Jalapeño Poppers with Bacon image

These jalapeño poppers are filled with a cream cheese mixture, topped with crumbled bacon pieces, and then baked to perfection. You won't be able to stop at one!

10 large jalapeños
8 ounce cream cheese (softened)
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cup shredded cheddar cheese
1/2 pound bacon (cooked and crumbled)
1/4 cup green onions (sliced)

Steps:

  • Preheat the oven to 400 degrees. Wearing gloves, slice each of the jalapeños in half lengthwise and use a spoon to remove the seeds and veins.
  • In a medium-sized bowl, combine the cream cheese, garlic powder, salt, pepper, cheddar, bacon, and green onions.
  • Spoon the mixture evenly in the jalapeños and place it on a baking sheet. Bake for 20 minutes or until the jalapeños are tender.

This is a recipe I made by taking the best of three or four popper recipes and combining them to make something that tastes wonderful. A frequent request at my house, and at others. I usually make 100 and put them in the fridge. They don't last long. Adjust the amount of bacon bits and type of shredded cheese to taste. Increase the recipe as necessary! Lots of tests helps to best figure out the way you like it. Be sure to wear rubber gloves while seeding the jalapenos -- they will burn.

12 ounces cream cheese, softened
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
12 ounces jalapeno peppers, seeded and halved
1 cup milk
1 cup all-purpose flour
1 cup dry bread crumbs
2 quarts oil for frying

Steps:

  • In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
  • Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
  • Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
  • In a medium skillet, heat the oil to 365 degrees F ( 180 degrees C). Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.

2 cups chili cheese Fritos corn chips
2 cups Cheez-It crackers
2 cups small pretzels
2 cups bite-size bagel chips
1 1/2 cups sesame sticks (I used cajun flavor)
1 cup roasted shelled peanuts
1 cup corn nuts (soy nuts ok)
1/2 cup sunflower seeds (without shells)
6 tablespoons butter
1/4 cup Tabasco jalapeno sauce
2 tablespoons hot pepper sauce (I used Franks)
1 teaspoon Worcestershire sauce
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
2 tablespoons dried parsley flakes

Steps:

  • Preheat oven to 250 degrees F.
  • Combine Fritos, Cheez-Its, pretzels, bagel chips, sesame sticks, peanuts, corn nuts, and sunflower seeds in a large mixing bowl.
  • In a small skillet or saucepan, combine butter, jalapeno sauce, hot pepper sauce, Worcestershire sauce, garlic powder, onion powder, and cayenne, whisking until butter is melted and mixture is smooth.
  • Drizzle butter mixture over snack mix, tossing to combine, and trying to mix evenly.
  • Toss with the parsley flakes to evenly combine.
  • Spread snack mix on a large shallow baking pan and place in the preheated oven and bake for 1 hour (or until mixture is dry and crisp), stirring every 10 minutes to promote even drying.
  • Remove from oven; cool, and store in an airtight container.
