This is one of our favorite pasta salads! The flavors just "Pop" in your mouth! I created this recipe a few years ago after having something similar in Chicago while dinning out... it was a hit the first time I made it and is requested several times a year. This is a show stopper to take to a pot luck! Everyone always asks...

Number Of Ingredients 20

DRESSING
3/4 c olive oil
1/2 c lemon juice, fresh
1/4 c red wine vinegar
2 Tbsp mint, fresh (or dried) minced fine
1 1/2 Tbsp each: fresh or dried oregano and fresh or dried basil (crushed)
5 clove garlic (finely minced)
1/3 tsp sea salt
1/3 tsp ground black pepper
1 Tbsp anchovy paste (optional)
PASTA SALAD
5 c raw pasta of choice (i use fusilloni) (cook as directed on package)
1 - 2 c grape tomatoes
2 - 4 green onions (sliced thin)
1/2 - 1 c kalamata olives (pitted)
1/2 - 1 c green olives (pitted)
1 - 5 oz (up to a cup) feta cheese (crumbled) (to taste)
OPTIOAL:
1 - 2 c grilled chicken breast (sliced or cubed)
6 - 12 medium greek style hot peppers

Steps:

  • 1. Use a whisk to beat together the dressing ingredients. Refrigerate until needed.
  • 2. Cook the pasta according to the directions on the package. Rinse. Drain well.
  • 3. Place all of the salad ingredients into a large bowl and gently but thoroughly toss together. Put in a covered container and refrigerate about 2 to 3 hours. Serve family style or in individual bowls.

Pasta salad in general is a summer staple, but this Greek pasta salad will be your new favorite. It's packed with veggies, just like a traditional Greek salad.

Number Of Ingredients 14

1 16-ounce box bow tie pasta
1/2 c. olive oil
1/3 c. red wine vinegar
Juice of 1 lemon
2 tsp. kosher salt
1 tsp. ground black pepper
1 tsp. dried oregano
1 pt. grape tomatoes, halved
1/2 c. chopped red onion
1 1/2 c. chopped cucumber
1 c. pitted kalamata olives, chopped
1/4 c. capers, drained (optional)
1/2 c. chopped fresh herbs, such as mint, dill or parsley
1/2 c. crumbled feta cheese

Steps:

  • Cook the pasta according to package directions. Drain, rinse with cold water, and let cool.
  • Meanwhile, in a large bowl, whisk together the olive oil, vinegar, lemon juice, salt, black pepper, and dried oregano. Add the tomatoes and red onions, and let sit for 10 minutes. Add the cooled pasta, cucumbers, olives, capers, and herbs. Mix well to combine and dress the pasta.
  • Top with crumbled feta cheese.

For the lemon olive oil dressing:
1/3 cup fresh squeezed lemon juice (from 2 to 3 lemons)
1 tablespoon lemon zest
2 cloves garlic, finely chopped
2 tablespoons finely chopped parsley
1/2 cup extra virgin olive oil
1/2 teaspoon fresh oregano (optional)
1/4 teaspoon salt
1/4 teaspoon pepper
For the pasta salad:
1 pound rotini pasta, or other pasta shape of your choice
1/2 small red onion, quartered and thinly sliced
1 red pepper, finely diced
1 pint cherry tomatoes, halved
1/2 cup pitted Kalamata olives
1/2 cup crumbled feta
1 cucumber, quartered and sliced
1/4 cup parsley, roughly chopped
Salt and pepper to taste

Steps:

  • Cook the pasta and drain: Bring a large pot of heavily salted water to a boil. Add the pasta and cook pasta until al dente. Immediately rinse in cold water until the pasta is cool to the touch.

3 cups uncooked tricolor spiral pasta
1 medium tomato, cut into wedges
1 small sweet red pepper, julienned
1 small green pepper, julienned
4 ounces crumbled feta cheese
1/2 cup sliced ripe olives
DRESSING:
2/3 cup olive oil
1/4 cup minced fresh basil
3 tablespoons white vinegar
2 tablespoons chopped green onions
2 tablespoons grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano

Steps:

  • Cook the pasta according to package direction's rinse in cold water and drain. Place in a large serving bowl; add the tomato, peppers, feta cheese and olives., In a blender, combine the dressing ingredients; cover and process until smooth. Pour over salad; toss to coat. Cover and refrigerate for 2 hours or overnight. Toss before serving.
