ITALIAN TUNA PATTIES
My family loves these tuna patties. I serve them with a nice green salad and Italian green beans.

Steps:
- 1. Shred the zucchini. Place it in a colander. Press lightly with a spoon to remove the liquid.
- 2. Place all ingredients except oil into a mixing bowl. Stir to blend very well.
- 3. Form the mixture into patties. Set aside.
- 4. Heat olive oil in a large skillet over medium.
- 5. Cook patties until golden brown (about 2-3 minutes per side) Drain on paper towel lined plate.
- 6. *** Be sure not to crown the skillet. Cook in batches if needed.
- 7. Serve immediately

One of my favorite cheap & easy lunches. I like them with a dollop of mayonnaise or tarter sauce, or serve on a bun with lettuce, tomato and mayo. I've even reheated the leftover patties the next day in my toaster!

Steps:
- Mix all ingredients together except butter and olive oil.
- Shape into 4 patties and chill in refrigerator for 1 hour to firm up.
- After patties have chilled, melt butter in skillet and add olive oil.
- Fry patties 3-4 minutes on each side or until browned.
