2 1/4 cups cooked rice, cooled
8 ounces sour cream
1 (4 ounce) can chopped jalapeno peppers, drained
8 ounces monterey jack cheese, grated

Steps:

  • Preheat the oven to 350º.
  • Mix the rice, sour cream, and jalapenos in a large bowl.
  • In a 1 quart casserole dish, layer half of the rice mixture and then half of the cheese.
  • Repeat, ending with a layer of cheese.
  • Bake, covered, for 30 minutes; then remove the cover and bake for another 10 minutes.

This jalapeño Popper Rice side dish is as you might guess a play on jalapeno poppers. This rice dish is a little spicy and a lot creamy and delicious! Use instant rice and its ready in a half hour.

3 C prepared rice
1 tsp kosher salt
1/2 tsp black pepper
2 C cheddar cheese (shredded)
1 1/2 C monterey jack cheese (shredded)
1 1/2 C Hood Sour Cream
1 C jarred jalapeños (drained and roughly chopped)
1/4 C bread crumbs (seasoned)
1 T olive oil
Cooking spray

Steps:

  • Preheat oven to 375 F.
  • Stir together prepared rice, salt, pepper, 1 C cheddar cheese, monterey jack cheese, Hood Sour Cream and jalapeños until well combined.
  • Spray 2 qt baking dish with spray. Transfer mixture into pan. Top with remaining cheese.
  • Stir breadcrumbs and oil together until all crumbs are coated.
  • Scatter breadcrumbs over the cheese. Bake in preheated oven for 20 minutes.
  • Serve warm.
  • If desired, garnish with sliced jalapeño, chopped scallions or chopped cilantro.

1 tablespoon vegetable oil
1 small onion, chopped
3 garlic cloves, minced
1 cup uncooked long grain rice
2 jalapeno peppers, finely chopped seeds removed
2 cups chicken broth or 2 cups vegetable broth
3/4 teaspoon cumin
salt and pepper
2 tablespoons fresh snipped cilantro
shredded cheese (Mexican, queso, cheddar, etc.) (optional)

Steps:

  • In a large saucepan heat the oil on medium-high heat. Saute onions until golden brown. About a minute before completing the onions, add garlic and jalapenos; saute another minute.
  • Add in uncooked rice, broth, cumin, salt and pepper; bring to a boil. Reduce the heat and cover the saucepan. Simmer on low heat for 20-25 minutes or until liquid is gone and rice is tender and fluffy. Remove from heat. The longer you leave on the lid, the fluffier the rice will become. Add minced cilantro and stir gently.
  • Top each serving with cheese, if desired.

1 1/2 cups cooked, chopped chicken breast meat
1 can (12 fluid ounces) Reduced Fat Evaporated Milk
1/2 cup finely chopped red onion
2 large eggs, lightly beaten
1/4 cup finely chopped cilantro
2 tablespoons butter or margarine, melted
1 tablespoon diced jalapeños
Salt

Steps:

  • EHEAT oven to 350-F. Lightly grease 2-quart casserole. COMBINE rice, cheese, chicken, evaporated milk, onion, eggs, cilantro, butter and jalapeños in prepared casserole; stir well. BAKE 45 to 50 minutes or until knife inserted in center comes out clean. Season with salt.
