GRILLED STUFFED JALAPENO CHILES WITH GRILLED RED PEPPER-TOMATO SAUCE
Steps:
- Heat grill to medium.
- Whisk together the cream cheese and goat cheese in a medium bowl until smooth. Fold in the Cheddar, corn and green onions and season with salt and pepper. Fill each jalapeno half with about 2 tablespoons of the mixture and sprinkle the top with some of the ancho powder.
- Place on the grill, filling-side up and cook until slightly charred and tender, about 7 to 8 minutes. Spoon the red pepper sauce onto a platter and top with the jalapenos.
- Combine the pepper, tomatoes, vinegar, honey and cilantro in a food processor and process until smooth. With the motor running, slowly add oil and season with salt and pepper.
CHICKEN WINGS WITH JALAPENO PEPPER SAUCE
This one is a bit spicy. The wings are baked, and not fried and then tossed in sauce, making them a bit lighter than some wings. I love this while watching a good ball game. Serving size is for 8 appetizer sized servings....if using for a main dish, use your judgement!

Steps:
- Combine the first 9 ingredients in the container of an electric blender and process for 30 seconds or until the mixture is well blended. Set the sauce mixture aside.
- Remove and discard the chicken wing tips. (You can use them for stock if you want to). Cut the wings in half at the joint; place in a greased roasting pan.
- Pour half the sauce over the wings. Bake at 375 degrees for 30 minutes. Turn the wings, and top with the remaining half of the sauce. Bake an additional 30 minutes or until done. Serve warm.

This recipe came from a friend of my mothers back when I was in junior high. It has such a unique flavor you can't help but like it. Great with crackers.

- In a large pot mix first five ingredients and bring to a boil.
- Add hot dogs and cook until peppers look wilted.
- Pour into jars.
- Add one garlic clove per jar.
- Seal tightly and let sit in water bath for 30 minutes.

Steps:
- Blend the tomatoes to a coarse paste in a food processor or electric blender. Pour this into a mixing bowl.
- Add the onion and coriander.
- Trim off the stem ends of the canned and fresh jalapeno peppers. Do not remove the seeds. Add the peppers to a food processor or electric blender.
- Blend the peppers until they are coarse-fine. Do not puree them to a paste. Add the peppers a little at a time to the bowl. After each addition taste the sauce, and add more pepper according to taste. Add salt and pepper and serve.
