BAKED BREADED YUMMY CATFISH

I don't know how original this is, but my husband loves it. It is full of flavor. We serve it with a baked sweet potatoe and sauteed spinach and garlic.

2 catfish fillets
1 cup Italian salad dressing
1 egg
3/4 cup breadcrumbs
3/4 parmesan cheese
1 teaspoon garlic powder
1 teaspoon pepper
cooking spray

Steps:

  • Line baking dish with foil and spray with cooking spray.
  • Combine egg and Italian dressing in shallow dish.
  • Combine breadcrumbs, cheese, pepper, and garlic powder in second shallow dish.
  • Dip fish in egg mixture, followed by bread crumb mixture.
  • Drizzle remaining egg mixture over fish.
  • Add remaining breadcrumbs to fish.
  • Coat lightly with cooking spray.
  • Bake at 350 degrees for forty-five minutes.

I found this recipe on the internet - have made several changes, added a couple of things etc. We enjoyed it so I thought that I would post the recipe. You may use any white fish for this recipe - Tilapia would be nice. Cooking time depends on the thickness of your filets

14 ounces basa fillets
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon fresh coarse ground black pepper
1 jalapeno pepper, chopped fine
2 roma tomatoes, chopped

Steps:

  • If using frozen fish nake sure it is fully thawed and patted dry of any moisture.
  • Drizzle half the lemon juice on one side of the filet, sprinkle on the pepper & oregano,then pat them on the fish.
  • Turn the filet over and repeat with the lemon & spices.
  • Turn you heat to medium, heat a large skillet & lightly spray with oil or Pam.
  • Add the fish, tomatoes & Jalapeno, cover.
  • Cook for 3 minutes, flip the fish and stir the tomatoe, cover.
  • Finish cooking apprx 3 more minutes.
  • Simple & easy serve with rice or noodles.

3/4 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon each pepper, dried oregano and basil
6 fresh or frozen catfish fillets (3 to 5 ounces each)
1/2 cup butter, melted
Optional: Tartar sauce and lemon wedges

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley and seasonings. Dip catfish in butter, then in crumb mixture. Arrange in a greased 13x9-in. baking dish. , Bake, uncovered, at 375° until fish just begins to flake easily with a fork, 20-25 minutes. If desired, serve with tartar sauce and lemon wedges.

4 (4 ounce) fillets catfish
1 tablespoon lemon juice
½ teaspoon salt
¼ teaspoon black pepper
¼ cup freshly grated Parmesan cheese
2 tablespoons butter, softened
1 ½ tablespoons mayonnaise
4 roma tomatoes or sun-dried tomatoes, sliced thin

Steps:

  • Preheat broiler to 500 degrees. Coat a broiling pan with nonstick cooking spray. Brush both sides of fillets with lemon juice, and then sprinkle with salt and pepper. Place fillets flat side up on prepared pan.
  • In a small bowl, mix Parmesan cheese, butter, and mayonnaise.
  • Broil fish about 4 inches from heat for 6 minutes. Remove pan from oven, and turn fillets over. Spread the cheese mixture evenly over each fillet. Top with tomato slices. Broil an additional 4 to 6 minutes, or until fish flakes easily with a fork.
