DUCK JALAPENO POPPERS

Jalapeno stuffed with fresh duck, cream cheese, pepper jack cheese, and wrapped in thick bacon.

2 duck breast halves
2 cups water
2 tablespoons salt
1 tablespoon ground chipotle pepper (such as Mrs. Dash Southwest Chipotle Seasoning Blend®)
¼ cup apple cider vinegar
2 tablespoons Worcestershire sauce
1 teaspoon monosodium glutamate (such as Ac'cent®)
1 teaspoon garlic powder
5 drops hot pepper sauce
8 jalapeno peppers - stemmed, seeded, and halved lengthwise, or to taste
1 (8 ounce) package pepper Jack cheese, sliced, or to taste
1 (8 ounce) package cream cheese
8 thick slices bacon, or to taste

Steps:

  • Clean and rinse duck breasts thoroughly in cold water. Cut into 1/4-inch slices and place in a resealable plastic bag with water and salt. Refrigerate for 2 to 3 hours. Remove from bag and rinse again under cold running water.
  • Combine duck, ground chipotle pepper, vinegar, Worcestershire sauce, monosodium glutamate, garlic powder, and hot pepper sauce in a resealable plastic bag. Refrigerate until well marinated, 2 to 3 hours more.
  • Fill jalapenos with pepper Jack cheese and cream cheese. Top with marinated duck. Cut bacon strips in half and wrap each stuffed pepper with a bacon strip. Secure with a toothpick.
  • Preheat an outdoor grill for 400 degrees F (204 degrees C) and lightly oil the grate. Cook jalapeno peppers, flipping once or twice, until bacon is browned, about 15 minutes.

Whole Duck Marinated in Soy Sauce-Cilantro-Ginger-Jalapeno-Garlic and Brown Sugar image

1 1/2 gallons soy sauce
1 1/2 pounds ginger, cleaned, julienned and diced
4 cups brown sugar
20 medium cloves garlic, sliced
10 slices jalapeno
1 1/2 bunches fresh cilantro, julienned (not chopped)
Two 7-pound ducks

Steps:

  • Mix together the soy sauce, ginger, sugar, garlic, jalapenos and cilantro in a large container. Submerge the ducks in the marinade and marinate in the refrigerator for 72 hours.
  • Preheat charcoal embers in a gas grill, or prepare an electric grill for indirect/low heat. Remove the ducks from the marinade and spear with metal churrasco swords or large metal skewers. Cook over embers, turning frequently, for 4 hours.

1/2 cup soy sauce
1/4 cup finely diced garlic
1/4 cup olive oil
salt
fresh ground black pepper

6 jalapeño peppers, whole
bacon strips, good quality

Steps:

  • Using as many breasts as you want, filet each side of duck breast off breast bone. Remove any excess fat, skin, or tendons. Lay each 1/2 breast flat. With filet type knife, at a 45° angle, thinly slice across the grain of the breast. Four or five slices can be made from each breast half.In glass bowl or baking pan, add soy sauce, finely diced garlic, and olive oil. Add salt and fresh ground pepper. Add breast pieces and marinate approximately 1 hour. To boiling water add whole jalapeno peppers. Boil approximately 5 minutes, remove from water and add to ice bath. This is important to stop the peppers from cooking further, and firm up the meat. After thoroughly cooled down, remove stem, and slice peppers in lengthwise direction. Remove seedpod with spoon. Slice each pepper into three to five strips. Cut bacon strips into thirds or halves, depending on the length of the filets of duck. Lay one strip of bacon down, then add a filet of duck meat, then roll up with a slice of the pepper in the middle. Secure with toothpick. On sheet pan or baking dish, bake in hot oven until bacon is CRISPY. A light layer of aluminum foil over the baking pan will prevent grease splattering.
