Sauce the way mamas in ital make it--meatballs that melt in your mouth. If I was on death row this is what I would want! God's honest truth! PLEASE PLEASE use it for Recipe #73939--it's amazing.

olive oil
1 lb bone in country-style spareribs or 1 lb pork neck bones
1 lb mild Italian sausage
5 garlic cloves (I use 5)
1/2 cup tomato paste, less than
3 (14 1/2 ounce) cans peeled whole tomatoes (or if you want use peeled fresh tomatoes from the garden)
salt and pepper
fresh basil leaf (you can buy it in the produce section)
3 garlic cloves, minced
1 lb ground beef
3/4 cup Italian breadcrumbs
3 eggs
1/2 cup parmesan cheese or 1/2 cup finely grated pecorino romano cheese
3 tablespoons chopped fresh Italian parsley
salt and pepper

Steps:

  • SAUCE: Heat oil in large heavy pot (use a seasoned pot if you have one). Place the pork in the pot and brown until just about cooked. Transfer pork to plate. Do the same with the sausage and transfer to plate. Leave fat in pot. Add whole peeled garlic cloves cook until tender. Put garlic on plate with meat and stir in tomato paste until "saucy". Chop up tomatoes leaving the tomato juice in the cans (I use my chopper) and add them to the pot.
  • Then add 1/2 of one can of the juice to the pot. Add salt and pepper to taste. Add the meats and garlic to the sauce and bring to a boil. Turn down to low and cook for about 1 1/2 hours. Leave the sauce on low and remove all the meat and garlic cloves.
  • Mix all ingredients for meatballs and shape into balls. Add to sauce turn up just a little higher than low and let cook the raw meatballs until they are done (1/2 hour) THATS IT!
  • Now this is an old recipe, but I have seen it in the sopranos cookbook and this is a bit different.
  • I used this sauce to make the ziti al forno from the sopranos cookbook (Recipe #73939) and it was the most amazing thing I have ever eaten, so I posted that too.

Pressure Cooker Sunday Gravy, Italian Ragu Sauce over Pasta Recipe - (4.2/5) image

SAUCE:
2 tablespoons olive oil
1 rack baby back ribs (about 2 1/4 pounds), cut into 2-rib sections
Table salt and ground black pepper
1 pound hot Italian sausage links
2 medium onions, chopped fine (about 2-cups)
1 1/4 teaspoons dried oregano
3 tablespoons tomato paste
4 medium garlic cloves, minced or pressed through garlic press (about 4-teaspoons)
2 (28-ounce) cans crushed tomatoes
2/3 cup beef broth
1/4 cup fresh basil leaves, chopped
MEATBALLS:
2 slices hearty white sandwich bread, crusts removed and bread cut into 1/2-inch cubes
1/2 cup buttermilk (Six tablespoons of plain yogurt thinned with 2 tablespoons of milk can be substituted for the buttermilk.)
1/4 cup fresh parsley leaves, chopped
2 medium garlic cloves, minced or pressed through garlic press (about 2 teaspoons)
1 large egg yolk
1/2 teaspoon table salt
1/4 teaspoon crushed red pepper flakes
1 pound meatloaf mix* (I used a combo of ground beef and pork)
2 ounces thinly sliced prosciutto, chopped fine
1 ounce Pecorino Romano, grated (about 1/2 cup)
1/2 cup olive oil
PASTA:
1 1/2 pounds spaghetti or linguine
2 tablespoons table salt
Grated parmesan cheese for serving

Steps:

  • Notes: I made the meatball mixture, first, since my pressure cooker time was 45 minutes. If using the stove top method, you will have 2-1/2 hours of time to make the meatballs-- which are absolutely delicious on their own! Note: Prosciutto and cheese are added to the meatball mixture to mimic the flavor of the brasciole. Sauce: Pressure cooker method: Do not preheat the oven, as you won't be using it. Using browning cycle, follow steps 1 to 6 (below). Traditional method: Adjust oven rack to lower- middle position and heat oven to 325°F Heat oil in large Dutch oven over medium-high heat until just smoking. Pat ribs dry with paper towels and season with salt and pepper. Add half of ribs to pot and brown on both sides, 5 to 7 minutes total. Transfer ribs to large plate and brown remaining ribs. After transferring second batch of ribs to plate, brown sausages on all sides, 5 to 7 minutes total. Transfer sausages to plate with ribs. Reduce heat to medium, add onions and oregano; cook, stirring occasionally, until beginning to brown, about 5 minutes. Add tomato paste and cook, stirring constantly, until very dark, about 3 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add crushed tomatoes and broth, scraping up any browned bits. Return ribs and sausage to pot; bring to simmer, cover, and transfer to oven**. Cook until ribs are tender, about 2½ hours**. **Pressure cooker method: Once the meats have been browned, and the sauce made, cover and lock on the pressure cooker lid. Pressure cook on high for 45 minutes. In the meantime, prepare the meatballs. Meatballs: Meanwhile, combine bread cubes, buttermilk, parsley, garlic, egg yolk, salt, and red pepper flakes in medium bowl and mash with fork until no bread chunks remain. Add meatloaf mix, prosciutto, and cheese to bread mixture; mix with hands until thoroughly combined. Divide mixture into 12 pieces; roll into balls, transfer to plate, cover with plastic, and refrigerate until ready to use. When sauce is 30 minutes from being done, heat oil in large nonstick skillet over medium-high heat until shimmering. Cook meatballs: Add meatballs and cook until well browned all over, 5 to 7 minutes. Transfer meatballs to paper towel-lined plate to drain briefly. Oven version: Remove sauce from oven and skim fat from top with large spoon. Transfer browned meatballs to sauce and gently submerge. Cover, return pot to oven, and continue cooking until meatballs are just cooked through, about 15 minutes. Pressure cooker version: When the pressure cooker beeps, release the pressure and carefully remove the lid. Skim fat from top with large spoon. Transfer browned meatballs to sauce and gently submerge. Replace the lid, and lock it, and pressure cook for 3 minutes. Release the pressure and carefully remove the lid. Pasta: Meanwhile, bring 6 quarts water to boil in large pot. Add pasta and salt and cook until al dente. Reserve 1/2 cup cooking water; drain pasta and transfer back to cooking pot. To serve: Using tongs, transfer meatballs, ribs, and sausage to serving platter and cut sausages in half. Stir basil into sauce and adjust seasoning with salt and pepper. Toss pasta with 1 cup sauce and reserved pasta cooking water so that sauce lightly coats pasta. Serve pasta, passing remaining sauce and meat platter separately.

1/2 Cup EVOO
1 lb Sweet Italian Sausage
1/2 lb Hot Italian Sausage
6 Thinly Sliced Pork Chops (about 3 lbs)
2 Cups Dry Red Wine
2 TBSP Chopped Garlic
2 Onions, Diced
1 Cup Diced Pancetta
1 TBSP Crushed Red Pepper
1 Gallon Canned Italian Plum Tomatoes, undrained
2 Cups Chopped Fresh Basil
2 lbs Cooked Meatballs (see recipe)
2 lbs Uncooked Rigatoni Pasta

Steps:

  • 1. In a large pot over medium heat, heat the oil and sate the sausages and pork chops until brown (about 10 minutes). Don't worry if the meat is not cooked through, because it will finish in the sauce. Remove the meat from the pan and set aside. Keep pan over medium heat. Deglaze the pan by adding 1 cup of the wine and scraping the bits. 2. In the same pot, add the garli, onions, pancetta & crushed pepper and cook until the onions and garlic are lightly browned, about 2 mins. Add the remaining 1 cup of red wine and cook until the mixture is reduced by half. Add the tomatoes and simmer for 1 hour over low heat. 3. Add the basil, sausages, pork chops, and meatballs to the tomato sauce and simmer for 1 more hour over low heat. 4. In a large pot of boiling, salted water, cook the pasta until al dente. Drain the pasta, toss with sauce and serve immediately.

2 (28 ounce) cans crushed tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 onion
1 cup water
2 bay leaves
4 tablespoons red wine
1 tablespoon sugar
4 garlic cloves
1 tablespoon oregano
1 tablespoon parsley
1 tablespoon basil (can use fresh as well)
1 teaspoon red pepper flakes (optional)
salt & pepper
2 tablespoons olive oil
1 lb angel hair pasta

Steps:

  • Preheat pot (I like a non stick pot) with olive oil. Diced up onion and mince garlic. Add to the pot and saute until cooked thru but not browned. Add the oregano, parsley, red pepper flakes (optional), bay leaves and basil (if using fresh basil, wait until sauce is already simmering). Add the sugar and red wine. Let the red wine reduce a bit. Add in the tomato paste and mix well with the other ingredients already in the pot. Let it kind of "melt" before adding the crushed tomatoes and tomato sauce. I add 1 can at a time to allow for easier blending. Add the water, stir. Cover and bring to a simmer then reduce heat to low. Put a lid on it and fugghetaboutit for a while! Stir occasionally to avoid it burning at the bottom of the pot. I would let it simmer for a minimum of 4 hours -- Make sure to fish out the bay leaves before serving!
  • Serve with pasta and top with parmesean cheese or use my fave-fried bread crumbs!

2 pounds pork neck bones
2 teaspoons kosher salt, plus more to taste
1 teaspoon ground black pepper
2 tablespoons olive oil, divided
1 ¼ pounds Italian sausage links
1 ½ cups finely chopped white onion
2 cloves garlic, minced
2 (12 ounce) cans tomato paste
1 (28 ounce) can tomato puree
1 (28 ounce) can crushed tomatoes
7 cups water
1 tablespoon white sugar, or more to taste
1 bay leaf
1 tablespoon dried basil
½ teaspoon dried oregano
12 large cooked meatballs

Steps:

  • Sprinkle neck bones on all sides with salt and pepper.
  • Heat 4 teaspoons oil in a large, heavy-bottomed stockpot or Dutch oven over medium-high heat. Place neck bones in the pot and cook for 6 minutes, flipping halfway through. Transfer to a plate.
  • Add sausage links to the drippings and brown for 3 minutes on each side, adding remaining oil as needed. Set aside with the pork.
  • Add onion to the drippings and season with salt. Cook, stirring often, until onion is soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in tomato paste and cook for 1 minute.
  • Add tomato puree and crushed tomatoes, than add water and sugar; cook, stirring constantly, until smooth. Add bay leaf. Rub basil and oregano between your fingers to release the aroma and add to the sauce.
  • Slice sausages into large chunks and return to the pot with the neck bones; bring to a simmer, stirring occasionally. Add meatballs, reduce heat to low, and simmer, stirring occasionally, for 4 to 6 hours.
  • Remove neck bones and bay leaf. Remove any meat remaining on the bones, shred, and return to the sauce.

Steps:

  • Preparation For MEATBALLS.
  • 1. Mix all ingredients except olive oil in a large bowl.
  • 2. Shape Meatballs into whatever size you prefer; small.
  • medium or large.
  • 3. Fry Meatballs in olive oil over a medium heat until they are nicely browned.
  • Preparation For GRAVY (SAUCE).
  • 1. Place onions in olive oil in a large pot. Sauté onions over a low flame for 4 minutes. Add garlic and sauté on low flame with onions for 3 minutes.
  • 2. Add all the tomatoes and water. Raise flame to high. Bring the tomatoes up to the boil, then lower the sauce to a very low simmer.
  • 3. Cut the spareribs in-between the bones so you have individual Ribs. Add to pot.
  • 4. Place sausages in a separate pot fill with water. Bring to boil, then simmer for 10 minutes. Drain the sausages and add to pot with sauce.
  • 5. Make the Meatballs ( recipe follows) up to the point where they have cooked in the oven for 10 minutes.
  • 6. Let all ingredients simmer for 1 hour and 15 minutes.
  • 7. Add meatballs to pot and let simmer one hour longer.
  • 8. Serve the sauce with your favorite Short Pasta such as Rigatoni, Gnocchi, or Ziti.
  • NOTE: The sauce should simmer on a very low flame. It is important to stir the bottom of the pot with a wooden spoon every few minutes to keep the sauce from burning.

Authentic Italian Sunday Gravy (Nana's Meat Sauce) image

This Authentic Italian Sunday Gravy is what I grew up eating. Nana's tomato meat sauce holds a fond place in my heart & her recipe lives on to this day.

Number Of Ingredients 13

2 Tablespoons olive oil
1 lb. pork spareribs
1 lb. beef stew meat
1 lb. Italian sausage ( spicy or mild, based on personal preference)
6 cloves garlic (peeled and left whole)
¼ cup tomato paste
3 28-oz. cans crushed tomatoes
1 cup water
8 leaves fresh basil (torn into small pieces)
Salt and Pepper (to taste )
1 Tablespoon sugar (more or less based on the flavor of your tomatoes)
Parmesan (shaved, for topping)
Pasta

Steps:

  • Heat the oil in a large heavy pot over medium heat.
  • Pat the pork dry and put the pieces in the pot.
  • Cook turning occasionally, for about 15 minutes or until nicely browned on all sides.
  • Transfer pork to a plate.
  • Brown the beef in the same way and add it to the plate.
  • Place the sausages in the pot and brown on all sides.
  • Set the sausages aside with the pork and beef.
  • Drain off most of the fat from the pot.
  • Add the garlic and cook for about 2 minutes or until golden.
  • Remove and discard the garlic.
  • Stir in the tomato paste and cook for 1 minute.
  • Add the tomatoes to the pot.
  • Add the water; season with a pinch salt and pepper.
  • Return the pork, beef, and sausages to the pot and bring sauce to a simmer.
  • Partially cover the pot and cook over low heat, stirring occasionally, for at least 2 hours.
  • If the sauce becomes too thick, add a little more water.
  • At the end, add sugar, to taste, and adjust your seasonings one more time with salt and pepper. Add basil leaves and serve over your favorite pasta, topped with shaved Parmesan.
