I wanted to get more fish in our diet, so I experimented with different flavorings for salmon steaks. This combination seemed to always be especially delicious with a risotto and vegetable side.

2 salmon steaks
1 tablespoon dried Italian seasoning
1 teaspoon crumbled dried thyme
1 teaspoon crushed dried rosemary
salt and pepper to taste
1 tablespoon fresh lime juice

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • Season one side of each steak with the Italian seasoning, thyme, rosemary, salt, and pepper.
  • Lay the steaks with the seasoned-side down on the prepared grill. Cook on grill until the flesh flakes, turning once, 7 to 8 minutes. Sprinkle each steak with lime juice to serve.

Italian broccoli & salmon bake image

Take a fresh look at broccoli with this creamy pasta bake

250g penne
300g broccoli, cut into large florets
25g butter
25g plain flour
600ml milk
100g mascarpone
8 sundried tomatoes (preserved in olive oil), drained and thickly sliced
2 tbsp small capers (optional) rinsed to remove excess salt or vinegar
8 anchovy fillets, halved (optional)
10 large fresh basil leaves, roughly torn
4 fresh skinless salmon fillets
50g mature cheddar, finely grated

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C and get out an ovenproof dish (measuring 20 by 30cm, and about 5cm deep). Meanwhile, put a large pan of water on to boil for the pasta. When it is boiling rapidly, tip in the pasta with a generous sprinkling of salt. Give it a stir, return to the boil and cook for 6 minutes. Add the broccoli, then return the water to the boil and cook for 4 minutes more, until the broccoli is on the firm side of just tender. Drain well.
  • While the pasta is cooking, put the butter, flour and milk in a large pan and heat, whisking or stirring continuously, until it thickens to make a smooth sauce. Remove from the heat and stir in the mascarpone, sun-dried tomatoes, capers (if using), anchovies (if using) and basil, then add the pasta and broccoli and season well.
  • Halve the salmon fillets widthways (you will see that there is an obvious divide on each fillet) then place the pieces in a single layer on the base of the ovenproof dish. Spoon the broccoli mixture on top, then scatter with the grated cheddar. (You can chill this for up to 4 hours if you want to get ahead.)
  • Bake for 30 minutes until the mixture is just starting to bubble round the edges and the mixture is pale golden - don't let it go too dark or the fish will overcook.

1 tablespoon smoked paprika
1 teaspoon grated orange zest
2 teaspoons dried oregano
1 teaspoon ground cinnamon

1 head lettuce, chopped, or as needed
2 tablespoons apple cider vinegar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking pan with aluminum foil.
  • Mix coconut sugar, paprika, orange zest, oregano, cinnamon, and sea salt together in a small bowl. Add 1 tablespoon olive oil and mix well. Rub salmon evenly with the mixture; place fish on the prepared baking pan.

1 small lemon, juiced

This is a very simple recipe and is delicious. My boyfriend and I love salmon and this is a keeper for us. I hope you enjoy as well. I serve with mixed greens and crusty bread. This recipe can easily be cut in half, doubled or tripled :-)

4 tablespoons olive oil
2 minced garlic cloves
1/2 cup white wine
4 tablespoons lemon juice
1 1/2 cups fresh basil
1/2 cup grated parmesan cheese
1 teaspoon Dijon mustard
1 dash cayenne pepper
4 salmon steaks

Steps:

  • Put all ingredients except salmon in food processor.
  • Blend ingredients together until well combined and basil is fine.
  • Put some of the sauce in bottom of baking dish that has been lightly sprayed with Pam Cooking Spray.
  • Place salmon in dish and mound rest of sauce over salmon.
  • Bake in a 400 degree oven for 20 minutes or until done to your preference. I cook mine for the 20 minutes and then take out of oven and cover loosely with foil for another 3-5 minutes.

2 cloves garlic, minced
pepper
2 very ripe roma plum tomatoes, thinly sliced

  • Directions For marinade, combine Wish-Bone® Italian Dressing, soy sauce and ginger. Add salmon and 2/3 cup marinade to large, shallow nonaluminum baking dish or plastic bag; turn to coat. Steps:

  • heat the oil in a large saute pan over medium heat, until almost smoking.
  • Add the salmon fillets and sear to brown, about 3 minutes a side.
  • Add the onion , plum tomatoes, chives, asparagus tips and continue to cook for 2 minutes.
  • Add vodka, tipping the pan toward the flame to ignite. Continue cooking until the flame goes out and the alcohol is burned off.
  • Stir in the crushed tomatoes, grated cheese and enough heavy cream to create a pink sauce.
  • Cook an additional 1-2 minutes, or until fish is cooked through.
  • Season with salt and pepper.
  • Remove the fish to serving plates and continue cooking and stirring the sauce to thicken if desired.
  • Pour sauce over the fish and garnish with fresh parsley.

Good variation on the standard Salmon Patty. I like to top it with a mixture low fat mayonnaise, mustard, and lemon juice.

14 3/4 ounces canned salmon
1 whole egg
2 egg whites
1 tablespoon lemon juice
1 garlic clove, minced
3/4 cup plain breadcrumbs
1 teaspoon italian seasoning
salt and black pepper

Steps:

  • Drain and flake the salmon. Be careful to get out as many of the little bones as possible.
  • In a bowl, add all ingredients together, except for the oil. Mix up until you are able to form patties out of the mixture.
  • Make 6 equal-size patties of the mixture and set aside.
  • Heat a non-stick skillet sprayed with vegetable spray (Pam, etc.) and cook salmon patties in the skillet for four minutes each side until browned.

Fist steaks (4-6) (Salmon, tuna or other solid fish steaks)
1 bottle of Italian dressing
2 cloves of garlic
2 tbls of red pepper flakes (more or less according to taste)
2 tsp of black pepper coarse ground

Steps:

  • place fish steaks in reclosable plastic bag (gallon size) Mix together remaining ingredients and pour over steaks. Close the bag, and lay flat in the refridgerator for a minimum of 4 hours to over night. Prepare/preheat grill. Place steaks on the grill, cooking 3-4 minutes on each side, turning only once. Use marinade remaining in bag to brush on the steaks during the cooking process.
