Classic Italian Sausage, Peppers & Onions image

Sausage, Peppers & Onions is a classic Italian favorite, especially if you grew up in Chicago. Grill the sausage on the BBQ to get that great char flavor, and to roast the peppers and onions in a hot oven, Then combine the grilled sausage with the roasted peppers, onions, and all the juices. Maybe add a drizzle of olive oil. Serve with crusty Turano rolls.

5 pounds Italian sausage (Sweet or Hot, or a combo)
2 large red bell peppers
2 large green bell peppers
2 large orange bell peppers
2 large yellow bell peppers
2 large Anaheim peppers
2 large sweet onions
2 tablespoons olive oil
2 teaspoons kosher salt
2 teaspoons black pepper

Steps:

  • Preheat the oven to 425 F.
  • Remove the stems and seeds from all the peppers. Cut in 2 inch chucks, Arrange on a lined baking sheet.
  • Peel and slice the onions. Arrange on a separate lined baking pan. Drizzle the peppers and onions with the olive oil. Toss to coat. Dust each baking sheet with salt and pepper. Place in hot oven and roast for 30 to 40 minutes or until the ends are charred and the vegetables are soft. The onions may take another 5 - 10 minutes to cook and slightly caramelize.
  • Remove from the oven. Transfer peppers and onions with all the juices to a covered foil pan. Keep warm until the sausage is ready.
  • Cook the Italian sausage coils (or links) on a hot grill over direct flames for about 15 - 20 minutes. Turn occasionally to get even cooking and allow for grill marks. The sausage should be cooked until the pink has just left the center of the sausage. Do not overcook.
  • Transfer the cooked sausage to a cutting board. Cut the sausage in 4 inch pieces on the diagonal.
  • Combine the sausage pieces with the roasted vegetables and toss to combine the juices. Drizzle with more olive oil if needed. Serve in a large serving platter with cut Turano sausage rolls on the side. It is extra special to lightly toast the inside of the buns on the grill!

Easy Italian Sausage, Peppers and Onions for a Crowd or a Few image

When my children are home for the summer they always ask for grilled foods and Italian sausage subs are a great meal for dinners or lunch. Well making 6-8 is easy enough on the grill but then all the friends are here (LOVE THAT) so I need to make enough for 20-30. Came up with this easy way to do sausage and they do taste great.

5 lbs Italian sausage, ropes (skin on)
8 green peppers, sliced into strips
4 vidalia onions, quartered
1 cup water
provolone cheese (optional) or mozzarella cheese (optional)

Steps:

  • put italian sausage ropes in roasting pan large enough to fit amount you are making.
  • quarter onions and put on top.
  • cut green peppers into strips and throw on top.
  • add water.
  • cover pan with heavy duty foil and bake for 2 hours at 300 degrees (time varies depending on amount of sausage).
  • once done, cut into roll length pieces.
  • ***OPTIONAL-at this point I have thrown on a hot grill to put grill marks and sear skins.
  • put on nice hoagie rolls, cover with peppers and onions
  • (optional)add provolone or mozzerella cheese get a good napkin and enjoy!
  • NOTES- easily reduces.
  • sausage freezes and reheats well.
  • onions and peppers are done fresh.

One of my favorite fair foods that I always looked forward to, until I learned how to make them myself. Serve on Italian hoagie rolls.

5 pounds Italian sausage links
2 (28 ounce) cans whole peeled tomatoes
1 (28 ounce) can crushed tomatoes
1 (29 ounce) can tomato sauce
ΒΌ cup grated Parmesan cheese
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon white sugar
1 tablespoon onion powder
4 large green bell peppers, thickly sliced
3 large onions, thickly sliced
25 (6 inch) Italian-style hoagie buns

Steps:

  • Cut the sausages apart into individual links if necessary, place the sausage links into a large skillet over medium heat, and brown them on all sides. Set the sausages aside, reserving the pan drippings.
  • Pour the whole tomatoes, crushed tomatoes, and tomato sauce into a large saucepan with a lid; stir in the grated Parmesan cheese, garlic powder, Italian seasoning, sugar, and onion powder. Bring the mixture to a boil; add the cooked sausages, pan drippings, green peppers, and onions. Reduce heat to low, cover, and simmer until the vegetables are very tender and the sauce has thickened, about 6 hours. Serve on Italian hoagie buns.
