This recipe is from a community cookbook: "Me Dor L'Dor-- Generation to Generation---The Charles T Sitrin Home Guild's Kosher Cookbook" 1985 The contributor was Betty IIlfelder. Easy recipe that tastes great! I have made some adjustments to the directions ( so that they are easier and more complete).

Number Of Ingredients 10

3 cups sifted cake flour
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
2 cups diced bananas
1 (8 ounce) can crushed pineapple in syrup
1 1/2 cups vegetable oil
2 cups sugar
3 eggs, beaten
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven the 350°F.
  • Sift together dry ingredients.
  • Add the bananas, undrained pineapple/syrup, sugar, eggs, and vanilla.
  • Stir all together but do not beat.
  • Pour into greased Bundt pan.
  • Bake for approx 1 hour to 1 hour 15 minutes-keep checking for doneness when a wooden toothpick comes out clean.
  • Let cake sit in pan fro about 10 minutes then remove and cool on a rack.
  • When cake is cool, sprinkle with powdered sugar.

Another nanner recipe. I didn't think there was anything particularly Jamaican about this, but I love the moist cake with the coconut topping. Two of the things I love...nanners and coconut!

2/3 cup butter
2 1/2 cups self-rising flour
1 2/3 cups sugar
1 1/4 cups mashed ripe bananas (3 bananas)
2/3 cup buttermilk
2 eggs
2/3 cup chopped walnuts
1 1/2 cups packed dark brown sugar
2/3 cup butter
2 tablespoons milk
2 cups flaked coconut
2/3 cup chopped walnuts

Steps:

  • Cake: Preheat oven to 350 degrees.
  • Cream butter. Add dry ingredients, bananas, and buttermilk. Mix slightly. Add eggs and beat at medium speed for 3 minutes.
  • Fold in walnuts.
  • Pour into a greased and floured 9 x 13-inch pan. Bake for about 35 minutes or until very well browned and toothpick inserted into the center comes out clean. When cool, prepare topping.
  • Coconut Topping: Set oven to broil.
  • Mix butter, sugar, and milk in a medium saucepan over medium heat, stirring until butter melts.
  • Add coconut and walnuts.
  • Pour and spread over cooled cake.
  • Place under broiler (not too close) and broil for 2 to 3 minutes or just until coconut begins to brown. Cool.

My kids don't really care for frosting on cakes. I've used this topping on a plain yellow snack cake recipe, but I'll bet this banana cake is pretty good too.

nonstick cooking spray, with
flour
2/3 cup butter
1 1/4 cups sugar
1 teaspoon vanilla extract
2 eggs
1 cup milk
1 cup mashed banana (about 2 medium)
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts (optional)
1/3 cup butter
3/4 cup firmly packed brown sugar
2 tablespoons milk
1 cup flaked coconut
1/3 cup chopped walnuts

Steps:

  • HEAT oven to 350ºF. Spray a 13x9-inch pan with no-stick flour spray.
  • CREAM butter, sugar, vanilla and eggs in large bowl until creamy and slightly fluffy. Add milk, bananas, flour, baking powder, baking soda and salt. Beat at low speed of electric mixer until blended, scraping bowl constantly. Beat at medium speed 3 minutes, scraping bowl occasionally. Stir in nuts. Pour into prepared pan.
  • BAKE for 40 to 45 minutes, or until golden brown and wooden pick inserted in center comes out clean. Cool 5 minutes.
  • SET oven to broil. Combine butter, brown sugar and milk in small saucepan. Cook on medium heat, stirring constantly about 2 minutes, or until shortening melts. Stir in coconut and nuts. Spread over warm cake. Broil 4 inches from heat for 2 to 3 minutes, or until golden brown, watching carefully. Cool completely.
