My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

4 Italian frying peppers (Cubanelle) cut into 2-inch pieces
1 large fennel bulb, bulb quartered, then cut into 2-inch-wide pieces and 1/4 cup fronds coarsely chopped (discard stalks)
1 large onion, quartered and cut into 2-inch pieces
1 1/2 pound hot or sweet Italian sausage links, halved crosswise
1/4 cup olive oil

Steps:

  • Preheat broiler.
  • Toss together all ingredients except fennel fronds with 1/2 teaspoon salt in a large shallow baking pan. Broil 4 inches from heat until sausage is browned and vegetables begin to soften, about 10 minutes. 5 lbs Italian sausage, ropes (skin on)
8 green peppers, sliced into strips
4 vidalia onions, quartered
1 cup water
provolone cheese (optional) or mozzarella cheese (optional)

Steps:

  • put italian sausage ropes in roasting pan large enough to fit amount you are making.
  • quarter onions and put on top.
  • cut green peppers into strips and throw on top.
  • add water.
  • cover pan with heavy duty foil and bake for 2 hours at 300 degrees (time varies depending on amount of sausage).
  • once done, cut into roll length pieces.
  • ***OPTIONAL-at this point I have thrown on a hot grill to put grill marks and sear skins.
  • put on nice hoagie rolls, cover with peppers and onions

4 organic Italian sausage links, cut in half
¼ cup extra-virgin olive oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 sweet onion, thinly sliced
1 tablespoon chopped fresh oregano
Course sea salt and freshly ground black pepper, to season
For polenta:
3 cups water
1 quart chicken broth (or water if you prefer)
2 teaspoons salt
2 tablespoons extra-virgin olive oil
1 1/2 cups instant polenta
4 tablespoons unsalted butter
½ cup grated Parmesan
Grated Parmesan, for sprinkling

Steps:

  • In a large skillet, warm 2 tablespoons olive oil over medium-high heat. Add the sausages and brown well. Remove and set aside. Reduce heat to medium and stir in the peppers and onions. Sauté, stirring often, until very tender and lightly browned, about 8 minutes. Return the sausage to the pan and stir in the remaining olive oil and the oregano. Reduce heat to very low, cover and set aside while you make the polenta. To make the polenta, bring water to a boil in a teakettle. Turn off heat. Bring broth to boil in a large, heavy saucepan. Reduce heat to low. Stir in the salt and olive oil. Add the polenta very, very gradually, stirring constantly with a wooden spoon. Take your time. Once all the polenta is added let it cook over very low heat for about 5 minutes, stirring constantly. If the polenta becomes to thick to stir, pour in some hot water and blend it in. The polenta is done when it is smooth, shiny and tender. Turn off the heat and stir in the butter and Parmesan. Divide polenta among 4 bowls. Spoon sausage, peppers and onions over the polenta and serve. Pass extra Parmesan for sprinkling.

12 links of your favorite italian sausage
8-10 large potatoes, peeled and chunked
4 large onions, chunked
3 medium bell peppers, seeded and sliced
1 tsp garlic powder with parsley
kosher salt and freshly ground black pepper to taste
1 1/2 c hot water
1/4 c olive oil, extra virgin or more to your taste

Steps:

  • 1. Prepare vegetables. Arrange sausage links in a large shallow casserole dish. Arrange vegetables around sausage.
  • 2. Sprinkle with salt, pepper and garlic. Drizzle with oil. Add water to casserole dish.
  • 3. Seal with tin foil and bake for 1 hour at 350-degrees. Remove foil and bake an addtional 20 or so until sausage and potatoes are browned.
  • 4. Serve with a good Italian or French bread to sop up the juices. Or if you prefer, serve sausage on a hoagie bun that has been dipped in the juices and then top sausage with peppers and onions and serve potatoes on the side.

6 italian sausage links
6 medium potatoes, peeled and sliced thin
1 large onion, sliced
1 red pepper, sliced
1 green pepper, sliced
1 cup 2% cheddar cheese, shredded
salt and pepper (optional)

Steps:

  • Preheat oven to 350.
  • Heat a large pot of water to boiling, add sausage, (poke a few holes in them to let the fat out) cover and turn the heat off. Let poach for 20 minutes; drain and refrigerate untill cool. (I usually do this while making dinner the night before). Slice the sausages into 1/4 to 1/2 inch coins.
  • In a large casserole dish, layer half the potatoes, half the onion, half the peppers and half the sausage. Salt and pepper if desired.
  • Repeat layers.
  • Sprinkle cheese on top, cover with foil and bake at 350 for 1 1/2 hours or untill potatoes are cooked through. Remove foil for last 15 minutes of cooking.

1 (6 ounce) can tomato paste

Steps:

  • Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside.
  • Pour in 1 can of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover and simmer until onions and peppers are tender.

1/4 cup olive oil
1 onion, chopping
2 garlic cloves, minced

1 lb rigatoni pasta (gluten-free)
1 tablespoon balsamic vinegar

Steps:

  • Wash, core and deseed peppers. Cut into 1-inch squares.
  • Put olive oil, onion, and garlic in large pan. Saute over medium-high heat until soft, stirring often.
  • Cut the sausage into 1/2 inch pieces and add it with the oregano to the saute pan. Cook until sausage browns a bit, stirring often, about 5 minutes.
  • Add peppers and cook about 8 minutes, stirring gently once in a while.
  • Put water on to boil for pasta.
  • Add salt and pepper and tomatoes to sauce. Turn heat to medium and cook at a simmer.

2 - 3 lb hot italian or sweet italian sausage links ( about 15)
1 - 2 sweet onions, cut into slivers
1 each, red bell pepper, green bell pepper, cut into thin slices
2 - 3 jalapeño peppers, sliced ( optional) i use if making the hot sausage
2 jar(s) spaghetti sauce., i use 2 quart sized jars of my homemade..you just want to make sure sausages are covered well
1/2 c shredded parmesan cheese
1/2 tsp each - salt, pepper, italian seasoning, garlic powder
2 - 3 clove whole garlic
oil for browning

  • 1. Gather ingredients. These can be done in the oven. I use the crock pot for convenience. They will be fall apart tender. Spray crock pot with vegetable spray.
  • 2. In a large skillet; brown your sausages in olive or vegetable oil. Remove and drain on paper towels.You can cut these into smaller chunks at this point. Especially if serving over pasta. Remove from skillet, add about 2 or more tablespoons of oil. Saute the onions and peppers, just till becoming tender. They will finish cooking in the sauce.

2 tablespoon(s) olive oil
2 medium yellow onions, peeled and sliced into rings

  • Get all ingredients together.
  • Cut the links in half and remove skin.
  • Place olive oil in an electric skillet. Place links in skillet and turn skillet to 375 degrees.

  • Cook sausage on one side until brown. Turn sausage over.
  • After turning sausage over, place onions on top of sausage. cook for about 2 minutes.
  • Place bell peppers, mushrooms and pasta sauce on top of onions. Pour 1 cup of water on top. Turn electric skillet down to 225 degrees.Simmer for about 5 hours. Covered.
  • Stir about once an hour, by taking a spatula and go underneath the sausage allowing the sauce and onions, peppers and mushrooms to flow underneath sausage.
  • After about 5 hours, take hamburger bun and place sausage with a fork on bottom bun, then place sauce and peppers, onions and mushroom on top of sausage. Take and cover with top of bun. ENJOY!!!
