1/2 large onion, thinly sliced
1 12-inch loaf soft Italian bread
5 tablespoons red wine vinegar
5 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/4 pound deli-sliced provolone cheese
1/4 pound deli-sliced Genoa salami
1/4 pound deli-sliced boiled ham
1/4 pound deli-sliced mortadella
1/4 pound deli-sliced capicola
1/2 head iceberg lettuce, finely shredded
1/4 to 1/2 cup sliced pickled pepperoncini (optional)
3 plum tomatoes, thinly sliced
1 1/2 teaspoons dried oregano

Steps:

  • Soak the onion slices in a large bowl of cold water, 15 minutes.
  • Meanwhile, split the bread lengthwise, then pull out some of the bread from the inside. Drizzle 2 tablespoons each vinegar and olive oil on the bottom half. Season with salt and pepper.
  • Layer the cheese and meat on the bottom half of the bread. Drain the onion and pat dry. Top the meat with the onion, lettuce, pepperoncini (if using) and tomatoes. Drizzle with 2 tablespoons each vinegar and olive oil and sprinkle with the oregano. Season generously with salt and pepper.
  • Drizzle the cut side of the bread top with the remaining 1 tablespoon each vinegar and olive oil, then place on top of the sandwich. Cut into 4 pieces.

1 medium red onion, chopped

Steps:

  • In a large bowl, toss together the lettuce, tomatoes and onion. In a separate bowl, whisk together the olive oil, white wine vinegar, parsley, garlic, basil, red pepper flakes and oregano. Pour over the salad, and toss to coat evenly. Refrigerate for about 1 hour.
  • Spread the submarine rolls open, and layer the Capacola, salami, prosciutto, and provolone cheese evenly on each roll. Top with some of the salad, and as many pickle slices as desired. Close the rolls and serve.

1 teaspoon dried oregano
1/2 teaspoon sugar

Steps:

  • In a large bowl, combine eggs and milk; add the bread crumbs, cheese, salt, pepper and garlic powder. Add beef and sausage; mix well. Shape into 1-in. balls. Preheat broiler. Place meatballs in a 15x10x1-in. baking pan. Broil 4 in. from the heat for 4 minutes; turn and broil 3 minutes longer. , Transfer to a 5-qt. slow cooker. Combine the tomato sauce and paste, onion, green pepper, wine, water and seasonings; pour over meatballs. Cover and cook on low for 4-5 hours. Serve on rolls.   • Put into a crock pot.
  • Combine sauce ingredients in a sauce pan and heat pour over meatballs.
  • Cover and cook on low for 4-6 hours.
  • Put on sub rolls along with Provolone cheese and put under the broiler for a few minutes till cheese melts.
  • Serve hot.

3 Italian sausages
1 teaspoon olive oil
1 onion, peeled and cubed into 1-inch squares
1/2 green bell pepper, seeded and cubed into 1-inch squares
1 -2 cup pizza sauce (recommended 2bleu's 2 Minute 2 Easy Pizza Sauce)
2 italian hoagie rolls (6-inch rolls)
2 ounces provolone cheese, sliced
4 ounces mozzarella cheese, sliced (or shredded)

Steps:

  • Preheat oven to 375°F Place one rack in center of oven, the other on the top shelf for broiling. Spray an 8x8 pan with non-stick cooking spray. Bake sausage on the center rack for 20-25 minutes till cooked thru, turning once.
  • Meanwhile, using a medium pot, heat olive oil over medium heat. Add peppers and onions, reduce heat to low and cover. Simmer for 10-15 minutes or until peppers are just soft, stirring occasionally.
  • Add pizza sauce and continue to simmer until sausages are cooked thru.
  • Create aluminum foil 'boats' around each opened sub roll and place on a baking sheet (keeping them intact and also in a boat shape to hold in the filling). Remove sausages from oven, and place the 'boats' into the oven to lightly toast (watch for burning!).
  • Place the links on a cutting board and using tongs (the sausage will be hot), steady the links and cut into 1/2" slices (or you can slice lengthwise) and add to the pot of sauce, stirring to coat.
  • When buns are toasted, remove from oven keeping the buns on the baking sheet, place the sausage mixture (reserving about 2 tbsp sauce only) on the bottom half of the bread. Top sausage mixture with provolone. To the top half, spread thinly the remaining sauce and then sprinkle generously with the mozerella cheese.
  • Return subs to top rack of oven and broil for 1-2 minutes till cheese is melted and bubbly. Allow to cool slightly before serving. Using the foil boats to keep the sandwich together. Just pull down from one side and dive in!

1/2 c yellow onion, chopped
1 jar(s) spaghetti sauce (garden combination; 24 oz)

6 slice provolone cheese, muenster cheese, or Swiss cheese (can also use Colby Jack or shredded cheddar)

Steps:

  • 1. Combine ground beef, Italian sausage, and onion.
  • 2. Use a 1/3 scoop amount of the meat mixture to form meatballs. You want them large because they will shrink. Place in 13 x 9 baking dish.
  • 3. Bake at 350 of 45 minutes.
  • 4. Add spaghetti sauce and pizza sauce. Bake for another 15 minutes.
  • 5. Leave hoagie rolls closed and toast hoagie rolls only on the outside.

Steps:

  • 1. Bake Italian sausages in a 350 degree oven or grill over medium heat for 25 minutes or until cooked through. Meanwhile heat spaghetti sauce, cover and simmer on low until brats are cooked.
  • 2. Spray buns with butter flavor cooking spray and toast under the broiler for a few minutes just until they start to toast.
  • 3. Place sausage on toasted bun. ladle with spaghetti sauce and top generously with mozzarella cheese.

1 lb ground sirloin
1 lb ground white chicken (bulk)
1/2 c bread crumbs ( i make my own)
1/2 c milk or canned milk
olive oil / butter for sauté
1 small onion (chopped)
1/3 c fresh grated parmesan cheese
24 oz jar of your choice marinara sauce
1 Tbsp tomato paste (6 oz. can) keep the rest for your sauce
2 stalk(s) celery (chopped)
5 fresh mushrooms (diced)
2 clove garlic (minced)
1 large egg (beaten)
1 tsp oregano
1/2 tsp basil
1/2 tsp marjoram
1 tsp salt and pepper
1 tsp cayenne or more if you like it hot
1 Tbsp worcestershire sauce
buns / provolone cheese or mozzarella

Steps:

  • 1. Put breadcrumbs and milk in small bowl and set aside to let the milk absorb
  • 2. In a medium size skillet add your oil and butter let it melt then add all vegetables and all seasoning. Sauté till limp once soft add Worcestershire sauce. Then let it cool
  • 3. In large bowl put both meats, grated fresh parmesan cheese, beaten egg, then the breadcrumbs and last the vegetables
  • 4. Now gently fold all together to incorporate I use a large cookie scoop to measure out my balls but you can use what is best for you
  • 5. Preheat oven to 350* and place balls on greased cookie sheets or a pizza pan and cook for 20 minutes then turn over and cook for another 15 minutes
  • 6. Once done I put them all in crockpot and I mix my sauce and remaining paste together and add 1 tsp of sugar in separate bowl then I pour over balls
  • 7. Cook on low for three hours. I like to toast my buns and then put provolone or Mozzarella cheese on top and broil till cheese is melted.

1 garlic french bread
8 oz cream cheese, room temperature
2 tsp dried italian seasoning
3/4 tsp anise seed or fennel seed
3 oz butter, room temperature
3/4 tsp garlic powder
1 1/2 lb frozen meatballs, thawed to room temperature
1 large jar of prego spaghetti sauce, any flavor
4 c mozzarella cheese
1/2 c parmesan cheese, grated
olive oil for drizzling on top

Steps:

  • 1. Spray 9x13 baking dish with non stick spray. Heat oven to 350 degrees.
  • 2. Slice the bread into 3/4 inch slices and place snugly into the baking dish.
  • 3. Combine cream cheese, butter, garlic powder, Italian seasoning and anise or fennel. Mix well and spread on top of all the bread slices.
  • 4. Cut meatballs in half and place them in tight rows over the whole top of casserole, making sure the rounded part is on top.
  • 5. Next, spoon spaghetti sauce over the top. You don't want it really soggy so just enough to lightly cover.
  • 6. Top with mozzarella cheese. Add the Parmesan cheese to the top of mozzarella. Drizzle with a little olive oil and bake in the oven for 30-45 minutes until heated through and cheese is melted to your liking! Then just use a spatula to remove them from pan and enjoy!

1/3 cup olive oil
4-1/2 teaspoons white wine vinegar
1 tablespoon dried parsley flakes
2 to 3 garlic cloves, minced
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 cup sliced pimiento-stuffed olives
6 submarine sandwich buns (10 inches), split
24 thin slices hard salami
24 slices provolone cheese
24 thin slices fully cooked ham
Lettuce leaves, optional

Steps:

  • In a small bowl, combine the oil, vinegar, parsley and garlic. Stir in olives. Cover and refrigerate for 8 hours or overnight., Place about 2 tablespoons olive mixture on the bottom of each bun. Top each with four slices of salami, cheese and ham; add lettuce if desired. Replace tops.

1 loaf (1 pound, 20 inches) French bread, unsliced
24 thin slices hard salami
24 slices provolone or mozzarella cheese
24 slices fully cooked ham
Lettuce leaves, optional

Steps:

  • In a small bowl, combine the oil, vinegar, parsley and garlic. Stir in olives. Cover and refrigerate for 8 hours or overnight., Cut bread in half lengthwise. Spread olive mixture on the bottom of the bread. Top with salami, cheese and ham; add lettuce if desired. Replace top. Cut into 2-in. slices. Insert a toothpick in each slice.

ITALIAN MEATBALL SUBS

I've been meaning to post this recipe for 3 years now...here it is. These meatballs have a crispy outside but moist and juicy inside. If you love a good hearty meatball sub you will love the flavors of this one. I added my friend Megan Todd's recipe for red sauce and peppers below. It is outstanding and pairs perfectly with these meatballs. I hope to make her recipe this summer and can up some amazing peppers & onions myself.

Number Of Ingredients 10

1 pound(s) lean ground beef
3 medium roasted red peppers, diced
1/2 small sweet onion, minced
2 teaspoon(s) italian seasoning
1/3 cup(s) parmesan & romano cheese
1 teaspoon(s) garlic salt
1 cup(s) panko bread crumbs
1 bag(s) mozzarella or provolone cheese, shredded
1 jar(s) red sauce w/peppers & onions
- hoagie buns

Steps:

  • Saute your onions in some oil before adding to your meatball mixture. Add ingredients meat, roasted reds, onions, Parmesan & Romano & seasonings and roll out your meatballs. Then, roll them in the panko crumbs and place on a greased pan to bake.
  • Bake them at 350 degrees for about 30 minutes turning at least once. Make sure they are cooked through. While baking heat up your sauce that you will be using so it's nice and hot to assemble your subs.
  • Remove from oven and assemble your subs. Toast up your hoagie buns. Then and add your meatballs, chunky pepper & onion sauce and on top the mozzarella cheese. Place in the oven till your cheese is melted.
  • My sweet friend Megan Todd makes the most incredible canned sauce called https://www.justapinch.com/recipes/appetizer/vegetable-appetizer/grandma-vinions-canned-peppers-in-red-sauce.html?p=1. We are very blessed to get a couple jars from her for the last several years and it just amazing. Now, you could also use Paul Newman's sauce called Sockarooni or a sauce that has chunky peppers in it.
  • Here we are finally have the sub assembled and ready to eat. I didn't have the usual hoagie bun in this photo I took so I used regular hot dog buns. Not as good, but they worked.
  • August 19th, 2015 --- Had another jar of Megan Todd's peppers so I thought it's time to roll some meatballs. We just love these subs. Whether hot or sweet peppers...it's all good topped with some mozzarella cheese. yumm
