4 cups grated sharp cheddar cheese
1 medium sweet onion, finely chopped
2 cloves garlic, minced
6 jalapeno peppers, chopped
1 cup mayonnaise
1/2 cup chopped green onion
salt

Steps:

  • In a large bowl combine all the ingredients.
  • Stir until well blended.
  • Refrigerate overnight, covered to allow the flavors to blend.
  • Serve with crackers or toast bits.

1 small onion, quartered
2 fresh jalapeno chiles, seeded (more or less to your taste)
2 (3 ounce) packages cream cheese
1 lemon, juice of
1 tablespoon Worcestershire sauce
4 ounces sharp cheddar cheese, grated
4 ounces longhorn cheddar cheese, grated
4 ounces pimento cheese
1/4 cup chopped pecans
1 teaspoon paprika
parsley

Steps:

  • Finely chop the onion and jalapeños in a food processor; add the cream cheese, lemon juice, and Worcestershire, process until well blended.
  • In a medium bowl, combine the cheeses, pecans and paprika; stir until thoroughly blended; add the jalapeño mixture, mix well.
  • Shape mixture on a serving plate, garnish with parsley.
  • Serve with crackers or chips.

1 cup dried cranberries
1/2 cup packed brown sugar
1/2 cup orange juice
4 teaspoons chopped seeded jalapeno pepper
1 tablespoon lemon juice
1 teaspoon grated orange zest
1/4 teaspoon Chinese five-spice powder
1 package (8 ounces) reduced-fat cream cheese
Assorted crackers or sliced sweet yellow and orange peppers

Steps:

  • In a small saucepan, combine the first 7 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until thickened. 4 bacon slices
3/4 cup pecan pieces
2 cups firmly packed grated cheddar
4 ounces cream cheese, room temperature
2 tablespoons mayonnaise
1/8 teaspoon hot pepper sauce (such as Tabasco)
1/8 teaspoon Worcestershire sauce
3 green onions, sliced
Crackers

Steps:

  • Fry bacon in heavy large skillet over medium heat until crisp. Transfer to paper towel to cool. Add pecans to drippings and cook until golden brown, stirring occasionally, about 5 minutes. Transfer to paper towel to cool. Season with salt.
  • Blend cheddar, cream cheese, mayonnaise, hot pepper sauce and Worcestershire sauce in processor until smooth. Transfer to bowl and stir in green onions. Crumble bacon and add to mixture. Line cookie sheet with plastic, forming 8-inch strip. Freeze 20 minutes to firm slightly. Using plastic as aid, form log shape. Remove plastic; roll log in pecans to coat. Wrap and refrigerate until firm. (Can be prepared 1 week ahead.) Serve with crackers.
