We love roasted cauliflower for its nutty flavor and its versatility. While little needs to be added to enhance the flavor, many herb and spice combinations will pair well with this side dish without adding lots of calories. Feel free to leave out the capers if your crew are not fans.

1 small head cauliflower, cut into medium-size florets (about 4 cups)
1/2 cup grape tomatoes, halved
3 tablespoons extra-virgin olive oil
1 tablespoon drained capers
Kosher salt and freshly ground black pepper
2 cloves garlic, thinly sliced
1/4 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Adjust an oven rack to the top position and preheat the oven to 475 degrees F. Toss together the cauliflower, tomatoes, olive oil, capers, 1/2 teaspoon salt, a few grinds of pepper and the garlic on a baking sheet. Roast until the cauliflower browns in some spots and is tender, tossing about halfway through, about 20 minutes. Toss with a squeeze of lemon and the parsley. Serve warm.

Cauliflower tossed in a spicy Buffalo wing sauce and grilled in a foil packet so there is no fuss and cleanup is a breeze.

1 ½ pounds cauliflower, broken into florets
¼ cup Buffalo wing sauce
1 teaspoon dry ranch dressing mix
1 teaspoon olive oil
aluminum foil

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine cauliflower florets, Buffalo wing sauce, ranch, and olive oil in a large bowl. Stir until evenly combined.
  • Pull out an extra-long length of aluminum foil and fold it in half so you've got a double layer. Place cauliflower mixture in the center, then pull over one side, folding the edges to seal. Then fold the remaining two edges. Don't seal the packet too tightly; you want to leave some room for the steam to expand.
  • Place foil packet directly on the grate and grill for 15 minutes.

Slightly spicy and garlicky, this side dish will complement most proteins. I like our veggies a little crunchy so I cooked this for just 10 minutes. This can be adopted to several servings, but I highly recommend 1 packet per person.

1 sheet heavy-duty aluminum foil, approximately 15 inches long
1 serving cooking spray
4 ounces cauliflower, cut into bite-sized pieces
1 tablespoon salted butter
1 small garlic, chopped
¼ teaspoon Italian seasoning

Steps:

  • Preheat the grill to medium heat, about 400 degrees F (200 degrees C).
  • Spread out aluminum foil on a clean work surface, fold in half, and lightly grease one side with cooking spray. Scatter cauliflower pieces onto the foil and dot with butter. Sprinkle with garlic and Italian seasoning. Bring the sides of the foil up and fold twice. Roll the ends towards the centre and press down to seal.
  • Grill, turning occasionally, for 10 minutes.

Baked Cauliflower With Italian Seasoning image

I got this from my aunt. My family is not usually a big fan of cauliflower but everyone goes back for seconds with this recipe.

1 head cauliflower, outer leaves removed
4 tablespoons margarine
1/4 cup Italian seasoned breadcrumbs
1/4 teaspoon garlic powder
1/8 teaspoon dried basil
1 pinch oregano

Steps:

  • Cut the bottom of the stem off of the head of cauliflower. Do not break apart the florets.
  • Cut an X in the bottom stem.
  • Steam the cauliflower for 10 minutes, turn over and steam for another 5 to 10 minutes, until it is fork tender.
  • Place the cauliflower in a baking dish.
  • Melt the margarine and mix in the bread crumbs, garlic powder, basil and oregano.
  • Spoon the breadcrumb mixture over the top and sides of the cauliflower.
  • Bake in a 350 degree oven for 10 - 12 minutes until the breadcrumbs are golden.

4 cups fresh cauliflowerets
2 tablespoons water
2 teaspoons olive or vegetable oil
2 tablespoons Progresso™ Italian style dry bread crumbs
1 teaspoon dried basil leaves
1 tablespoon chopped fresh parsley

Steps:

  • In medium microwavable bowl, cover and microwave cauliflower and water on High about 6 minutes, stirring once after 3 minutes, until tender; drain.
  • Meanwhile, in 7-inch skillet, heat oil over medium heat. Stir in bread crumbs and basil. Cook 1 to 2 minutes, stirring frequently, until bread crumbs are toasted. Stir in parsley. Sprinkle over cauliflower.
