CREAMED CORN WITH JALAPENOS
A combination of puréed corn and whole corn kernels make up this creamy side dish recipe. If you don't want this dish too spicy, use only the flesh of the jalapeños and discard the seeds, which hold most of the heat in the pepper.

Steps:
- Melt butter in a heated large straight-sided skillet over medium heat. Add shallot and jalapeno. Saute for 2 minutes.
- Puree 1/2 bag of corn in food processor or blender. Add pureed corn and remaining frozen corn to pan. Add cream, water, and cheese. Stir and cook until cheese is melted, about 2 to 3 minutes. Season with salt and serve warm.
SKILLET CORN WITH JALAPENO
Steps:
- Remove the husks and silks from the corn and use a sharp knife to slice the kernels off the cob.
- Melt the butter with the oil in a large skillet (cast iron works well) over medium heat. Add the corn and diced jalapeno and cook, stirring occasionally, until corn is just starting to get tender, about 10 minutes.
- Sprinkle the sugar over the top and season with salt and pepper, to taste. Continue to cook, stirring, for another 2 to 3 minutes, or until corn is tender to your liking and some of the kernels are beginning to brown slightly and caramelize. Serve immediately.

- 1. Grease an 8X8 pan or casserole dish. Preheat overn to 350 degrees. Drain corn. In saucepan or microwave safe bowl, melt butter. Mix room temperature cream cheese with butter until well blended.
- 2. Add all other ingredients and stir well.
- 3. Bake at 350 for 25- 30 minutes until bubbly.
- 4. NOTE: If using fresh jalapeño, use plastic cooking gloves to protect your hands when cleaning out the seeds and chopping it. The oil from the jalapeño can be very irritating to skin.

- Preheat oven to 350°. Place half of corn in a greased 8-in. square baking dish. Top with jalapeno slices and remaining corn. In a small saucepan, melt butter. Whisk in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened and bubbly., Stir in cream cheese just until melted. Pour over corn.
