My family loves these tuna patties. I serve them with a nice green salad and Italian green beans.

Number Of Ingredients 13

2 (5 oz.) can(s) light tuna in water, drained well
1 medium zucchini, shredded
1 egg, lightly beaten
1/2 c italian bread crumbs
2 Tbsp shredded mozzarella cheese
2 Tbsp grated parmesan cheese
2 Tbsp mayonnaise
1/2 tsp oregano
1/2 tsp basil
1/4 tsp onion powder
1/2 tsp garlic powder
to taste salt & pepper
2-3 Tbsp olive oil

Steps:

  • 1. Shred the zucchini. Place it in a colander. Press lightly with a spoon to remove the liquid.
  • 2. Place all ingredients except oil into a mixing bowl. Stir to blend very well.
  • 3. Form the mixture into patties. Set aside.
  • 4. Heat olive oil in a large skillet over medium.
  • 5. Cook patties until golden brown (about 2-3 minutes per side) Drain on paper towel lined plate.
  • 6. *** Be sure not to crown the skillet. Cook in batches if needed.
  • 7. Serve immediately

One of my favorite cheap & easy lunches. I like them with a dollop of mayonnaise or tarter sauce, or serve on a bun with lettuce, tomato and mayo. I've even reheated the leftover patties the next day in my toaster!

1 (6 ounce) can tuna
1/4 cup Bisquick
1/3 cup red onion, chopped
1/2 cup Italian breadcrumbs
2 tablespoons flat-leaf Italian parsley, chopped
1/2 teaspoon garlic salt
2 eggs, lightly beaten
2 teaspoons butter
2 teaspoons extra virgin olive oil

Steps:

  • Mix all ingredients together except butter and olive oil.
  • Shape into 4 patties and chill in refrigerator for 1 hour to firm up.
  • After patties have chilled, melt butter in skillet and add olive oil.
  • Fry patties 3-4 minutes on each side or until browned.
