I don't know how original this is, but my husband loves it. It is full of flavor. We serve it with a baked sweet potatoe and sauteed spinach and garlic.

2 catfish fillets
1 cup Italian salad dressing
1 egg
3/4 cup breadcrumbs
3/4 parmesan cheese
1 teaspoon garlic powder
1 teaspoon pepper
cooking spray

Steps:

  • Line baking dish with foil and spray with cooking spray.
  • Combine egg and Italian dressing in shallow dish.
  • Combine breadcrumbs, cheese, pepper, and garlic powder in second shallow dish.
  • Dip fish in egg mixture, followed by bread crumb mixture.
  • Drizzle remaining egg mixture over fish.
  • Add remaining breadcrumbs to fish.
  • Coat lightly with cooking spray.
  • Bake at 350 degrees for forty-five minutes.

3/4 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon each pepper, dried oregano and basil
6 fresh or frozen catfish fillets (3 to 5 ounces each)
1/2 cup butter, melted
Optional: Tartar sauce and lemon wedges

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley and seasonings. Dip catfish in butter, then in crumb mixture. Arrange in a greased 13x9-in. baking dish. , Bake, uncovered, at 375° until fish just begins to flake easily with a fork, 20-25 minutes. If desired, serve with tartar sauce and lemon wedges.

These are sooo yummy! They taste almost like fried catfish because of the cornmeal, and come out nice and crispy on the outside and soft on the inside. The ranch dressing adds a real zing, too!

4 catfish fillets
2 tablespoons light ranch salad dressing
1 eggs or 2 egg whites
6 tablespoons yellow cornmeal
4 tablespoons parmesan cheese, grated
2 tablespoons flour
1/4 teaspoon red pepper seasoning
1/8 teaspoon salt
1 teaspoon basil
1 teaspoon parsley

Steps:

  • Preheat oven to 425 degrees.
  • Whisk wet ingredients together in a bowl and combine dry ingredients on a piece of wax paper.
  • Spray a glass baking dish with Pam or olive oil.
  • Rinse catfish in cool water and DRY THOROUGHLY with paper towels.
  • Dip each catfish fillet in wet ingredients and dredge in breading to coat. Just a nice, light covering is enough. Don't try to completely cover in breading.
  • Place catfish fillets in glass baking dish & refrigerate for 10 minutes. This step, plus making sure the fillets are very dry before dipping in the egg will help the breading stick to the fish and NOT the pan!
  • Bake at 425 for 10 to 12 minutes per side.
  • Serve with lemon wedges for garnish.
