1 pound ground turkey
1 egg
¼ cup Italian seasoned bread crumbs
1 teaspoon Italian seasoning
½ clove garlic, minced
½ teaspoon ground black pepper, or to taste
¼ teaspoon salt, or to taste
2 cups tomato sauce, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with cooking spray.
  • Mix turkey, egg, bread crumbs, Italian seasoning, garlic, black pepper, and salt in a large bowl; shape into a loaf and put into prepared baking dish.
  • Bake in preheated oven for 40 minutes. Spoon about half the tomato sauce over the loaf and continue baking until the meatloaf is no longer pink in the center, 10 to 15 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Rest meatloaf 5 to 10 minutes before slicing to serve.
  • While the meatloaf rests, warm remaining tomato sauce in a small saucepan over medium-low heat; serve with the sliced meatloaf.

1 (14 ounce) jar marinara sauce, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine turkey, bread crumbs, eggs, onion, Parmesan cheese, and pepper in a large bowl. Fold in 1 cup marinara sauce.

1 clove garlic
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • In a large glass bowl combine all the ingredients except 1/2 cup of sauce.
  • Mix all ingredients together well.
  • Turn out and shape meat into a loaf and place in a bread pan.

1 (20 7/8 ounce) package ground turkey
1 medium onion, chopped
1 small green pepper, finely chopped
1 egg, lightly beaten
2 garlic cloves, chopped
1 (8 ounce) can tomato sauce, divided
1/2 cup seasoned bread crumbs
1/3 cup grated parmesan cheese, plus (divided)
2 tablespoons grated parmesan cheese, divided
2 teaspoons italian seasoning, divided
1/2 teaspoon garlic salt
1/4 teaspoon black pepper

Steps:

  • Press a 24-inch long piece of nonstick aluminum foil into an oval slow cooker bowl, with nonstick side facing up, so that it is flush with bowl and ends hang out over sides.
  • In a large bowl, gently stir together turkey, onion, green pepper, egg, garlic, 1/2 cup tomato sauce, bread crumbs, 1/3 cup cheese, 1 teaspoon Italian seasoning, garlic salt and black pepper. Place meatloaf mixture in slow cooker and form into a 9 x 5-inch log. Cover and cook on HIGH 2-1/2 hours or on LOW 4-1/2 hours or until internal temperature registers 160° on an instant read thermometer.
  • About 30 minutes before cooking is complete, place remaining 1/4 cup tomato sauce in a small bowl and stir in remaining 2 tablespoons Parmean cheese and 1 teaspoon Italian seasoning. Pour tomato sauce mixture over meatloaf; cover and continue to cook another 30 minutes.

I came up with this recipe myself. I love meatloaf but I can't eat ground beef very well so I tried ground turkey and Italian sausage together and really liked it. This is not a spicy meatloaf, but it is tasty. You can add more spices if you want or use hot Italian sausage. Making the meat mixture an hour or so ahead of time allows the flavors to blend and makes the meatloaf taste better. It also allows the wet ingredients to be absorbed by the meat and oatmeal. This will make really good sandwiches the next day. I didn't put a sauce on my meatloaf. Therefore, there is no topping suggestion included. This is real comfort food. Prep time does not include refrigeration time. Refrigeration time is optional. Recipe edited on February 12 2006.

2 teaspoons savory steak seasoning (my Savory Steak Seasoning (for all types of meat))
2 eggs
1/4 cup condensed cream of tomato soup (undiluted)
3/4 cup rolled oats
1/2 cup chopped onion
1 teaspoon minced or pressed garlic

Steps:

  • With one hand, mix the ground turkey, Italian sausage and steak seasoning together in a bowl.
  • Add the rest of the ingredients and mix well with your hands.
  • Smooth mixture out in same bowl and cover with plastic wrap.
  • Refrigerate for at least one hour.
  • Preheat oven to 350°F.
  • Remove meat mixture from the refrigerator.
  • Put the meat mixture in a baking dish or cake pan.
  • Shape it so that the meat does not touch the sides of the dish or pan.
  • This allows room for the meatloaf to expand.

2 1/2 lbs italian seasoned ground turkey (Jennie O)
1 yellow onion
10 white mushrooms
6 garlic cloves
1 carrot
1 cup Italian seasoned breadcrumbs
2 eggs
3/4 cup barbecue sauce
6 ounces shaved parmesan cheese
seasoned pepper
4 tablespoons extra virgin olive oil

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Dice onion and mushrooms. Mince garlic. Sautée in a skillet with EVOO until onions are golden and translucent. Season with seasoned pepper. Remove from heat.
  • 3. Grate carrot into a large mixing bowl then add 1/2 cup BBQ sauce, 4 oz shaved Parmesan cheese and remaining ingredients and blend thoroughly. When finished, mixture should be firm enough to maintain a loafed shape. If needed, add more bread crumbs to stiffen mixture.
  • 4. Place ground turkey mixture into 5 small loaf pans approx 5x3 inches (I purchased mine from grocery store in a set of 5 disposable pans with lids).
  • 5. Bake at 350 degrees for approximately 40-45 minutes. With approximately 15 min remaining, spread remaining BBQ sauce over loafs then sprinkle with remaining Parmesan cheese. When done internal temp should be 165 degrees F and cheese on top melted and golden.

1 medium red bell pepper, chopped
1/2 large onion, chopped
2 large eggs, beaten
1 tsp kosher salt
1/2 tsp black pepper

FOR THE GLAZE
3 Tbsp tomato paste

  • 1. In a large bowl place the meatloaf ingredients (minus the turkey and sausage) and mix well.
  • 2. Add the meats and mix well. I do this with my hands.
  • 3. Place the meatloaf mix in a well greased pan. I line mine with parchment paper. Pat down to shape loaf in to desired shape.
  • 4. Mix the glaze ingredients in a small bowl and frost the top of the meatloaf. Add some extra freshly ground pepper on top if you desire.
  • 5. Bake in a 350 degree oven for 1 hour 30 minutes. Turn up heat to 450 degrees the last 10 minutes to crisp and brown.
  • 6. Remove from oven and rest on a hot pad for at least 20 minutes before slicing.

1 cup fresh basil leaves
1/2 cup sun-dried tomato halves
2 cups panko crumbs
1/2 cup fresh italian parsley leaves
1/2 medium sweet white onion
2 tsp dried oregano
1 tsp dried thyme
1-1/4 cups coarsely grated or chopped smoked gouda or smoked mozzarella
2 lightly beaten large eggs
2/3 cup Trader Joe's Garden Patch vegetable juice or other tomato juice
S&P to taste
3 tbsp organic ketchup

Steps:

  • Preheat oven to 350 (convect). Pulse mushrooms in food processor until finely chopped, and add to large mixing bowl. Do same with basil, sun-dried tomatoes, and onion together, and add to bowl. Process panko with dried herbs and fresh parsley until well combined, and add to bowl. Add 1 cup smoked cheese, turkey, and panko mixture to bowl and mix together with hands until well combined. Add beaten eggs and tomato juice and mix with hands again. Spread mixture out on a piece of waxed paper or foil, into a 12 x 15 rectangle and then roll up from one short side, using foil to guide you. Slip foil out from underneath, tuck in ends, and place meatloaf roll in shallow baking pan. Spread top with organic ketchup and bake about 1 hour. Remove from oven, sprinkle with remaining 1/4 cup grated cheese and return to oven another 10 minutes. Allow to rest about 10 minutes before slicing.

So when I got home I opened the fridge, looked around and started to take things out and put it on the counter. I sorted out a few items and what was left became a meatloaf. It was delicious. I tried it again, this time using the same ingredients but figuring out how much of what to put in and it was still great. So I present it to you to try and enjoy.

2 (4 ounce) packages crumbled herbed feta cheese (I use Tomato basil and a garlic oregano)
1/2 cup Italian dressing
3/4 cup breadcrumbs

  • Preheat oven to 375°F
  • Mix everything together in a large bowl. Depending on the dryness of the ground meat you may want to add more or less Italian dressing and/or bread crumbs. I cook mine in a large 13 x 9 baking dish. I form the meat into a meatloaf.

ITALIAN-ASIAN TURKEY MEATLOAF image

4 medium finely chopped onions
6 cloves minced garlic
2 tablespoons olive oil
12 oz finely chopped portabello mushrooms
2 teaspoons seasoning salt
1 teaspoon black pepper
2 tablespoons low sodium soy sauce
1/3 cup Soy Vey teriyaki sauce
1/2 cup seasonings (parsley, oregano, thyme, rosemary, marjoram, savory, sage, basil)
1 cup plus 1/3 cup Italian-style breadcrumbs
1/3 cup soy milk
3 tablespoons hot pepper sauce
1 whole large egg and 1 egg white
2 lb ground turkey
5 slices of deli cut Swiss cheese

Steps:

  • Preheat oven to 375 F. Saute onion and garlic on the stove in the olive oil over moderate heat, stirring, for roughly 5-8 minutes. Add mushrooms, 1 teaspoon seasoning salt and the black pepper, and cook, stirring occasionally, for about 15 minutes. Once this is done, add the soy sauce, teriyaki sauce and seasonings, mix well, and transfer contents of the skillet into a large mixing bowl. Allow these to cool. In another bowl, pour 1 cup of the breadcrumbs, the hot pepper sauce, and the soy milk and mix well. Allow to sit for 3-5 minutes, then add the egg and egg white and mix well again. Add this mixture to the cooled vegetables. Add the 2 lbs of ground turkey to the large bowl and mix well with your hands. In an oiled baking pan (I used a 13 X 9 glass pan), spoon out 1/3 of the mixture and flatten. Cut the deli slices of cheese in half and arrange in the middle so that the cheese will be fully surrounded by the meat mixture. Mold the remaining 2/3 of the meat mixture on top of the base so that the finished product is an oval loaf. Spread remaining 1/3 cup breadcrumbs over the meatloaf. Bake meatloaf in middle of oven for 60-65 minutes. Remove meatloaf from oven and cover with aluminum foil. Let rest for 20-25 minutes before serving.
