CORNY CORN BREAD
Diana Leskauskas of Chatham, New Jersey bakes a big pan of this golden corn bread for her growing family. East moist square is chock-full of sweet kernels. Since the recipe makes a lot, it's handy for large gatherings...or use the leftovers in the two recipes that follow.

- In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt and baking soda. In a small bowl, whisk the eggs, milk and oil. Stir into dry ingredients just until moistened. Fold in corn and onion. , Pour into a greased 13x9-in. baking dish. Bake at 400° for 25-30 minutes or until toothpick inserted in the center comes out clean. Serve warm.

FIREHOUSE CORNBREAD BY THE 3S
I came up with this during my previous life as a firefighter after finding myself having to repeat my more popular recipes over and over. This one is easy to communicate and even easier to remember, since all of the measurements are in multiples of 3, which explains some of the more arcane measurements! A triple recipe, of course. I use this recipe both to serve with soup or chili, as well as the foundation for Nana's cornbread turkey stuffing. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 15x10x2-inch baking pan.
- Whisk flour, cornmeal, sugar, baking powder, and salt together in a bowl; stir in milk, vegetable oil, and eggs until batter is evenly combined. Pour batter into prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, about 33 minutes.

I love good corn bread. And I love a marvelous Victorian-style restaurant in Ocala, FL ...and their very good corn bread. I was so happy to see they had published the recipe in their very unique cookbook .. and very surprised again to see how simple and easy it is to make. Perfect with any meal, I say.
