These grilled turkey burgers are always a hit at my house! They've got lots of flavor, color, and texture!

1 pound lean ground turkey
⅓ cup chopped fresh basil
3 cloves garlic, crushed, or more to taste
2 teaspoons salt
1 teaspoon freshly ground black pepper
4 slices provolone cheese
4 ciabatta rolls
¼ cup mayonnaise
⅛ cup prepared pesto
½ red onion, sliced
4 leaves romaine lettuce

Steps:

  • Combine turkey, basil, garlic, salt, and pepper in a bowl. Divide into 4 equal portions and form into hamburger patties.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill patties for about 4 minutes per side. Place provolone slices on the patties; continue to cook until cheese melts. Place ciabatta rolls on the grill and cook until browned to your liking, 2 to 3 minutes.
  • Mix mayonnaise and pesto in a small bowl until thoroughly combined. Spread onto the rolls. Place the turkey patties on the rolls and top with sliced red onion and lettuce.

3 tablespoons mayonnaise
1 clove garlic, finely chopped
8 ounces ground turkey
12 ounces sweet Italian turkey sausage, removed from casings
2 teaspoons extra-virgin olive oil
8 thin slices pancetta
4 ounces sliced Italian fontina cheese
Four 3-by-3-by-1/2-inch squares focaccia, split and lightly toasted
1 plum tomato, sliced
1 cup baby arugula

Steps:

  • Mix the mayonnaise with the garlic in a small bowl and set aside. Using your hands, mix together the turkey and turkey sausage in a large bowl until just combined. Form this mixture into four 1-inch-thick patties.
  • Preheat a large skillet over medium heat. Add the olive oil and pancetta slices and cook the pancetta on both sides until crisp, about 3 minutes. Drain on paper towels and reserve.
  • Place the same skillet over medium-high heat and add the burgers. Cook, turning once, until cooked all the way through, about 5 minutes per side. Top with the fontina and cook until just melted.
  • To serve, place the burgers on the focaccia bottoms. Top with tomato slices, pancetta and arugula. Spread the focaccia tops with garlic mayonnaise, set on top of the burgers and serve.

1/2 lb ground turkey breast
3 tablespoons tomato pasta sauce
1 tablespoon finely chopped red onion
2 slices (1 oz each) mozzarella cheese, cut in half
1/2 baguette (8 inches), cut into two 4-inch pieces
2 lettuce leaves
2 slices red onion
Additional tomato pasta sauce, if desired

Steps:

  • Brush grill rack with vegetable oil. Heat gas or charcoal grill. In medium bowl, mix turkey, 3 tablespoons pasta sauce and chopped onion. Shape mixture into 2 patties, each about 3/4 inch thick and the approximate shape of the baguette pieces.
  • Cover and grill patties over medium heat 12 to 15 minutes, turning once, until thermometer inserted in center of patties reads 165°F. Top patties with cheese. Cover and grill about 1 minute longer or until cheese is melted.
  • Slice baguette pieces horizontally in half. Place lettuce leaves on bottom halves; top with burgers and onion slices. Top with remaining baguette halves. Serve with additional pasta sauce.

2 tablespoons fresh basil leaves, chopped or 2 teaspoons dried basil
1 teaspoon paprika
1 teaspoon fresh garlic, finely chopped
1/4 teaspoon black pepper
4 slices mozzarella cheese
4 hamburger buns
2 roma tomatoes, sliced

Steps:

  • Combine ground turkey, basil, paprika, garlic, and pepper in medium bowl. Shape into 4 hamburgers.
  • Cook hamburgers on grill or in skillet until done.
  • Top each burger with 1 slice cheese and continue cooking until cheese is melted.
  • Place burgers on buns, top with tomatoes.

1 lb ground turkey (I use frozen, thawed)
2 tablespoons yellow onions, finely diced
2 tablespoons fresh parsley, chopped and packed
2 garlic cloves, minced
1 slice whole wheat bread, made into crumbs
1 tablespoon dried Italian seasoning
1 egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon olive oil (for frying)

Steps:

  • In a large mixing bowl, thoroughly combine ground turkey, finely diced yellow onion, chopped parsley, minced garlic, whole wheat bread crumbs, Italian seasoning, egg, salt, and freshly ground black pepper.
  • Shape turkey mixture into four patties.
  • Heat a large skillet over medium heat, and add olive oil. When oil is hot, add turkey patties and cook (adjusting heat if necessary) until they are nicely browned and cooked through--about 4 to 6 minutes per side.
  • Serve hot.

4 rolls (Ciabatta preferred-the small variety for individual sized servings-halved for sandwiches)
1 lb ground turkey
1/3 cup kalamata olive, pitted and diced fine
1/2 teaspoon dried oregano
olive oil
salt
1/4-1/2 cup pesto sauce (or more)
2 roasted peppers, sliced (Italian style)
1/4 lb fresh mozzarella cheese, sliced (or presliced variety)
1 tomatoes, sliced into four thick slices

Steps:

  • Combine turkey, olives, and oregano. Mix well. Form into four patties. Season to taste. Drizzle with olive oil.
  • Grill turkey until done. Just prior to being done add cheese so it will melt.
  • Meanwhile toast bread. Spread pesto on the inside of toasted "buns".
  • Place cooked turkey patties on bun and top with tomato and roasted peppers.
  • Enjoy.
