CHICKEN JALAPENO POPPER CASSEROLE

Number Of Ingredients 15

Three 6-ounce boneless skinless chicken breasts
4 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
6 jalapeno peppers, stemmed, halved and seeded
6 slices thick-cut bacon
8 ounces cream cheese, at room temperature
1 cup grated Cheddar cheese
1/2 cup sour cream
1/4 cup chicken stock
1 teaspoon sweet paprika
1/2 cup fried jalapenos, such as French's Crispy Jalapenos
1/2 cup panko breadcrumbs
2 tablespoons salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the chicken breasts on one half of a baking sheet, drizzle with 2 tablespoons of the olive oil and season with the chili powder, cumin and some salt and pepper. Place the jalapeno peppers on the other half of the same baking sheet. Drizzle them with the remaining 2 tablespoons olive oil.
  • On a second baking sheet, lay the bacon slices out in a single layer. Put both baking sheets into the oven and bake until the chicken is cooked through and the bacon is crispy, about 25 minutes.
  • Meanwhile, mix the cream cheese, Cheddar, sour cream, chicken stock and paprika together in a mixing bowl.
  • Transfer the bacon and chicken to a cutting board. Dice the chicken and chop the bacon. Add all of the diced chicken to the cream cheese mixture along with half of the chopped bacon. Stir together until well mixed.
  • Transfer half of the chicken mixture to an 8-inch square casserole dish. Arrange half of the roasted jalapenos on top of the chicken mixture. Top with the remaining chicken mixture followed by the rest of the roasted jalapenos.
  • In a separate bowl, mix together the fried jalapenos, breadcrumbs and the remaining bacon. Toss with the melted butter until evenly mixed. Sprinkle the top of the casserole with the breadcrumb mixture. Bake until bubbly and golden, 25 to 27 minutes.

2 packages (8 ounces each) cream cheese, softened
1 cup sour cream
1-1/2 teaspoons garlic salt
1/2 teaspoon pepper
2 cups shredded Mexican cheese blend
6 green onions, chopped
6 jalapeno peppers, seeded and finely chopped
1 pound bacon strips, cooked and crumbled
4 cups rotisserie chicken, shredded

Steps:

  • Preheat oven to 425°. Arrange Tater tots in an ungreased 13x9-in. baking dish. Bake, uncovered 15 minutes. , Meanwhile, in a large bowl, combine cream cheese, sour cream, jalapeno peppers, garlic salt and pepper. Stir in half each of the chicken, Mexican cheese blend, bacon and green onions. Arrange chicken over Tater tots. Top with cream cheese mixture. Sprinkle with remaining Mexican cheese blend, green onions and bacon. Cover and bake until heated through, 20-25 minutes. If desired, top with additional sour cream and jalapeno slices.

1 cup shredded sharp Cheddar cheese
1 (4 ounce) can diced jalapenos (such as Ortega®)
½ cup sour cream
½ cup mayonnaise
1 pinch garlic salt, or to taste
2 pounds shredded cooked chicken

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.
  • Mix 1/2 of the bacon crumbles with 1/2 of the Cheddar cheese, jalapenos, sour cream, mayonnaise, and garlic salt. Add chicken and mix well. Pour mixture into the prepared casserole dish and spread evenly. Top with remaining bacon and cheese.

1 bunch fresh green onion, chopped
2 tablespoons margarine
1 (10 ounce) package frozen spinach, thawed and drained
6 jalapenos, seeded, and chopped
1 (8 ounce) sour cream
2 (10 ounce) cans cream of chicken soup, undiluted
1/2 teaspoon salt
1 teaspoon ground cumin
1 (12 ounce) package nacho cheese flavored tortilla chips, slightly crushed
4 -5 cups cooked chicken breasts
1 (8 ounce) package shredded Mexican blend cheese

Steps:

  • Cook chicken breasts until done.
  • In a large skillet saute onions in margarine.
  • Drain spinach by using several paper towels to squeeze all water out of spinach.
  • Add spinach, jalapenos, sour cream, chicken soup, salt, and ground cumin to onions and mix well.
  • In a greased 9x13 inch baking dish, layer half of tortilla chips, half of chicken, half spinach soup mixture, and 1/2 cheese.
  • Repeat layers again , but without the cheese.
  • Bake covered at 350 degrees for 40 minutes.
  • Uncover and sprinkle remaining cheese over top and return to oven for 4 minutes or until the cheese melts.

Someone gave me this recipe 13 years ago when I first got married. It's a very versatile recipe, you can change it up with different chips, make it spicier or less spicy. It has unlimited yummy potential. We've also used the filling as a dip.

3 lb boneless, skinless chicken breasts
3 Tbsp butter
1 yellow onion, chopped (see my tip for tearless onion chopping)
1 can(s) diced jalapenos (4 oz)
1 tsp cumin
1 tsp onion powder
2 clove garlic
2 can(s) cream of chicken (10.5 oz)
2 can(s) cut spinach (14 oz each)
1 pkg cream cheese (8 oz)
1 bag(s) Fritos corn chips, tortilla chips
3 c cheddar jack, colby jack, or monterey jack cheese

Steps:

  • 1. Boil chicken for about 30 minutes. Once done, chop or shred. You can also use leftover roasted chicken.
  • 2. Drain spinach of water. If you don't want your casserole to be really spicy, drain the jalapenos as well.
  • 3. In a large pan, melt butter. Sauté onions and jalapeños until tender, about 5-7 minutes.
  • 4. Add your seasonings and cream soup. Stir well.
  • 5. Add chicken and spinach; mix well.
  • 6. Add in cream cheese; mix well.
  • 7. Put a thin layer of the mixture in the bottom of a 13x9 casserole dish.
  • 8. Next, layer it with crushed chips of your choice.
  • 9. Then top with cheese. Repeat this until the dish is filled, ending with chips and topped with cheese.
  • 10. Bake in preheated oven for 15-20 minutes or until casserole is heated thoroughly. Enjoy!

450 g bag tex mex cheese

  • Turn oven on to 350 Fry Step one in oil, then add step two. Simmer for ten minutes then add step three. Layer 1/2 sauce in a 9x13 pan; put a layer of chips and cheese. Then add another layer off chips and cheese. Bake for 30 minutes

BUFFALO CHICKEN JALAPENO POPPER CASSEROLE

6 pieces Small Chicken Thighs
6 slices Bacon
6 pieces Medium Jalapenos
12 ounces Cream Cheese
1/4 cup Mayonnaise
4 ounces Shredded Cheddar Cheese
2 ounces Shredded Mozzarella Cheese
1/4 cup Hot Sauce
1 pinch Salt and Pepper

Steps:

  • De-bone all chicken thights and pre-heat oven to 400 degrees F.
  • Season chicken thighs well with salt and pepper, then lay on a cooling rack over a cookie sheet wrapped in foil. Bake for 40 minutes at 400 degrees F.
  • At 20 minutes, start the filling. Chop 6 slices of bacon into pieces and put into a pan over medium heat. Once the bacon is mostly crisped, add jalapenos into the pan.
  • Once jalapenos are soft and cooked, add cream cheese, mayonnaise, and hot sauce to the pan. Mix together and season to taste.
  • Remove the chicken from the oven and let cool slightly. Once they are cool, remove the skins.
  • Lay the chicken into a casserole dish, spread the cream cheese mixture over it, and top it with cheddar and mozzarella cheese.
  • Bake for 10-15 minutes at 400 degrees F. Broil for 3-5 minutes to finish. Optionally, top with extra jalapenos before broiling.

1/3 cup all-purpose flour

3 1/2 cups 2% low-fat milk
3 cups Mexican cheese
1/3 cup chopped red onion
1/3 cup chopped fresh cilantro
2 large eggs, lightly beaten
1 (15-ounce) carton part-skim ricotta cheese
Cooking spray
18 (6-inch) white corn tortillas
3 3/4 cups chopped cooked chicken breast (about 3 large)
1 cup thinly sliced green onions, divided

Steps:

  • Chop peppers. Saute with corn until done. Lightly spoon flour into a dry measuring cup; level with a knife. Place flour and black pepper in a large saucepan. Gradually add milk, stirring with a whisk. Cook over medium heat until slightly thick (about 12 minutes), stirring constantly. Remove from heat. Mix in the veggies. Preheat oven to 350°. In a bowl,combine 1 cup Mexican cheese, red onion, cilantro, eggs, and ricotta. Coat bottom of a 13 x 9-inch baking dish with cooking spray. Spread 1/2 cup sauce in bottom of dish.
