Italian Sausage Grinders image

Think of these delightfully drippy sandwiches like Sloppy Joes with an Italian twist!

1 pound bulk hot or sweet Italian sausage
1 14.5 ounce can fire-roasted diced tomatoes
1 14.5 ounce can crushed tomatoes
2 cloves garlic, minced
1 teaspoon balsamic vinegar
1 teaspoon dried basil, crushed
0.5 teaspoon dried oregano, crushed
0.25 teaspoon salt
0.25 teaspoon crushed red pepper
1 small yellow onion, sliced
1 small green sweet pepper, seeded and cut into strips
2 tablespoon olive oil
4 French-style rolls or hoagie buns, split
4 slices provolone cheese

Steps:

  • In a large saucepan cook the sausage over medium heat until no longer pink; drain off fat. Stir in undrained diced tomatoes, undrained crushed tomatoes, the garlic, vinegar, basil, oregano, salt, and crushed red pepper. Bring to boiling; reduce heat. Simmer, uncovered, for 30 minutes or until thickened.
  • Meanwhile, in a large skillet cook onion and sweet pepper in the hot oil over medium heat until tender. Set aside and keep warm.
  • Preheat broiler. Place split rolls on a baking sheet. If desired, toast rolls. Spoon the meat mixture evenly on the bottom halves of rolls. Top with onion mixture. Top with cheese slices. Broil 4 to 5 inches from the heat for 2 to 3 minutes or until the cheese melts and bubbles. Add tops of rolls.

12 Italian sausage links (4 ounces each)
3 tablespoons olive oil
1-1/2 cups water
2 cans (6 ounces each) tomato paste
1 can (8 ounces) tomato sauce
3 garlic cloves, minced
1 teaspoon sugar
1 teaspoon each dried basil, oregano and parsley flakes
12 brat buns, split and toasted
1/4 cup shredded Parmesan cheese

Steps:

  • In a large skillet, brown sausages in oil; drain. Stir in the water, tomato paste, tomato sauce, garlic, sugar and seasonings; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until meat is no longer pink., Serve sausages on buns with sauce; sprinkle with cheese.

1 large sweet yellow onion
2 red bell peppers
2 green bell peppers
¼ cup olive oil
salt and freshly ground pepper to taste
8 links of Italian Sausage, sweet, hot, or a combination of the two
4 club, hero or wedge rolls, split

Steps:

  • Peel the onions, cut them in half and slice, thinly, cross-wise.
  • Cut the peppers in half, remove the stems and seeds, and slice into thin strips.
  • In a large skillet, preferable cast iron, heat the olive oil over medium-high heat. Add the peppers and onions and season with salt and pepper.
  • Lower the heat to medium-low, and cook stirring frequently until onions are translucent and peppers are soft, 15-20 minutes.
  • Meanwhile, if using a gas grill turn the burners on one side to high. If using a charcoal grill, pile the coals on one side if the grill and light them.
  • Place the sausage directly over the fire and cook, turning until browned on all sides. Then move to the side of the grill with no fire, cover the grill and cook, turning once until sausage is done, 8-10 minutes.
  • Slice the club rolls open and place two links of sausage in each roll and cover with a heaping portion of the peppers and onions. Serve with a cold beer to wash it down!

My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.
