ROASTED ITALIAN SAUSAGE AND POTATOES WITH MUSHROOMS AND PEPPERS
This is loosely adapted from Judith M. Fertig's recipe in Prairie Home Cooking. The original did not have any cheese or herbs. Either sweet or hot sausages will do; I've also made it with bratwurst. This is a very easy dinner, very nice for cold weather.

Steps:
- Preheat oven to 400°F.
- Combine herbs, olive oil, salt,pepper and potatoes and toss to mix.
- Place sausages and potatoes in large baking or roasting pan.
- Roast at 400° for 30 minutes, or until just beginning to brown, turning several times.
- Add a little more oil if the potatoes appear to be drying out.
- Add remaining vegetables and roast 45 minutes more, turning occasionally, until potatoes are brown on the outside and tender on the inside.
- Sprinkle with mozzarella and return to oven just until cheese is melted.

Steps:
- 1. Heat the oven to 400 degrees. (this can be done on a grill as well, med-high grill). Place the sausages and the potatoes in a large pan or roaster, and transfer to the oven or grill. (put cover over if grilling) (I add the sausages whole, but can cut in half or in chunks) I add a little oil in the pot for the oven baked. You don't need but a couple tablespoons. Use large roasting pan. Larger than a 9x13. I buy those foil throw away pans.
- 2. Roast or grill them , turning the food several times for 30 minutes or until they have begun to brown.
- 3. Add the peppers, onions, mushrooms and herbs to the pan. Add a little more vegetable oil, a couple of Tablespoons. Roast or grill 45 to 60 minutes more. Check and turn occasionally until potatoes are brown and tender. Check that the potatoes are done. Ovens vary so it can take longer for some. I put a Tablespoon of mustard on my plate to dip the sausage in. I salt and pepper it also. Enjoy with your favorite condiment. Enjoy! Great company dish :)

- Preheat oven to 400 degrees F (200 degrees C).
- Brush 1 teaspoon (5 mL) of the oil in the bottom of a 13 x 9-inch (33 x 23 cm) pan. Place sweet potatoes, peppers, onion and olives in pan.
- Slice each of the sausages into 5 or 6 pieces; place in pan.
- In a small bowl, mix together remaining oil, rosemary, garlic and seasoning salt. Brush over vegetables. Cover with foil.

PENNE WITH ITALIAN SAUSAGE AND ROASTED RED PEPPERS

- Slice Italian sausage into bite size pieces and set aside. Heat olive oil in a large frying pan over medium heat. Saute sausage until almost fully cooked. They should be nice and browned. While sausage is cooking coursely chop tomatoes. When sausage is browned (about 10 mins) add garlic and stir for about 1 minute. Add tomatoes and salt, turn heat to med-low. Simmer for 10 minutes. Add peppers and cook for an additional 5 minutes. In a large bowl combine hot pasta and contents of frying pan. Sprinkle with cheese. Pass additional cheese at the table.
ROASTED RED PEPPER CREAM SAUCE WITH MUSHROOMS, SWEET YELLOW PEPPERS, AND ITALIAN SAUSAGE
Steps:
- peppers: preheat oven to 400. remove stems and seeds from bells peppers. quarter. brush quarters inside and out with 2 tbsp olive oil. place peppers in an oven safe dish and cook 30 minutes flipping over halfway (or until each side is slightly browned and peppers are soft but not mushy). allow peppers to cool so that they can be handled. sauce: put olive oil, crumbled italian sausage, sliced mushrooms, garlic, nutmeg, and red pepper flakes into a deep heavy skillet and saute on medium high until meat is well done and mushrooms are tender. remove from heat. pour in white wine white pan is still hot. scraping the pan to pick up any browned bits. let sit on the stove while you prepare the rest of the sauce. place 1 cup of heavy cream in a blender with all of the red pepper and one quarter of the yellow pepper. puree for roughly 30 seconds until slightly thickened and the red pepper is totally pureed. chop remained 3/4 of the yellow bell pepper into one inch strips. mix the bell pepper cream mixture into the sausage and mushroom mixture, stirring thoroughly. add remaining 1/4 cup of cream, white pepper, paprika, and cayenne pepper. stir thoroughly and place on medium heat. continue stirring for roughly five minutes scraping sides and bottom while stirring. allow sauce to bubble for 10-15 minutes until liquid is reduced by 1/3. spoon sauce over pasta of your choice.

- Place the chicken in the crock pot and cover in Italian seasoning packet.
- Pour drained artichokes, roasted red peppers and garlic over the chicken.
- Pour wine over top of the layers.
- Cook on low for 6-8 hours.
- Remove from crock pot and sprinkle capers over top of the cooked chicken and vegetables.
- Serve over pasta.
ITALIAN ROASTED RED PEPPERS

- Roast peppers by your preferred method, grill, broil or over stove flame until charred, place in bowl and cover with plastic wrap to steam
- Once peppers are cool enough to handle, remove skins, stems and seeds
- Slice peppers into strips and place into large bowl
- Add remaining ingredients and stir to mix, taste and adjust salt and pepper
- Place peppers in container with tight fitting lid (I use a large glass jar) make sure peppers are completely covered with Olive Oil
- Refrigerate over night. Will keep 1 week if kept covered with olive oil
- Serve with toasted Italian bread rubbed with garlic and goat cheese

I can eat this for breakfast, lunch, dinner. South Philly style roasted peppers taught by an Italian to me. Serve with loaf of bread and put the peppers on and dip in oil. can serve with bruchette and cheese.

- 1. roast peppers on the grill, broiler, till charred or dark brown so it will be easy to remove the skin from the meaty part of pepper. turning over for all sides to be done
- 2. set aside and let cool a little but peel when just warm. Remove the skin and seeds but don't rinse in water at all, takes away the flavor.
- 3. rip in slices and put in plastic container and add oil, basil, whole garlic, salt and mix and thats it.
