JACK DANIELS GLAZED PORK CHOPS

6 boneless pork loin chops (3 pounds total)
2 cup orange juice
1/2 cup packed brown sugar
1/2 cup kosher salt
8 garlic cloves (pressed)
1 bunch fresh thyme
3 bay leaves
2 tbs peppercorns
1 cinnamon stick
2 tbs canola oil
3/4 cup molasses
1/4 cup apple cider vinegar
1 rosemary sprig
4 tbs cut-up unsalted butter
1/4 cup bourbon
Kosher salt and black pepper

Steps:

  • Bring orange juice, brown sugar, salt, garlic, thyme, bay leaves, peppercorns, cinnamon, and 6 cups water to a simmer in a large pot. Remove from heat. Cool to room temperature. Add pork and brine 12 hours.
  • Remove pork from brine and rinse under cold water. Pat pork dry with paper towels.
  • Preheat oven to 350F/180C. Heat oil in a large skillet over medium-high heat. Cook pork, in batches, turning once, until golden brown, 4 to 6 minutes. Transfer to a rimmed baking sheet. Bake until the internal temperature reaches 160F/70C 4 to 6 minutes. Let rest 5 minutes. Serve drizzled with glaze.
  • Make the Glaze:
  • Combine molasses, apple cider vinegar, and rosemary in a small saucepan. Cook over medium heat until reduced to 2/3 cup, 12 to 15 minutes.
  • Whisk in unsalted butter and bourbon; continue to cook until thickened, 1 to 2 minutes.
  • Season with kosher salt and black pepper.

2 Butterfly boneless pork chops
3 teaspoons soy sauce
1/4 cup brown sugar
1 tablespoon chilli sauce
1 tablespoon olive oil
1 teaspoon ground black pepper
1/2 cup Jack Daniels whisky
1 medium green onion, chopped

Steps:

  • Add the soy sauce, brown sugar, chilli sauce, olive oil, ground black pepper, and Jack Daniels to a baking dish and mix until well combined.
  • Place the chops in and flip them around until they are completely coated with the marinate. Cover the dish with cling wrap and place in the fridge for about 30 minutes. To marinate them overnight is even better.
  • Heat a medium size cast iron skillet over medium hight heat. Place the chops in and fry until they are seared and brown on both sides.
  • Pour the sauce in the pan. Spoon or baste some sauce over, bring to a boil, and simmer until the sauce thickens a little.
  • Put the pork chops into a 350 degree F or 177 C preheated oven for about 10 minutes.
  • Plate, garnish with green onion, and enjoy your Jack Daniels pork chops.

1 head garlic
1 tablespoon olive oil
1 ⅓ cups dark brown sugar
1 cup pineapple juice
⅔ cup water
¼ cup teriyaki sauce
1 tablespoon soy sauce
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon bourbon whiskey
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
  • Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
  • Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
  • Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

Trouble thinking of a name for this one. Can use JD, brandy, cognac or similar strong spirits. Works with lamb, beef, or chicken as well as pork. Very simple and very tasty.

2 tablespoons Jack Daniels Whiskey
2 tablespoons peanut oil
2 tablespoons oyster sauce
1 -2 tablespoon minced garlic
1 tablespoon soy sauce
1 tablespoon water
1/2 teaspoon black pepper
4 boneless pork chops (approx 1/2 pound each)

Steps:

  • Combine marinade ingredients.
  • Marinate meat at least 2 hours, or up to overnight in the refrigerator. Marinating in a ziploc bag with most of the air squeezed out works great to maximize contact between meat and marinade.
  • Pan fry or BBQ as you like.
  • If pan fried, can deglaze pan with a bit of water and/or white wine to have a very nice sauce.
