Simple to make, a great twist on regular tacos. If you like Italian food, you'll certainly love these!

½ pound Italian sausage
1 pound ground beef
1 (16 ounce) jar tomato pasta sauce
1 teaspoon sugar
16 taco shells, heated
3 cups shredded mozzarella cheese
1 tablespoon dried Italian seasoning

Steps:

  • Combine the ground beef and Italian sausage in a large heavy skillet. Cook over medium heat until evenly browned. Drain off excess grease, and season meat with Italian seasoning.
  • Heat the pasta sauce in a saucepan over medium heat until heated through. When the sauce is warm, stir in the sugar.
  • Fill taco shells with the meat mixture, spoon pasta sauce over, and top with mozzarella cheese.

2 tablespoons olive oil
2 hot Italian sausages (about 6 1/2 ounces), casings removed
1 small red onion, thinly sliced
1 teaspoon ground cumin
4 6-inch-diameter corn tortillas
1/3 cup crumbled feta cheese
1/2 cup chopped fresh cilantro
1 1/3 cups sliced romaine lettuce
Purchased red or green salsa

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add sausage and cook until brown, coarsely crumbling with back of spoon, about 4 minutes. Push sausage to side of skillet. Add onion and cumin to skillet; sauté until onion is golden and sausage is cooked through, about 8 minutes. Stir to combine.
  • Char tortillas over gas flame or electric burner until blackened in spots, turning with tongs. Wrap in foil; let stand 2 minutes. Fill each tortilla with sausage mixture, 1 generous tablespoon feta, 2 tablespoons cilantro, and 1/3 cup lettuce. Serve with salsa.
  • To heat and char tortillas:
  • Place a tortilla directly on a gas or electric burner set on high. Using tongs, flip tortilla after it begins to brown, about 10 seconds per side. Wrap tortilla in foil to keep warm, and repeat with remaining tortillas.

Grilled Hot and Sweet Sausage Tacos with Apricot-Jalapeno Glaze, Grilled Pepper and Red Onion Salsa image

1 grilled poblano pepper, peeled, seeded and finely diced
1 grilled red bell pepper, peeled, seeded and finely diced
1 yellow bell pepper, peeled, seeded and finely diced
1/2 red onion, cut into 1/4-inch thick rounds, grilled and finely diced
3 tablespoons red wine vinegar
2 tablespoons olive oil
1/4 cup chopped fresh cilantro leaves
1/4 cup honey
Pinch salt and freshly ground black pepper
1 cup apricot preserves
2 jalapenos, grilled
2 limes, juiced
3 Italian hot sausage links
3 Italian sweet sausage links
Canola oil
Salt and freshly ground black pepper
Flour tortillas
Corn tortillas
Grated Monterey Jack cheese

Steps:

  • Salsa: Combine all the ingredients in a bowl and let sit at room temperature for at least 30 minutes before serving.
  • Sausage tacos: Combine the preserves, jalapeno and lime juice in a food processor and process until smooth. Season with salt and pepper, to taste.
  • Heat a grill to high. Brush the links with oil and season with salt and pepper, to taste. Grill until lightly golden brown. Cut the sausage in half lengthwise and brush the apricot glaze mixture on both sides. Grill until dark golden brown, then remove to a cutting board and slice.
  • Grill the tortillas quickly on each side just to heat through, about 5 seconds per side. Fill with some of the hot and sweet sausage and top with some of the cheese and some of the salsa.
