ONE PAN CHEESY JALAPEñO CHICKEN



One Pan Cheesy Jalapeño Chicken image

This cheesy jalapeño chicken is made in one pan, is bursting with flavor, smothered in melty cheese, and made in just 20 minutes! Try it tonight!

1 lime (sliced)
3 1/2 Tbsp vegetable oil (divided)
3 boneless skinless chicken breasts (cut in half and pounded to be 1/2 inch thick)
1 tsp chili powder
1 tsp dried oregano
3/4 tsp kosher salt
1/2 tsp ground cumin
1/2 tsp black pepper
1/2 tsp dried minced onion
1/4 tsp ancho chile powder
1/2 cup all-purpose flour
1 1/2 - 2 cups frozen corn kernels, thawed ((fresh corn works as well))
2 jalapeños (seeds removed and sliced lengthwise into strips)
2 cloves garlic (minced)
3 Tbsp lime juice ((juice of 2-3 limes))
1/2 cup water
1 - 1 1/2 cups shredded Mexican blend cheese ((or any cheese you prefer))
minced fresh cilantro, for garnish
extra lime wedges, for garnish

Steps:

  • To a mixing bowl, add chicken, chili powder, oregano, kosher salt, ground cumin, black pepper, dried minced onion, and ancho chile powder. Toss and massage spice mixture into all sides of chicken.
  • Add flour to a shallow bowl or plate and lightly dredge chicken in flour. Let chicken sit while you heat up your pan.
  • Heat large oven-safe skillet over MED-HIGH heat. Add lime slices to pan and char for 1-2 minutes per side, until charred and brown, as desired. Remove to a plate.
  • Add 2 ½ Tbsp of the vegetable oil to the hot pan and let heat through until shimmering.
  • Add chicken pieces to the hot pan, being careful not to overcrowd the pan (you may need to do 2 batches, depending on the size of your pan). Cook about 3 minutes per side, until golden brown, then remove to plate.
  • Move oven rack to the upper third part of the oven and preheat broiler to HIGH.
  • Add remaining 1 Tbsp vegetable oil and then add corn kernels, jalapeno slices and garlic. Cook, stirring often, about 2-3 minutes, until corn begins to lightly brown.
  • Add chicken back to the pan, and pour in lime juice and water. Cook several minutes (this time can vary depending on your stove - mine took 2 minutes), until liquid is mostly absorbed.
  • Sprinkle with shredded cheese and broil for about 2-3 minutes, until cheese is melted.
  • Garnish with minced fresh cilantro and serve with lime wedges or charred lime slices.

1 tablespoon vegetable oil
1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
Kosher salt and freshly ground black pepper
1/2 teaspoon sesame seeds
2 tablespoons chopped fresh cilantro leaves
1 tablespoon cornstarch
1/2 cup honey
2 cloves garlic, minced
Juice of 1 lemon
2 tablespoons reduced sodium soy sauce
1 tablespoon apple cider vinegar
1 teaspoon sesame oil
1 teaspoon Sriracha, optional
1 jalapeno, thinly sliced

Steps:

  • Heat vegetable oil in a large skillet over medium high heat. Season chicken with salt and pepper, to taste. Add chicken to the skillet and cook until golden, about 2-3 minutes; set aside. In a small bowl, combine cornstarch and 1 tablespoon water; set aside. In a small saucepan over medium high heat, combine honey, garlic, lemon juice, soy sauce, apple cider vinegar, sesame oil, Sriracha and jalapeno. Bring to a boil; reduce heat and stir in cornstarch mixture until slightly thickened, about 2-3 minutes. Stir in chicken. Serve immediately, garnished with sesame seeds and cilantro, if desired.

4 to 8 jalapeno peppers, seeded and chopped or 1 can (4 ounces) chopped green chilies
2/3 cup lemon juice, divided
1/4 cup minced fresh parsley or 1 tablespoon dried parsley flakes
6 to 10 garlic cloves, minced
2 teaspoons dried rosemary, crushed
2 teaspoons dried thyme
8 bone-in chicken breast halves (8 ounces each)
2/3 cup chicken broth
2 teaspoons pepper
1/2 teaspoon grated lemon zest

Steps:

  • In a small bowl, combine the peppers, 1/3 cup lemon juice, parsley, garlic, rosemary and thyme. With fingers, carefully loosen skin from the chicken breasts; gently stuff pepper mixture under the skin of each chicken breast. , Place in a greased 13x9-in. baking dish. Combine the broth, pepper, lemon zest and remaining lemon juice; pour over chicken. Cover and refrigerate for at least 6 hours. , Drain and discard marinade. Place chicken skin side up on grill. 8 boneless skinless chicken breast halves, about 5 ounces each
Salt and freshly ground black pepper
Salt-free roasted garlic seasoning (recommended: McCormick)
1 tablespoon olive oil
1 cup thinly sliced onion
2 jalapeno or serrano peppers, seeded and minced
2 tablespoons sugar
1 cup reduced-sodium chicken broth, divided
2 bay leaves
2 teaspoons cornstarch
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a stove-top grill pan or griddle to medium high heat and coat with cooking spray. Remove chicken from package and place on a plastic cutting board. Season both sides of chicken with salt, black pepper and garlic seasoning. Using tongs add chicken to hot pan and cook 3 to 5 minutes per side, or until cooked through.
  • Heat large skillet over medium-high heat with oil. Add onion, jalapeno and sugar and cook 5 to 7 minutes stirring occasionally with a spoon, until golden brown. Add 3/4 cup of the chicken broth and bay leaves and bring to a simmer for 5 minutes. Pour remaining 1/4 cup chicken broth into a bowl. Whisk in cornstarch until it is completely dissolved and add to the pan. Bring onion mixture to a full boil, reduce heat and simmer until the sauce thickens. Using tongs, discard the bay leaves and remove the pan from heat.
  • Serve 4 of the chicken breast halves with all of the onion sauce spooned over top and all of the rice on the side. Reserve remaining 4 chicken breast halves for sandwiches.

1/2 cup packed fresh oregano leaves or 1/3 cup dried oregano
1 shallot, peeled and roughly chopped
4 garlic cloves, peeled
4 tablespoons unsalted butter
2 tablespoons olive oil
1 jalapeno, stemmed and seeded
1 teaspoon salt
1/2 teaspoon freshly cracked black pepper
1 (5 1/2-pound) roasting chicken
2 sprigs fresh rosemary
2 shallots, coarsely chopped
1 1/2 cups chicken broth, plus more if needed
3/4 cup dry white wine
2 pounds baby broccoli *see Cook's Note
1 tablespoon olive oil
Salt and freshly cracked black pepper

Steps:

  • Position a rack in the center of the oven. Preheat the oven to 400 degrees F.
  • Jalapeno paste:
  • In the bowl of a food processor, combine the oregano, shallot, garlic, butter, 2 tablespoons olive oil, the jalapeno, salt and pepper and process to form a coarse paste.
  • Chicken: Pat the chicken dry and then put it, breast side up, on a rack in a large roasting pan. Using your fingers, loosen the skin from the chicken breast, legs, and thighs without detaching it. Spread half of the jalapeno paste under the skin. Put the rosemary and the shallots in the cavity of the chicken. Tie the chicken legs together with kitchen twine. Spread the remaining jalapeno paste all over the exterior of the chicken. Pour the chicken broth and wine into the roasting pan.
  • Roast the chicken for 1 hour, basting with the pan juices every 20 minutes, adding more broth to the pan if it begins to dry out.
  • Remove the roasting pan from the oven. Arrange the baby broccoli snugly around the chicken on the rack. Drizzle the olive oil over the florets and season them with salt and pepper, to taste. Roast the chicken with the baby broccoli, basting occasionally with the pan juices, until an instant-read thermometer inserted into the innermost part of the chicken thigh, without touching the bone, registers 160 degrees F, about 30 minutes. Remove the roast chicken from the oven, tent it in foil and let it rest for 15 minutes.
  • Arrange the chicken on a platter, and surround it with the broccoli. Serve.

I was reading the intro of this recipe and realized that yes, now I have tried it and even posted a picture so I decided to update. This is an easy recipe that is heart healthy. The recipe was in an issue of Diabetic Cooking.

1 tablespoon olive oil
1 teaspoon lime zest
1 tablespoon lime juice
1 jalapeno pepper, seeded and diced
1 teaspoon ground cumin
2 -3 cloves garlic, peeled and minced
1/4 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 lb boneless skinless chicken breast half
1 sliced jalapeno pepper, for garnish
sliced black olives, for garnish

Steps:

  • Combine the oil, lime zest, lime juice, jalapeno, cumin, minced garlic, pepper and salt in a resealable plastic bag.
  • Place chicken in bag and press to remove excess air; seal tightly.
  • Turn bag over several times in order to coat chicken with mixture.
  • Chill 30 minutes or up to 8 hours.
  • Preheat grill, oven broiler or indoor grill to medium high heat.
  • Place the chicken on grill or in broiler pan.
  • Cook 12 to 15 minutes or until chicken is no longer pink and juices run clear when pierced with a fork, turning twice to get grill marks.
  • Garnish with jalapeno slices and black olives if desired.
