- Preheat oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain excess grease. - Place pie shell in oven during the pre-heating time for about 5- 10 minutes in order to firm the bottom some.
- Don't overcook!
- Remove casing from the sausage and crumble.
- Sauté sausage and onions; drain well and spoon into prepared pie shell.

- In a large skillet, cook Italian sausage, onion, and garlic until sausage is browned and vegetables are tender; drain.
- Separate one egg and set aside yolk.

- Preheat oven to 425 degrees.
- Heat oil in a large saute pan or skillet over medium-high heat. Saute onions for a few minutes or until translucent, then throw in the peppers, garlic, salt, italian seasoning and optional cayenne. Saute for 6-7 minutes or until the peppers are soft. Remove veggies from the pan with a slotted spoon, leaving behind as much oil as possible.
- Remove the sausage from it's casings and pull apart with your fingers. Throw into the pan and brown, breaking apart with a wooden spoon. When browned, drain the grease from the pan and add the veggies back in, along with the tomato paste. Stir to combine. Add half of the mozarella and stir again.
- Pour the mixture into a large oven-proof skillet or pie pan. Top with the remaining mozarella.
- Unroll the crescent dough and separate into triangles. Arrange in a spiral with the points of the dough towards the center, overlapping slightly to cover the sausage mixture completely. Press the dough to the edges of the pie pan to seal.
- Bake for 12 minutes, or until the crust is golden brown.

ITALIAN SAUSAGE POT PIE WITH POLENTA CRUST

- Heat oven to 375°F. Spray 2 1/2-quart casserole with cooking spray.
- In 12-inch nonstick skillet, cook sausage over medium heat about 8 minutes, stirring occasionally, until browned; drain. Add zucchini, beans, tomatoes, basil, rosemary and 3/4 cup of the cheese; stir gently. Spoon into casserole.
- In medium bowl, beat eggs slightly with fork. Crumble polenta into eggs; mix well. Spoon polenta mixture evenly over sausage mixture; spread evenly.
- Bake uncovered about 25 minutes or until sausage mixture begins to bubble around edges and polenta is firm to the touch.

This was an orphaned recipe. It sounded so good I had to try it and I found it was very good.

- 1. Preheat oven to 350 degrees. In a heavy skillet saute sausages and minced garlic until brown; drain well and transfer to a bowl. Stir spicy tomato sauce into the sausages and reserve. Mix ricotta, parmesan, 1/2 cup of parsley, 2 tablespoons of oregano, 1 egg, and freshly ground black pepper to taste.
- 2. In a rectangular ovenproof dish, about 9 by 13 inches, spread half of the sausage mixture; dot this with half of the ricotta mixture and sprinkle 2 cups of the mozzarella evenly over the entire surface. Add olives if using. Sprinkle with 1/2 of the remaining parsley and half of the remaining oregano; repeat.
- 3. Roll out three-quarters of the dough to a thickness of about 1/3 inch, being certain the dough is about 1 inch larger than the pan all the way around; transfer dough to top of pizza and tuck in excess all around. Cut slits or designs in dough to allow steam to escape. Beat remaining egg with 1 tablespoon water and brush some of it on top of crust. Bake for 35 to 45 minutes, or until the top is golden brown and the edges are bubbling. Let pizza stand for 30 minutes before cutting.
- 4. Roll out remaining dough and use it to form bread sticks if you like. Brush with butter and sprinkle with garlic salt. Bake for 12-15 minutes dring last part of pizza baking time. Baking time will depend on how thick you make the bread sticks so check as they bake.

EGGPLANT PIE WITH ITALIAN SAUSAGE & BECHAMEL SAUCE
This is a really flavorful dish... both with the sausage and without!

- 1. Turn on oven broiler. Place eggplant on broiler pan and brush with oil. Broil on both sides untill golden brown. While the eggplant is broiling (watch carefully), fry down the bulk Italian sausage (optional) and drain all grease.
- 2. Once eggplant is out of the oven, turn oven on 350 degrees. In an 8x8 or 7x11 inch oven-proof casserole, layer half the eggplant slices then half the sauce. Top with half the sausage and then half the mozzarella cheese. Repeat the layers.
- 3. Cover with foil and bake for 45 minutes.
- 4. While casserole is baking, make the white sauce by melting the butter in a heavy saucepan. Whisk in flour and continue to whisk over medium heat until mixture is a light tan. Slowly add the milk; whisking constantly. Cook and stir over low heat untill the sauce is smooth and thick. Season lightly with salt and pepper, then remove from heat, stir and cover untill ready to spread over casserole.
- 5. After 45 minutes of baking, remove the aluminum foil from casserole dish and spoon white sauce over the top of the casserole. Sprinkle the remaining mozzarella cheese over the top. Turn oven to BROIL and heat heat casserole until top is lightly browned and bubbly. I serve with crisp green salad and garlic bread.
CHEESY ITALIAN SAUSAGE MARINARA POT PIE
This is like a lasagna in a bowl without the noodles. So cheesy. Looks cute when make in the ramekins.

- Add oil to large skillet. Saute shallots and garlic 2 minutes. Add wine and cook until almost all evaporated. Add sausage and break up into small pieces. A potato masher works good. Add the tomato paste, crushed tomatoes, Italian seasoning and salt. Simmer about 15 minutes.
- Stir together the ricotta cheese, parm cheese, and mozzarella cheese. Stir in the fresh basil and parsley set aside.
- Spray 8 small ramekins. Fill each ramekin half way up with cheese mixture. Top with sausage marinara mixture.
- Roll out the puff pastry sheets using a ramekin cut out a round piece of dough about an inch larger than the diameter of the ramekin. Place the dough over the top of the ramekin pressing carefully down the sides.
- brush with egg and water wash. Bake at 400 degree for about 30 minutes until dough is browned and no longer doughy.
