1/2 cup dried pinto bean
1/2 cup dried pink beans
1/2 cup dried kidney beans
1 cup small bow tie pasta, uncooked
1 tablespoon dried parsley
1 tablespoon chicken bouillon
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic salt
1 teaspoon salt
1/2 teaspoon instant minced garlic
1/4 teaspoon red pepper flakes
1 (28 ounce) can crushed tomatoes
1 cup sliced carrot
1 cup sliced celery
1 cup chopped onion

Steps:

  • Layer beans in order listed in a 1-quart wide-mouth jar; set aside.
  • Place pasta in a plastic zip-lock bag; gently pack on top of beans; secure lid.
  • Place the remaining ingredients in a small plastic zip-lock bag or small jar; pack both jars or jar and zip-lock bag together in a basket; include cooking instructions.
  • Cooking instructions: set the spice mixture and pasta aside; pour the beans in a mixing bowl; rinse with water and drain.
  • Cover the beans with water; let soak overnight; rinse, drain, and pour into a 5-quart Dutch oven; add in 8 cups water, a 28 ounce can crushed tomatoes, seasonings in jar or bag, 1 cup sliced carrots, 1 cup sliced celery, 1 cup chopped onions.
  • Bring to a boil; lower heat, and simmer, covered, for 2 hours.
  • Uncover and gently boil until thickened (about 35 minutes).
  • Stir in pasta; heat about 10 minutes or until pasta is tender.

1 cup small pasta shells
3/4 cup dried great northern beans
3/4 cup dried pinto beans
3/4 cup dried kidney beans
1/4 cup dried minced onion
3 tablespoons dried parsley flakes
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon dried minced garlic
1 bay leaf
Dash crushed red pepper flakes
ADDITIONAL INGREDIENTS:
14 cups water, divided
1 can (28 ounces) diced tomatoes, undrained
3 medium carrots, chopped
1 celery rib, chopped
1 teaspoon salt
Grated Parmesan cheese, optional

Steps:

  • Place pasta in a small resealable plastic bag; place in a 1-qt. glass jar. Layer with beans. Place seasonings in another plastic bag; place in jar. Cover and store in a cool, dry place for up to 3 months. Yield: 1 batch., To prepare soup: Remove seasoning packet from jar. Remove beans; sort and rinse. Set pasta aside., Place beans in a Dutch oven; add 6 cups water. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand 1 to 4 hours or until beans are softened. Drain and discard liquid., Return beans to the pan. Add contents of seasoning packet and remaining water. Bring to a boil. Reduce heat; cover and simmer 1 hour or until beans are tender. Add tomatoes, carrots, celery and salt; cover and simmer 30 minutes longer, stirring occasionally., Stir in pasta. Cover and simmer 5-10 minutes or until pasta and carrots are tender, stirring occasionally. Remove bay leaf before serving. Garnish with cheese if desired.

⅓ cup beef bouillon granules
¼ cup dried minced onion
½ cup dried split peas
½ cup uncooked twist macaroni
¼ cup barley
½ cup dry lentils
⅓ cup long-grain white rice
1 cup uncooked tri-color spiral pasta

Steps:

  • Use a canning funnel or any funnel that has about a 2-inch neck. This will make it easier to fill the jar with the ingredients. Be sure to use a wide-mouth, 1-quart canning jar.
  • Layer ingredients in the order given: bouillon, onion flakes, split peas, small shape pasta, barley, lentils, rice, and enough tricolor spiral pasta to fill jar.
  • Attach tag with cooking instructions: In large kettle, brown 1 pound ground beef or stew beef cut into bite-size pieces in a little olive oil. Remove tricolor pasta from top of jar and reserve. Add the rest of the jar contents to the kettle with 12 cups water. Let come to a boil and simmer 45 minutes. Add tricolor pasta and simmer 15 minutes more. Serve with your favorite bread or rolls and a tossed salad.

¼ cup pearl barley
½ cup dry lentils
¼ cup dried onion flakes
2 teaspoons dried Italian seasoning
½ cup uncooked long-grain white rice

½ cup uncooked alphabet pasta

Steps:

  • In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.
  • Attach a label to the jar with the following instructions: Friendship Soup ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper to taste, garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water. TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.

1/2 cup dried green split peas
1/3 cup beef bouillon granules
1/4 cup medium pearl barley
1/2 cup dried lentils
1/4 cup dried minced onion
2 teaspoons Italian seasoning
1/2 cup uncooked long grain rice
1/2 cup uncooked alphabet pasta or other small pasta
ADDITIONAL INGREDIENTS:
1 pound ground beef (90% lean)
3 quarts water
1 can (28 ounces) diced tomatoes, undrained

Steps:

  • In a 1-1/2-pint jar, layer the first seven ingredients in the order listed. Wrap pasta in a small sheet of plastic wrap; add to jar. Seal tightly. Store in a cool, dry place for up to 3 months., To prepare soup: Remove pasta from jar and set aside. In a Dutch oven over medium heat, cook the beef until no longer pink; drain.
