green onions
1/4 lb sharp white cheddar cheese, grated

Steps:

  • 1) In large heavy pot saute onions, gr pepper, celery, salt bl pepper and cayenne in olive oil 2) Add sausage and ham, cook 2 min 3) Add garlic and tomato, cook 2 min; Add milk and bring to boil; Reduce heat to med and add grits 4) Stir for 2 min and add shrimp; Cook til grits are done, stirring 5) Stir in gr onions and cheese

Number Of Ingredients 9

2 tablespoons bacon grease
2 tablespoons flour
1/2 cup chopped onion
1 green bell pepper, chopped
1/2 cup chopped celery
1 cup quick cooking grits
3 fresh tomatoes, peeled and chopped (about 1 cup)
1 cup ground ham
bacon, cooked and crumbled

Steps:

  • In a heavy skillet, heat bacon grease and gradually add flour, stirring constantly, until roux becomes light brown. Add onion, green bell pepper, and celery; cook 5 minutes. Cook grits according to package directions and add to roux. Add tomatoes and ham. Sprinkle with bacon and serve immediately.
