For the steak and marinade:
1 medium jalapeño, thinly sliced
2 garlic cloves, finely chopped
1/4 cup coarsely chopped cilantro
1/4 cup fresh lime juice
1/4 cup olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 teaspoon ground cumin
1 pound skirt steak, cut crosswise into 5-6-inch segments
For the tacos:
8 (8-inch) corn tortillas
Homemade or store-bought tomatillo salsa (for serving)
1/2 medium avocado, sliced
1/3 cup sour cream, thinned with a tablespoon of water or lime juice
Crumbled queso fresco (optional), cilantro leaves, thinly sliced red onion, and lime wedges (for serving)

Steps:

  • Marinate and cook the steak:
  • Combine jalapeño, garlic, cilantro, lime juice, oil, salt, pepper, and cumin in a large resealable bag or bowl. Add steak and toss to coat; if using bowl, wrap with plastic. Marinate at least 30 minutes at room temperature or chill up to overnight in refrigerator, tossing occasionally.
  • Let steak sit at room temperature 30 minutes before cooking if chilled. Prepare a grill or grill pan for medium-high heat. Remove steak from marinade, scraping off any bits that cling to meat; discard marinade. Grill steak 2-3 minutes per side for medium rare. Let rest 10 minutes before thinly slicing against the grain.
  • Assemble the tacos:
  • Warm tortillas in a microwave, oven, or over a gas flame. Divide steak among tortillas, then top with salsa, avocado, sour cream, queso fresco, if using, cilantro, and onion. Serve with lime wedges alongside.

2 green bell pepper, sliced into thin strips
1 large onion, sliced into thin rings

12-ounces Kraft Philadelphia Spicy Jalapeño Cream Cheese
1 teaspoon Worcestershire sauce
8 slices provolone cheese
8 pretzel rolls or other roll of choice for slider buns
salt and pepper to taste
2 to 3 tablespoons butter

Steps:

  • Heat oven to broil. Slice pretzels rolls in half and lightly butter each side. Arrange on a baking sheet and set aside. Melt 1 tablespoon butter in a large saucepan over medium heat. Add bell pepper, onion, and garlic and sauté until golden and soft. Remove from pan and set aside. Melt another tablespoon or 2 of butter in the pan and add sliced beef separating slices. Season with salt and pepper to taste and cook until meat is browned and cooked through, about 5 minutes. Stir in jalapeño cream cheese. You can always add more or less depending on how cheesy you want it. Remove from heat. Place about 1/4 a cup of meat on the bottom half of each roll. Top with a spoonful of pepper and onion mix. Top with a slice of provolone cheese. Broil in the oven until the provolone is melted and buns are toasted. COOK'S NOTE: If you can't find the Spicy Jalapeño Cream Cheese, make your own mixing 12-ounces cream cheese with 1 to 2 tablespoons diced jalapeño, making as mild or as spicy as you'd like. Using finely sliced beef chuck roast makes the meat really tender and perfect for cheese steak sandwiches. Most grocery store butchers will slice it for you, just tell them you're making cheese steak sandwiches with it!

1 tablespoon butter or 1 tablespoon oleo
1/4 cup evaporated milk

  • Grill, broil or pan fry steaks to your preference.
  • In a fry pan add butter chopped onion and chopped jalapeno (if less heat wanted seed and devein peppers) and cook for 1-2 minutes.

1 lb skirt steak
1 teaspoon chili powder
1 tablespoon olive oil
4 jalapeño peppers, stemmed, seeded and sliced lengthwise
2 red onions, thinly sliced
2 tablespoon Worcestershire sauce
1 tablespoon lemon juice
2 teaspoons kosher salt
12 corn tortillas
1/4 cup cilantro leaves
1 avocado, diced
Lime wedges

Steps:

  • Heat broiler. Rub steak with chili powder and season with salt; set aside. In a pan over medium heat, heat oil; cook jalapeño and half the onion,stirring frequently, until soft, 8 to 10 minutes. Remove from heat and cool to room temperature; transfer to a blender or food processor and process with Worcestershire, lemon juice and 2 teaspoons salt until just blended. On a broiler pan, broil steak, flipping once, to desired doneness, about 5 minutes for medium-rare. Transfer steak to a cutting board, let rest for 3 minutes and cut into 1-inch strips. 1 pound (4 pieces) "cubed" sirloin steak
2 cups your favorite hickory smoked BBQ sauce
1/4 cup scallions, chopped
2 tablespoons chopped fresh garlic
1 tablespoon chopped fresh rosemary leaves
1 whole jalapeno pepper, sliced thin
1/4 cup canola oil, plus 2 tablespoons, plus more oil for grill
1 large Vidalia onion, sliced 1/4-inch thick
4 kaiser rolls, split in half
2 tablespoons butter, melted
8 slices Cheddar
Coleslaw and dill pickles, as an accompaniment

Steps:

  • Pierce the steaks with a fork to make numerous holes.
  • In a medium bowl, mix BBQ sauce, scallions, garlic, rosemary, and jalapeno pepper. Remove 1/2 cup of mixture and reserve for rolls. Add 1/4 cup oil and the steaks to the bowl and let marinate for 30 minutes, or up to 2 hours.
  • Preheat grill to medium and oil grates.
  • Place steaks on the oiled grill and grill 3 to 4 minutes on each side. Remove steaks to a plate and set aside.
  • Rub grill with 2 tablespoons oil. Grill onions until desired char marks are made. Brush the cut sides of the rolls with melted butter and toast (or grill); set aside. Top each steak with 2 slices of cheese and some grilled onions. Place the steaks back on the grill, and cover until cheese is melted. Spread toasted buns with the 1/2 cup of reserved sauce, if desired, and place the steaks on the bottom half of the rolls. Cover with the top halves and serve with coleslaw and pickles.

vegetable oil (for oiling grill)
1 (4 1/2 ounce) jar jalapeno-stuffed green olives
1 cup coarsely chopped parsley
2 garlic cloves, peeled
2 tablespoons rosemary
1 tablespoon lemon zest
1/4 cup olive oil
1 (1 1/2 lb) flank steaks

Steps:

  • Preheat barbecue to high heat.
  • Brush grill with medium coat of oil.(Charcoal grills-before heating/gas grills- after heating.).
  • Rinse olives and drain well.
  • Mix olives, garlic, parsley, rosemary, and olive oil in blender or food processor until mixture forms a fine paste.
  • Separate 1/2 cup to spread on steak.
  • Rinse flank steak and pat dry.
  • With tip of sharp knife, make shallow diagonal cuts about 1 inch apart on one side of the steak. Then make perpendicular cuts over the first ones to make a diamond pattern.
  • Repeat cuts on reverse side of steak.
  • Spread 1/2 cup of the olive tapenade paste over both sides of the steak, coating evenly.
  • Place on grill; close lid.
  • Cook until browned, 8-10 minutes.
  • Turn steak and continue to cook until desired doneness. (about 2 minutes for rare, 4 minutes for medium-rare.).
  • Remove to clean platter; let reast 5 minutes.
  • Cut in thin, slanting slices across the grain.
  • Serve.
  • Extra tapenade that was not used on steak can be served on the side on toasted baguettes or mix with softened cream cheese for a delicious veggie dip.

How to make Spicy Jalapeno Philly Cheese Steak Sliders

1-1.5 lb beef chuck roast, shaved into thin slices (most grocery store butchers will do this for you)
2 green bell pepper, sliced into thin strips
1 large onion, sliced into thin rings
2 cloves garlic, minced
12 oz Kraft Philadelphia Spicy Jalapeno Cream Cheese
1 tsp Worcestershire sauce
8 slices provolone cheese
8 pretzel rolls (or other roll of choice for slider buns)
salt and pepper
2-3 tbsp butter

Steps:

  • Heat oven to broil. Slice pretzels rolls in half and lightly butter each side. Arrange on a baking sheet and set aside. Melt 1 tbsp butter in a large saucepan over medium heat. Add bell pepper, onion, and garlic and saute until golden and soft. Remove from pan and set aside. Melt another tablespoon (or two) of butter in the pan and add sliced beef (separating slices). Add worcestershire and season with salt and pepper (to taste) and cook until meat is browned and cooked through (about 5 minutes). Stir in jalapeno cream cheese. (You can always add more or less depending on how cheesy you want it). Remove from heat. Place about 1/4 a cup of meat on the bottom half of each roll. Top with a spoonful of pepper & onion mix. Top with a slice of provolone cheese. Broil in the oven until the provolone is melted and buns are toasted.

JALAPENO POPPERS-STEAK STUFFED

FILLER
8-12 oz cream cheese
1-2 tsp minced garlic
1-12 dash(es) salt and pepper
8-10 oz beef sirloin steak, boneless
JALAPENOS AND BATTER
12 jalapeno peppers halved and seeded
2 c flour
1-2 Tbsp garlic powder
1-2 Tbsp onion powder
1-2 tsp cayenne pepper
1-2 tsp salt and pepper
12 oz beer

Steps:

  • 1. For the Filler: Cut steak into 1/4 inch cubes. Saute in non-stick pan with garlic, salt, and pepper. You can add oil or cooking spray. This saute only takes a few minutes as the steak chunks should be small. When that is complete, mix with cream cheese in a quart size bowl.
  • 2. Batter: These are rough guidelines for a beer batter. Any recipe you may have that you like can be used. Mix dry ingredients according to taste in a medium sized metal mixing bowl. Add beer while mixing with a wisk until you reach the consistency of a thick pan cake batter.
  • 3. Process: Heat deap fryer to 350 degrees with any kind of oil you desire. I recommend Crisco, vegetable, or Peanut oil. Stuff jalapeno's with filling and dip into batter with a spoon. Gently place into deep fryer. Only cook 5-6 at a time as you don't want the tempurature to drop drastically. Fry until golden brown, typically 5-6 minutes. Use slotted metal spoon to retreive. Let drain on paper towels.

1 pkg (16 oz.) frozen bell pepper & onion rings, thawed, drained.
1/2 lb. (8 oz) Velveeta Mild Mexican Cheese

Steps:

  • Spray large skillet with cooking spray. Add steak; cook on high heat 5 - 8 min. or until no longer pink; stirring occasionally. Add vegetables, cook and stir 2 min. Reduce heat to medium-low. Add Mexican Velveeta, cook until melted, stirring frequently. Serve over hot, cooked rice.
