1 tablespoon butter
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/8 teaspoon black pepper
2 garlic cloves, crushed
1/2 teaspoon paprika
2 medium potatoes
2 tablespoons cottage cheese

Steps:

  • Place all ingredients except paprika, potato and cottage cheese into a cup and microwave 30 seconds or until butter is melted.
  • Stir mixture well, cut two slices half way into potato, fill with mixture and place a little over the outside.
  • Wrap with foil and bake for one hour at 180 celsius (350 Fahrenheit).
  • Remove potatoes from foil, spoon cottage cheese over top and sprinkle with paprika.

This recipe is from the "Low-Fat Cooking" cookbook of the Australian Womens Weekly Cookbook series & was described as suitable for diabetics. It seemed so basic to me & I was certain it would have already been posted to RZ, but I was unable to find it. DH & I have been eating baked potatoes this way for eons w/the addition of garlic & McCormick Lemon & Pepper Seasoning Salt, so I showed them as opt adds. Time does not include time to bake or microwave potatoes. *Enjoy* !

8 ounces low fat cottage cheese
3 green onions (finely chopped)
2 tablespoons parmesan cheese (grated)
2 tablespoons fresh basil (chopped)
1 tablespoon fresh chives (chopped)
1/4 teaspoon garlic powder (opt add)
mccormick lemon-pepper seasoning (opt add to taste)
6 baking potatoes (baked or microwaved till fork-tender)

Steps:

  • Combine cottage cheese w/onion, parmesan cheese, herbs & opt adds (if using).
  • Cut a deep cross in ea potato & gently press sides to open the cross. Fill & mound herbed cottage cheese equally among the 6 potatoes & serve immediately.
  • NOTE: If you want a smooth texture or simply want to disguise the cottage cheese from the kids, use a stick blender to puree it till smooth & then mix in the herbs & seasonings. They'll prob think it's the best sour cream they've ever tasted. :-).

The nicest thing about jacket potatoes is its crisp, crunchy skins and fluffy, floury insides with some lovely filling melted into them! As an accompaniment, one half of the potato will be sufficient per person, or 1 potato per person if serving as a supper dish with a salad. Please note, you will have to serve them immediately because, after you remove jacket potatoes from the oven, they lose their crispness very quickly, so don't let them hang around for too long.

3 large desiree potatoes (225-275g each) or 3 large king edward potatoes (225-275g each)
olive oil
rock salt, crushed
150 g cottage cheese or 150 g cream cheese
25 g butter
2 garlic cloves, crushed
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
50 g grated cheddar cheese
salt & freshly ground black pepper

Steps:

  • Pre-heat oven to gas mark 5/375F/190°C.
  • Wash the potatoes and dry them very thoroughly with a cloth, then leave them aside to dry as much as possible.
  • Next, prick the skins a few times all over with a fork, then put a few drops of olive oil over each one and rub it all over the skin followed by some crushed salt.
  • Place the potatoes on to the centre shelf of the oven and let them bake for 1¾-2 hours, or until the skins are really crisp.
  • Meanwhile, pre-heat the grill.
  • Once the potatoes are cooked, remove from the oven, protect your hands with a cloth, slice them in half then scoop out the cooked potatoes into a bowl (careful not to tear the skin).
  • Then combine the potato with the cottage cheese or cream cheese, butter, garlic and herbs and season with salt and pepper.
  • Pile the mixture back into the potato shells, sprinkle each half with the grated cheddar and pop them under the grill until they are brown and bubbling.

This is a wonderfully seasoned cottage cheese that a local restaurant served. My family has fits if I make steak and do not fix this! It's also great on a tossed salad...or blended for a "lowfat" dip. Even people who normally do not like cottage cheese find they enjoy this.

1/8 teaspoon Accent seasoning

3 large sebago potatoes
rock salt
olive oil
2 slices bacon, chopped
1 cup broccoli floret, steamed and chopped
1/3 cup light sour cream
2 tablespoons grated cheese

Steps:

  • Preheat oven to 200°C.
  • Sprinkle a layer of salt onto a small baking tray (the salt on the tray makes the potato skins crispy).
  • Rub the potatoes with olive oil and place on prepared tray.
  • Bake for 1 hour or until skin is crispy and potato is cooked.
  • Allow to cool slightly.
  • Meanwhile, fry or microwave bacon until crisp.
  • Remove the flesh from the potatoes.
  • Place in a bowl along with the bacon, broccoli and sour cream.
  • Season.
  • Return the filling to 2 of the potato shells, piling it high.
  • Sprinkle with cheese and return to the oven.
  • Cook for a further 5-10 minutes or until cheese has melted.

1 tablespoon sugar
1 tablespoon dried Italian seasoning
1/4 cup butter, softened

  • Preheat oven to 400ºF.
  • Combine flour, baking powder, sugar and seasoning.
